CHIA PROTEIN MUFFINS

You just can’t get any healthier than this. I can snack on these all day. You can eat them alone or as I like to, with a little coconut butter and sugar-free jam. Even with a dollop of your favorite nut butter alongside a cup of coffee of tea. You could also pack them into your work lunch and munch on them midday!

INGREDIENTS:

  • 1/2 cup chia seeds
  • 1/2 cup protein powder
  • 1 tsp vanilla bean paste (or extract)
  • 1/2 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp liquid stevia
  • 8 tbsp water

 

DIRECTIONS:

Pre-heat your oven to 350 degrees.

In a bowl, mix dry ingredients. Protein powder, baking soda, baking powder, chia seeds. stir well.

Slowly adding in the water

Line or grease with coconut oil a muffin tin pan.

Bake for 18-20 mins.
