EASY PEAZY APPLE CHEEZY

 

Ok babes, Christmas is almost here, & all I can think about is damn APPLE pie! I’m trying to work on a beyond healthy actual pie recipe but till then. I need a craving cure, and this did the trick! I happen to LOVE cottage cheese but you can also do this over cooked oats, skim ricotta cheese or even egg whites (sounds weird, but once sweetened they taste like porridge). It’s a super simple recipe to a gnarly holiday sweet tooth! You can have this in morning as your breakfast or as a dessert. I also used GALA apples, but you could use any kind you would like:) But make sure to peel them because the skin tends to be a little to tough.

INGREDIENTS:

 

(single serving)

  • 1/2 cup Low fat cottage cheese (or egg whites, oats, or skim ricotta cheese)
  • 1 gala(or any ) medium apple (peeled, cut into 1in.)
  • 1 tsp vanilla bean paste/or extract
  • 1 tbsp xylitol or stevia
  • 1 tbsp organic raisins
  • 1/4 tsp cinnamon
  • 1/8 tsp nutmeg
  • dash of salt
  • Chopped up walnuts/pecans

DIRECTIONS:

In a small bowl, toss the cut/peeled apples with vanilla,xylitol (or stevia), cinnamon,nutmeg & raisins until all coated and combined

Place apple mixture a small greased skillet (I used organic coconut oil spray) on med-low heat

Keep stirring, apples will soften and sugar sug will begin to caramelizr.

Make sure to watch it because, remember that sugar subs have a higher burning rate.

Cook for 5 minutes.

Med/LOW heat.

While cooking, take this time to heat up your Cottage cheese, scramble some egg whites, or add boiling water to your oats.

I just cooked me cottage cheese for 40 sec.

Top the cottage cheese with cooked apples and top with nuts

I am totally obsessing over this right now. I’ve been having loads of fun playing around with switching up the fruits, and using different nuts. No joke, this has been my go-to breakfast  at least 2 x a week!

All I think of when I eat this, is “COZY CHRISTMAS APPLE DELISH”
