I don’t know what the hell has come over me. I have had a serious case of writers block or, frankly…laziness the pastcouple weeks. womp wompppppp. I mean, I’ve been working out and cooking, but have been totally neglecting you all.

Ugh, my lack of blogging has become out right embarrassing. lol.

Anyway, today, Thursday morning at 6:00 A.M. I have finally busted out my old ass Macbook Pro and sat at my desk to bring you a very much awaited post. I’ve been dying to post this YUMMMMYYY ass recipe Of….wait for it…..

MANGO COCONUT CHIA SEED PUDDING

 I was stoked to receive a great package from Mamma Chia to try out and to share my opinion. I am NOOOOOO stranger to the wonderful benefits of chia seeds. Let me tell you. I’ve always LOVED a great chia pudding! In one tablespoon of chia you will consume 2,430 mg Omega-3s, 4 grams fiber, 3 grams complete protein, and ONLY 60 calories!!!

In wanting to try a new recipe, I started researching some of the blogs I follow for inspiration.

I found the perfect recipe to share! This recipe is by my homegirl over at Skinnytaste.com, and she killed it with this recipe for:

MANGO COCONUT CHIA SEED PUDDING

I followed it pretty much to how she made it, and the results were incredible!!!! Just a few key ingredients, and you’ve got yourself a bowl of SUPERFOOD heaven!

The recipe is listed above, but again:

**Ingredients**

  • 1/2 cup lite coconut milk
  • 1/2 cup unsweetened vanilla almond milk
  • 3/4 cup fresh ripe mango, diced
  • 2 tbsp chia seeds
  • 1 tbsp unsweetened reduced fat shredded coconut
  • 4-6 drops liquid stevia(or agave/honey to taste)

**Directions**

  1. In a bowl, add 2 tbsp CHIA seeds & Unsweetened Reduced Fat Shredded COCONUT
  2. Add your Light Coconut Milk (I used this one), and your Unsweetened Vanilla Almond Milk. ( I use this one) & your sweetener of choice. I used my fave sugar free honey by Natures Hollow.
  3. Mix and beat with a fork and you will begin to notice the chia seeds and mix become gelatinous. THIS IS GOOD!
  4. Now, fold in your very ripe chunks of mango. 
  5. Place in fridge for and hr or two. WOWOWOWOWOWO!!!!

Servings: 2 • Size: 1 cup Calories: 159.1 • Fat: 9.6 g • Protein: 3.6 g • Carb: 17.9 g • Fiber: 6.5 g • Sugar: 9.2 g Sodium: 52.2 mg  20140428-161805.jpg  Before I get into this fabulous MAMMA CHIA giveaway, I wanted to share with you (if you already don’t know) The AMAZING benefits of CHIA seeds. Chia seeds are super rich in Omega-3s, antioxidants, protein, and fiber.It contains calcium, manganese, and phosphorus, and is a great source of healthy omega-3 fats. As an added benefit, chia seeds can be eaten whole or milled, while flax seeds have to be ground before consumption in order to access their health benefits for example. Combat Diabetes Chia is being studied as a potential natural treatment for type-2 diabetes because of its ability to slow down digestion. The gelatinous coating chia seeds develops when exposed to liquids-can also prevent blood sugar spikes.

Get More Fibre  Just a 28-gram or one-ounce serving of chia has 11 grams of dietary fibre — about a third of the recommended daily intake for adults. Adding some chia to your diet is an easy way to make sure you’re getting a good amount of fibre, which is important for digestive health.

Stock Up On Omega-3 Chia seeds are packed with omega-3 fatty acids, with nearly five grams in a one-ounce serving. These fats are important for brain health. “There’s better conversion of omega 3s into the plasma or into the food than with flax seed,” said researcher Wayne Coates.

Stronger Teeth And Bones  A serving of chia seeds has 18 per cent of the recommended daily intake for calcium, which puts your well on your way to maintaining bone and oral health, and preventing osteoporosis.

Don’t Forget Manganese  Manganese isn’t a well-known nutrient, but it’s important for our health: it’s good for your bones and helps your body use other essential nutrients like biotin and thiamin. One serving of chia seeds, or 28 grams, has 30 per cent of your recommended intake of this mineral.

Plenty Of Phosphorus With 27 per cent of your daily value for phosphorus, chia seeds also helps you maintain healthy bones and teeth. Phosphorus is also used by the body to synthesize protein for cell and tissue growth and repair.

Pack In The Protein  Chia seeds also make a great source of protein for vegetarians and don’t have any cholesterol. One 28-gram serving of these super seeds has 4.4 grams of protein, nearly 10 per cent of the daily value.

Fight Belly Fat  Chia’s stabilizing effect on blood sugar also fights insulin resistance which can be tied to an increase in belly fat, according to Live Strong. This type of resistance can also be harmful for your overall health.

Get Full. Faster Tryptophan, an amino acid found in turkey, is also found in chia seeds. While tryptophan is responsible for that strong urge to nap after a big Thanksgiving dinner for example, it also helps regulate appetite, sleep and improve mood.

Improve Heart Health  According to the Cleveland Clinic, chia seeds have been shown to improve blood pressure in diabetics, and may also increase healthy cholesterol while lowering total, LDL, and triglyceride cholesterol. Happy weekend loves!!!

Have you worked out today? I feel amazing after squeezing in a 6:30 am CorePower hot fusion class. In fact…Im running a little late this morning cuz of it, but totally worth it. Remember… I work saturdays, eeeekkkkk! Anywho…I am loving this shit!!! I’ve soooo become that chick. The “yogi”. I gotta say…I’m happy to be home from my wannabe jet setting vacations, and it’s time to do a little natural cleansing. I just finally bought a new Omega juicer from Bed Bath & Beyond (with my 20% off discount) and have been loving incorporating green juices into my diet.

What I love about the Omega, is that, it extracts the the juice at a slower rpm, so it doesn’t create all that foam that my old Breville juicer used to spit out. GOOD NEWS: more juice…less foam!

And… Since I’ve been juicing so much lately, I just can’t bring myself to throw away all that amazing pulp! So, I decided to utilize those extra nutrients. That fiber is full of fiber ya know! I busted out my big ass, totally obnoxious, almost commercial sized dehydrator… and made some enzyme rich “RAW” pulp crackers!
I know what your thinking…GROSS!
Well, think again. #sorrynotsorry babes… Sooo not gross!
So here’s the deal….I made mine savory, but, only because I was juicing mostly greens, beets and carrots. If you’re more of a sweet person, like…maybe you prefer juicing oranges, tangerines, carrots, melons, berries, etc, you could also do a sweeter cracker.
I’d have to play around with that sweet idea…hmmm.

Either way…we are recycling. Nothing goes to waste in this household. If you don’t have a dehydrator to make them “raw”… It’s ok. You can also bake them. No bigs;)

Anyway… I searched around for recipe ideas, switched a few things around, and found that this one was the easiest.
Mind you…play around with the flavors and spices you want to taste. Make a few different batches if you’ve got a few trays. Just sayin’

RAW Juice pulp crackers
 
Author:

Ingredients
  • 2 cups pulp
  • ½ cup flax seed meal (ground flax)
  • 3 tbsp nutritional yeast
  • ½ tsp italian seasoning
  • ¼ tsp garlic powder
  • 1 tbsp apple cider vinegar
  • ½-3/4 cup water

Instructions
  1. using a food processor or vitamix, mix all ingredients to remove chunks of pulp.
  2. You can also mix with fork or hand if you don’t mind chunks.
  3. roll or pat down onto a dehydrator sheet. Roll or pat quite thin, or it will take a long time to create the crispyness of the cracker With a butter knife, line the shape of your cracker squares. It will be easier than trying to do it while they are crispy.
  4. Dehydrate at 115 degrees for 12 hours or until desired crisp.
  5. NOTE: you may also bake them at 350 for 20-30 minutes, but be aware that you will be loosing out on those raw enzymes and nutrients.

I didn’t even put mine through the food processor and they turned out just fine, but I do recommend it;)

I’ve been juicing daily…so I’ve got a lot of extra pulp. Wish I could send you all some;)
THE TRICK: FREEZE THE PULP!!!

I found a great article on the kitchn.com on different ways to use pulp, so I’ve been playing around with those ideas as well.

I figured while we are talking raw, I’d bring up an “oldie but goodie” 😉

RAW ZUCHINNI HUMMUS
One of my all time favorite recipes! I seriously put it on everything, and dip everything in it! Lol. It’s fu**ing amazzzzeebalzzzz! I made a batch and it pairs beautifully with these little delish raw pulp crackers.

Ribbon zucchini salad with snap peas and avocado

WHAT IM INTO AT THE MOMENT:
Super ripe slightly frozen watermelon.

Like just stick them in there for 15-20 minutes. OMGGGGGG! The most refreshing thing you will ever have!
Also would be delicious if you did that, then juiced it or blended it and made watermelon agua fresca!

Ingredients
8 cups seedless watermelon cubes

2 small packets of stevia

1/3cup fresh lime juice plus 1 sliced lime

A few sprigs mint or basil

Ice

1 1/2 cups Water

Puree watermelon in blender, or juice put it through your juicer. if you blend it, strain into bowl through fine-mesh sieve to remove most of the pulp. Stir in stevia and lime juice. Transfer to pitcher stir in 1-1/2 cups water, add some lime slices and mint ( or basil) Let it chill in the fridge & serve over ice.

Let’s be honest….this next pic preeeeetttyyyy much summarizes my summer so far, lol. Lots of fresh fruit…agua fresca, iced tea… Wine spritzers, or sometimes an ice cold beer by the pool;)
Some would say, ” does this bitch ever work!?” I just smile and say
” if you love what you do, you’ll never work a day in your life!”

So…I’ve got news….oh andddddddd. A very exciting GIVEAWAY!!!
#1: I don’t tie my shoes anymore…yep, that’s right. I’ve jumped on the Lock laces bandwagon. Not only have I jumped on it, but so have all my running and ZUMBA friends.
Never tie a shoe again. This may or may not be somewhat revolutionary;)
I’ve switched out every single one of my workout shoes, and I couldn’t be more stoked about my decision.
To be totally honest with you, before the wonderful folks at Lock Laces sent me a few pair to try, I never once thought that this would be something of worth, but when I gave them a try, and saw what great quality they were, and how easy it was, I was a bit obsessed. The best part is that they are not hideous at all! lol. They are actually the freaking buzz round’ here!

I made a point to have my marathon running friend try them out as she trained for her 1/2 marathon coming up, and she had nothing but praise.

I wore them to my ZUMBA class, and my fellow instructors were ready to purchase a pair right then n’ there. Oh snap, we’ve got something here, y’all.

LOCK LACES are designed to eliminate tight spots, banding, and pressure points. The lacing system is very lightweight. With a combo of stretch-fit comfort and locked-in safety we’ve got a winner for sure. Oh ANDDDDDD they are water-resistant & come in various colors to match your gym shoe collecton.
