Today, I woke up feeling refreshed. Maybe cuz I allowed a bit of extra sleep-in time. First things first… Coffee. Espresso with almond milk to be exact. The fave in the house. You guys seriously, get a Nespresso Pixie with the froth. I’m not kidding, one of my Prized possessions. I finished off the last two cookies from the batch;)
Then made my 3rd green smoothie of the week since I purchased the Vitamix. It’s FANTASTIC. I can’t wait to make some soups in there, since its been cold, cozy weather lately over here in LA. Yes, the freakin thing actually heats up to make soup, because the blade is soooo strong, and creates a friction. Pretty crazy.

The workday today was super busy, so I really didn’t have time to take pics of lunch and snacks. For some reason I’ve been super hungry the last couple days. All I want to do is snack all day. Ugh. Do you guys ever have days like that? So annoying. At least, FINALLY, the chocolates are gone from the staff room! They were the devil. No more holiday sweets Puuuuuleeease, I’m soooo over that shit.
My lunch was a BIG ass salad, with everything you could think of in it.
- egg whites
- Swiss chard
- goat cheese
- pumpkin seeds
Really, no lie, HUGE.
My snacks today were:
- roasted seaweed snacks from trader’s
- a guava
- kale chips
- a handful of raw walnuts
Such a snacks lady today… Ugh just get me to Zumba already.
Class wasn’t till 8:30 p.m. So I got to relax at home with Willy for a couple hours before class. Since I knew 9:30- 10 p.m is wayyyy to late to eat, I reheated my latest creation for dinner:)
I call them my ” Pink Magic Mushrooms”
They are soooo freakin good, and sooo hearty. The texture of the portobello makes you think your having a big ol’ slab of meat, when really, you’re having something super lean. That’s why I luvvv em’. These, I stuffed with rainbow chard,( my fave, and hence, the pink color) garlic, skim cheeses, onion, Greek yogurt, and some other super goodness!

Ok, so today…I finally received the package I have been so anxiously awaiting….my new at-home, food photography studio;)
Most of you know that I’ve been really trying to improve my ” no f*%#ing lighting in my house situation” so I was super excited to get home and rip through this box. Yeayyyyyyyy! Finally:)

Dumb ass didn’t see that. Whoops. So, I looked up the return policy, and turns out, since it was not their error, I’ve got to eat the shipping cost. Womp wooooooomp.
Whatever, get this thing out!
It took my 20 minutes to figure out how to coil it back up to the tiny little bag it came in.
I gotta go online mañana and order the right size.
Now, I was really ready to sweat out some frustration. 8:00 rolled around, so I took off to Zumba. A couple of girlfriends met me there from work to take the class as well, so tonight was extra fun! We went alllll out! This class is phenomenal…
I, of course wore my Polar watch and transmitter to measure my heart rate, calories burned, and to track my fitness goal for the week.
689 calories burned!
WHAAAAAAAAAAT! that’s what I needed.
It was Haley’s first time taking the class, and she freakin rocked the house. She picked up all the choreography, like it was her J-O-B!. That’s right gurrrrrrl. So much fun. This is what it’s about, finding something you love, and stickin to it;)
Apart from Zumba, as you know, I just built my at home cutie little gym, so I’m always on the lookout to share some at home workouts ANYONE can get down with. Especially when you don’t have a lot of time.
Here’s a great one to try out. It’s pretty killer.
