VANILLA ALMOND MUG CAKE

 

I follow some really great chicks on instagram that keep me inspired to make super protein packed goodies like this one. I am always looking for something that will satisfy that urge to splurge, if you know what I mean…I realize that most of you aren’t used to these types of ingredients for baking and am sure that sometimes you look at my recipes, like WTF is that?? But I’m telling you now, the transition is really easy, and there is nothing to be intimidated by. A lot of these ingredients, I tend to buy in bulk. I find it makes life easier, especially if you cant find them at every local market.(check out NOTE below)

With that being said..This is an amazing dessert that tastes just like cake and ice cream! enjoy!

INGREDIENTS:

 

1.5 tbsp coconut flour

1 tbsp vanilla whey

1 tbsp almond flour

1/2 tsp baking powder

1/4 tsp cinnamon

1 egg white

1 tbsp 0% greek yogurt

1/4 tsp vanilla extract

5 drops of stevia

2.5 tbsp of water or unsweetened almond milk

DIRECTIONS:

In a bowl mix all wet ingredients, in a separate bowl, mix dry. (making sure to remove all clumps)

combine together and mix thoroughly. Grease a mug or ramekin and cook in microwave for 1 min 30 seconds. watch it rise!;)

The blueberry topping is :

frozen blueberries, 0% greek yogurt and 5 drops stevia thrown in the blender or vitamix and poured on top, sprinkled with almonds

 

NOTE:

Most of these ingredients can be found at your local supermarket. Almond flour can be bought at Trader Joe’s, Whole Foods, etc..or bought online. The more you accustom yourself to low carb baking, the more you will want to have these products around all the time. Same thing with coconut flour and whey protein.
