I know you always pass right along when you spot these ” Turkey tenderloins” at your local store. I know exactly what your thinking…. ” ugh, NO fat= SOOOO dry” NOT true you guys! next time you see these, pick them up, cuz I’ve got a great recipe that will satisfy your juicy pallet. No more dry white meat. I know why you would try to cook it to death, It’s poultry, and we’ve been conditioned to think, ” Cook it till you see absolutely no pink!” Stop it already! Gooood Lord. Chill on the super high flame!
I recently took an amazing trip to Thailand this year, and was completely taken back by their flavorful and decadent cuisine. The spices, the sweetness, the heat from hot peppers. YUMMMMM. Mind you, while on this trip, I was being quite strict on my ” No sugar kick”, so you were not going to be seeing me gorging on platefuls is Pad Thai, fried rice or desserts. Ok, I did try a lil of everything 😉 but, It was such hot weather, that I didn’t want to feel like a sausage about to rip through its casing, full of super rich foods. So, I kept it on the light side, opting for skewered meats, shrimp,fresh gorgeous fruit, papaya salads, Tom yum soup at night. Ughhhh this is taking me back ! ( sad face)
I’ve been back now from Thailand 7-8 months now, and I’m missing their cuisine more than evaaaaaaaa!
So I decided to bring Thailand back into my kitchen, in a healthier way. No dark meat ( my fave:/) super moist, No sugar of course, but sweet, pure protein Thai style turkey tenderloins.
Super simple, a little sweet a little spicy. And the key is… DO NOT OVERCOOK!
Now, let’s get started. Easy..Boneless, skinless, turkey breast tenders. I got mine at Trader Joe’s. They come in a pack of three, and are actually quite large. 0 grams of fat, o carbohydrates, and 28 grams of protein in 4oz!(4 oz would be about 1/2 of one)
TIP: If you are training at least 3-5 or more days a week, you should be consuming 30 grams of protein per meal, 5 times a day. I know seems like a lot, but it’s real.

Alright back to the important things.
- 1 package turkey breast tenders
- 1 tbsp apple cider vinegar
- 2 tbsp sugar-free apricot preserves ( iuse Natures Hollow) You could also use sugar free orange marmalade
- 1 tsp chopped/crushed garlic
- 1/2 tsp minced ginger
- 1/2 -1 tsp crushed red pepper, depending on how spicy you like things
- 1/2 tsp dried orange peel or orange zest
- 1 tsp basil
- 1/2 tsp thyme
- salt and pepper to taste
Place tenderloins in a gallon bag.
Mix all the rest of the ingredients, in a bowl and throw in the bag. Marinate turkey in sauce for 30-60 mins.
In a large skillet , add 1 tbsp of grapeseed oil. Heat pan on med/high.
Salt & pepper the tenderloins
Place on hot skillet, we’re going for a quick sear. 1-2 mins each side.
Add sauce into the pan. Reduce heat to low/med. Cover, and cook for 7-10 mins.
Watch it, because all tenderloins are not equal. They may be cut in different or thinner slices, therefore some may be cooked through faster than others.
They should be soft, almost squishy.. look for the JUICE! It may take you a time or two to gage the proper temperature and timing.Be patient. Once perfected, you will never overcook poultry again:)
