PUMPKIN CHIA SEED PUDDING

INGREDIENTS:

  • 1/4 cup + 1 tbs of chia seeds
  • 1/2 cup of organic pumpkin puree
  • 2/3 cup of almond milk or coconut milk
  • 1 tbs of SUGAR FREE honey
  • 1/2 tsp of cinnamon
  • 1/2 tsp of vanilla

Mix all of the ingredients together.  Refrigerate for a minimum of three hours and eat!

Chia seeds are amazing! They are so absolutely versatile. In this case, they become gelatinous which makes for a perfect pudding foundation. Chia seeds are a super food, and full of fiber and omegas.
