OK so, it looks crazy but I promise I feel so great eating this after a workout, that I had to share. Not everything can always be pretty, right? Love to make this especially after a heavy lifting day when I know my muscles need the protein.Its also the perfect combination of carbs and fats. Think of this as something similar to a porridge or oatmeal.

1/2 a small roasted squash ( I always prefer kabocha or butternut)

1/2 cup scrambled egg whites

1 scoop vanilla protein powder

1/2 almond milk

1/4 tsp pumpkin pie spice

1/2 tsp vanilla paste or extract

3-4 drops stevia

a dollop of almond butter (preferably raw)


In a bowl mix protein powder with almond milk (u can heat up the milk first for 25 sec if you’d like)

Add mash up cooked egg whites with the roasted squash

Add in spice, vanilla, and stevia and stir

Top with almond butter and enjoy!
