1 tsp coconut oil

1 cup kale, torn into bite sized pieces

1/2 tsp crushed/minced garlic

3 cups canned pumpkin

1/2 cup almond meal

1 tbsp chia seeds

1 tbsp sesame seeds

salt and pepper to taste

1 tsp chilli flakes (optional)

1/2 tsp cumin powder

1 tsp turmeric

1/2 tsp. chipotle seasoning


Heat a skillet with coconut oil and add kale, garlic, salt and pepper, and cook till slightly crispy about 5 minutes.

While that’s cookin up, in a medium bowl mix pumpkin with almond meal, chia seeds, sesame seeds,chilli flakes, cumin, tumeric, chipotle, and salt/pepper to taste

Cradle a tablespoon sized amount of pumpkin mix in your palm, then press in a few pieces of kale Use a little bit more mix to cover the kale

Continue to make croquettes until finished with mix

Line a baking tray with foil and make sure to grease it up so that those bad boys don’t stick.

Bake for 15-20 minutes until firm
