Hi lovely friends!
I’ve got a super special post for you!!! I know, you’re looking at the title, like WTF!??
Hahaha, well, it’s eggggggzactly what it seems. Sausage making like the pros! Ok, I can’t take credit for this but, I was a part of it & I think everyone must try to make their own sausage at least once in their @ife! seriously!!!! Why? Cuz it’s the bomb!!!!

My girlfriend Amal, (shaved head) recently moved to this beautiful home in Echo Park, and had renovated her backyard into a chefs dream!!! A beautiful outdoor kitchen, along with a cozy wood burning fireplace. All of us girls are big foodies and wanna be chefs, so we had been talking about getting together, but were waiting for the construction to finally be done!


We have been wanting to have a sausage making party for like…..EVER!!!!!!So, finally the day came! We each picked up our own meat, and headed to Echo Park for the day. When I arrived with my bag full of goodies, I noticed Amal had set up the huge table full of every herb, every spice, and every sauce combo you could possible think to stuff with a sausage. Wow!

It’s not a party without a bit of day drinkin:)

I picked up a couple bottles of a light white wine as our aperitif.


Soooo, I wasn’t thinking and when picking out what type of meat filling I wanted, and bought a bunch of chicken breast from Hardy’s meat market. Amazing, fresh chicken. Here’s the problem. YOU NEED FAT TO BIND THE MEAT!!!! there goes my attempt at making the healthiest sausage around! Such a dumb ass.

I was determined though…..

We were using the Kitchen Aid stand mixer with the sausage making attachment. Which, BTW, is AMAZEBALLZ, and if you’re a cook, a MUST! I’ve been dying for one since I was like…hmmmmm. Maybe 18. Why I haven’t purchased one yet, I haven’t got a damn clue! They are fantastic! Perhaps it’s because it takes up about 1/2 my kitchen counter! Lol
All this work called for some delicious homemade cocktails. Besides, we weren’t goin anywhere anytime soon…this shit was werrrrrrek!

As most of you know, I am froM Argentina, and anyone who knows anything about my country, knows that you can’t set the table without bOmb ass CHIMICHURRI!! Check out the recipe here. Simple and perfect! I brought it from home, ( I buy mine at mercado buenos Aires, when I’m too lazy to make it myself) because I thought, why not, this is gonna taste bomb in my sausage!!

I was cracking up cuz, here I am, trying to make my sausage be alllllllll healthy n shit, and here comes Amal……. 1 thousand pounds of full fat, full flavor PORK! goooooood lord! Ok, maybe I’ll borrow a lil;)
Amal got all this amazing meat from a new local butcher in West Hollywood. Some of you may have heard of them. They are the hottest new butcher babes in town! Lindy & Grundy serve up some mean meats! All local, pasteurized, and organic! I absolutely LOVE the idea of the “small shops” makin’ a comeback! This business has absolutely made it. They offer classes for meat enthusiasts, delivery for all your meat needs;) and offer the freshest product around.

After prepping our meats, it was time to grill up lunch! Lemon cilantro chicken!

Y’all….so we thought, “this is gonna be cake!” Whelp, not so much….here’s a shot of us in action. We were being attacked by wasps who apparently have a thing for raw meat. WTF! I was grinding as Amal was fanning them away. It was disastrous.

So here comes Dianne. Y’all this took all of us. Forget it if you are attempting this shit alone.

We had so much meat to grind…this was gonna take forever! Remember….we still had to mix all the herds, and spices…them tube our mixture into casing. Omg. Hahahaha…notice Dianne’s face…she May or may not be getting stung by a wasp.

ABOUT 8 HOURS LATER…….. we’ve got ourselves some sausage!!!!!!!!

Piping the sausage through into the casing was a nightmare. It took us forever! No joke. We had one person pushing the ground meat through, then another person making sure no air was gettin into the casing, then ANOTHER person, twisting to make the sausage shape. Holy shit! We put in some serious time!

But…here we are, happy as pigs in shit with our first amateur batch of sausages! Hahahhaha

Finishing up our final batch in the dark hours of the night. Lol.

Well…..here she blows y’all. You are supposed to let them hand in the fridge for at least 48 hrs apparently, but fuck it. You know how hard we worked for this!? We ARE having some! Fire up the grill! Soooo proud!

We hung the rest to dry. We probably could of fed a small army. We each took a few of each other creations home and hung in our own fridges. I gotta say….pretty amazing!!!!!
