OK, I must admit, growing up, I HATED green beans. They were always plopped on your plate, steamed ,and with what seemed to be , absolutely no flavor. Since then, becoming a lover of veggies, and finding new ways to season and cook, I’ve grown quite fond of these skinny little bitches!;) I love to pair these with a juicy filet mignon or a softly cooked fish. They are even lovely tossed in olive oil and almond meal, and baked as a crunchy snack. Get into them people. I swear I NOW even love them RAW with a bit of hummus or yogurt dip! yummmmmyyyyyyy


1 bag green beans

1 tbsp coconut oil

1 tbsp red wine vinegar

1/2 tsp garlic salt

1 tsp paprika

pinch of cayenne pepper

2 tbsp of roasted or raw pepitas or pine nuts


In a cast iron skillet (or a nonstick is fine) on  medium heat

Heat coconut oil and add the green beans.

Toss for a few minutes to soften them up.

Season with garlic salt, paprika, cayenne

Keep stirring for 4-5 more mins

Then add red wine vinegar

Turn heat to med/low

Cover and cook till slightly brown and soft

Throw the nuts on top and serve!
