PUMPKIN CHIA SEED PUDDING
- 1/4 cup + 1 tbs of chia seeds
- 1/2 cup of organic pumpkin puree
- 2/3 cup of almond milk or coconut milk
- 1 tbs of SUGAR FREE honey
- 1/2 tsp of cinnamon
- 1/2 tsp of vanilla
Chia seeds are amazing! They are so absolutely versatile. In this case, they become gelatinous which makes for a perfect pudding foundation. Chia seeds are a super food, and full of fiber and omegas.
