Trust me… won’t crave carby mashed freakin potatoes again!
This has become the favorite accompaniment to most of my protein dishes. Super low in calories, fat, and carbohydrates. He’ll, it’s guilt free! Follow this simple recipe and shhhhh, no one will ever know you swapped out potatoes for cauliflower. 😉

With just a few ingredients, you can whip this up in 15-20 minutes.

1 head off organic cauliflower

1/3 cup fromage blanc 0% or 0% Greek fage yogurt

2 tbsp light coconut milk ( I get the can from Trader Joes)

1 tbsp water

1/2 tsp crushed garlic

1/2 tsp thyme

1 tbsp chopped chives

Salt & pepper to taste


Cut up the cauliflower head and steam for 10-15 minutes or until really soft.
Transfer into food processor. ( you may need to do this in batches if your processor isn’t that big.
Add light coconut milk, water and fromage blanc or nonfat Greek yogurt.
Pulse until you get the consistency of mashed potatoes. Add thyme, garlic, salt & pepper
Pulse until all is combined and you are happy with the consistency.
This is where you grab a spoon and taste:)
Check if you need to add more salt at this point.
Transfer to a great dish and top with fresh chives

Great paired with salmon, chicken or beef.
You guys, seriously, life changed when I realized I didn’t need all those carbs to enjoy mashed potatoes. Who needs it, when you’ve got cauliflower! A girls best friend. 😉
