OOOOOOOOHHHH LAAAA LAAAAA

This is a meat lover’s low carb lasagna! It’s delicious and a party FAVE! With just a few simple steps, you are on your way to creating a gourmet meal babes! I always try to take photos as I go along. I find that it really helps to visually see how to get to the end result. When you are looking to buy a cookbook, which one do you buy…? The one with all the pics explaining every step, or those fancy shmancy ones that have 1 picture for every 10 pages? I know that’s not the way I learn a new recipe. Sooo, if you are visual like me, I hope this helps.

OK. Lets get started…. If you’ve got a mandoline.. grab it. I find that it helps me stay organized if i get out all the tools i may need before i begin. I get my pans greased up and get my oven ready to pre-heat. In this case, set that puppy to 350*

This recipe will easily serve 3 peeps.

Zucchini
– 2-3 zucchinis
– 1/8 cup olive oil
– Salt and pepper to taste

Cut off the ends of zucchini. Using a mandolin, slice zucchini into long thin strips. Toss in olive oil, salt and pepper and set aside.

Ricotta Mix
– 1 cup low fat ricotta cheese or you can use low fat cottage cheese
– 1/8 cup basil (chopped)
– 1/8 cup parmesan cheese (grated) and a handful of shredded lite mozzarella
Salt and pepper

Mix everything together, set aside

Beef filling
1/2 chopped green onion
1/2 a red pepper
1/2 a shallot
1/4 onion
1/2 tsp crushed garlic
1 tbsp Italian seasoning
I packet of lean ground beef. ( I used this super lean ground beef from Trader Joes) You could also sub beef for lean pork sausage, or omit all together and use spinach for a veggie option.
2 tbsp water

Sautée chopped vegetables until softened.
Add the beef, add seasonings, salt and pepper and water
Make sure everything is very nicely combined.
Do not over cook.. You will later be cooking this in the oven, so sautée 10-12minutes while breaking apart and stirring, until pink has just vanished;)
Remove from heat and set aside

Assembly:

Coat your baking dish with a layer of tomato marinara sauce ( I recommend Rao’s)
Lay down 2 over lapping slices of zucchini
Spread with a lay of ricotta mixture
A layer of sautéed ground beef
Carefully roll up and lay in baking dish
Tip: if you are having a hard time with them not staying rolled up, you can poke a toothpick through to secure.
Continue, until you run out of ingredients. Make sure to pack them tight to ensure they don’t unravel. If you have extra beef, you can layer it over the finished roll ups.

Top with the rest of the marinara sauce and sprinkle the mozzarella on top. Bake in oven until cheese is melted.

At 350 degrees for about 30 minutes.

This dish came out soooo perfect! Food, I swear, it’s like porn to me. As soon as I took it outta the oven, I was ready with the camera, like a creep. Lol.

And no… I was not orgasming over the Manicotti alone fools, I had a girlfriend over…who’s just as into food as I am. 😉 so we devoured!
She brought a great bottle of red, which paired beautifully.
