Guess what! First day of summer OFFICIALLY begins on JUNE 21st!Ekkkkkkk! Yes…that is tomorrow. Lol. So, we need to get it together ladies!
I know…we all know what that means! It’s time for a new bikini, and for most of us, this is dreadful, including me. It seems like we spend all year trying to prep our bodies and minds for this very moment. Haha. It does. It sounds ridiculous, but it is what it is! If it means working out more throughout the year, and changing eating habits….it’s all good then. We’ve done good for our bodies. I can think of worse things we could be doing. Lol.
A we all know, to reach ultimate results with optimal health, you need a game plan, a goal to reach.
I always remind myself…”Paula, it took 29 years to have this body, it ain’t gonna take 2 months for that body to change” I tell myself that when I’m feeling doubt, or when I wanna just say “eff it,give me that damn ice cream!”
It’s time. It’s time to start making changes, and for the long haul. Btw..as I write this to you…I’m saying it to myself too;) Trust me, it’s hard for all of us sometimes. We are not robots. We have emotions, and sometimes those emotions lead to bad decision making. The key: To not beat yourself up about it. Stress is the root of all evil! That is why we’ve got this 89/20 rule. Beacause we can’t be perfect all the time!

I’ve got some amazing workouts for you to try at home or at the gym. My favorite magazine, Women’s Health, is always either on my coffee table or at work. I am constantly following their quick but effective workouts, and I love to share them. Remember: If you use your time wisely with your workouts, you won’t need to spend 1 1/2 hrs at the gym. Trust me.
Below are some great examples of fat burning, muscle building, and HIIT.
When doing these workouts, and any workout really, keep in mind that, if it doesn’t challenge you, you MUST CHANGE IT UP. Always keep your body guessing. What this means…..really, 5 lb dumbbells. Um, you can do better than that… K, know what I mean;)

Snacking is how I live sometimes. In between meals and clients, I need a pick me up. My body needs to know that I haven’t neglected it, so remember to snack on something small in between meals to avoid:
#1: Not over-eating
#2: To avoid your body from storing fat ( if you go too long without eating while active, your body will think that you aren’t going to feed it, and will begin storing fat, or eating away muscle) no thanks.
#3: To not become ” HANGRY ” ( I apology see for what I said when I was hungry type attitude) lol
CHIPOTLE EGG SALAD ON NUT CRUSTS
A packet of these RAW wheat free crusts will set ya back $4.50 totally worth it. Gluten free, raw, and amazeballz!
CHIPOTLE EGG SALAD:
2-3 hard boiled eggs chopped ( only 1 yolk)
1 triangle of Chipotle Laughing Cow wedge
1/2 tsp mustard
1 tbsp light sour cream or 0% chobani nonfat yogurt
Salt & pepper
Mix together, top over crust and your done. BOMB!
These are fantastic! Little savory bite sized salmon cakes;)
“SALMON CUCUMBER TOASTS”
5 whole wheat wheat thins
1 triangle of your favorite Laughing Cow cream cheese spread. ( my fave is chipotle and queso fresco)
1 tbsp of leftover baked salmon ( could also use smoked salmon, but more sodium)
Thick grated fresh cucumber
Sprinkle of sesame seeds
This is the perfect snack. Balanced in fat, protein and carbs, your body will thank you. This is a great pre or post workout snack;)
If your not into fish, no bigs….you can use chicken breast too;)
Oh, and did I mention that 1 wedge of Laughing Cow is only 35 CALORIES!
Love that! Lots of summer parties and BBQs happening this summer so bust these out as a fresh appetizer! Yummmmmmmm
For you who have a gnarly sweet tooth, like me, I’ve got something for us!!!! I have to admit….I can’t have a meal without finishing up with a dessert;) with this sweet little bite, it satisfies that craving. I was over the moon when my Laughing Cow wedges got delivered and I saw this…. FREAKIN CINNAMON CREAM ummmm, are you kidding me!
Obsession. With only 45 calories a wedge, you can eat this with absolutely no guilt. This is lovely smeared over a cut up apple, or well, pretty much any fruit.
Right now…get ready to go BA-NA-NASSSSS!
CINNAMON CREAM BANANAS ROUNDS
These are a fave! Kids adore them, and adults freak out;) top with your favorite seeds, nuts, or even a bit of chocolate.
Here’s the easy steps:
2 bananas (cut rounds)
Shaved raw cacao (100%- the higher the % the higher in antioxidants)
In between 2 banana rounds, sheer a bit of the cinnamon cream and alternate with your toppings.
Serve chilled. So easy and delicious:)
Summer time, is the best time to eat clean and light, don’t you agree? It’s hot out, and
the last thing I want or crave during this time of year especially, is something heavy. Ugh. This is a great lunch idea. Now…for the vegetarians out there, clearly you won’t be using turkey breast, but….you could easily sub that out for some yummy sweet potato, beets, rotated carrots, or even seasoned tofu. Your call:) we all know, I love my protein, and by lunch time, I’m in serious need for something protein packed.
I wanted to try out some of these new Laughing Cow flavors, so I made three faux sushi rolls using the Light Creamy Swiss, Garden Vegetable, and the Chive & Onion wedges. Omggggggggg. So bomb! What I LOVE about these, is that that is all you need to add flavor. No need for mayo, or to OD on salt and pepper. Each wedge packs a mean punch of yummy flavor.
TURKEY & CHEESE “sushi” ROLL UPS
3 soy paper wraps
Finely chopped romaine
Organic herbed turkey breast
3 favorite Laughing Cow wedges.
3 of these roll ups for lunch, and you’re barely knocking on 200 calories! Whattttttt!
Lunch is packed. Loads of water…fruit…hummus…roll ups…cheese wedges.. Done n done.
For fun…. A healthy summer bubbly drink:)
Add your favorite alcohol for PARTY TIME! Lol
Listen…I’m not some health saint…I like a cool summer cocktail as much as the next chick, so if your gonna drink, make it AMAZING!
