Happy Tuesday beauties!! Hope y’all had a fabulous day off celebrating Memorial Day;) I already have Mondays off, so nothing too out of the ordinary for me. Gym, as usual, a bit of bbqin’, and a LOT of laying around doing nothing but watching movie after movie. I never do hat. It was fab!
I’ve been obsessing over how beautiful my peonies have bloomed, so I must share. They were having a sale at whole foods the other day, $8.99 for 6 stems. Egggggzactly! You best believe, I stocked up.

Monday was a bit of a recovery day for me. Sunday was jam packed. We hosted our bestie’s bridal shower, which was SOOOO FUN, but not joking….lots of wine, champagne, sangria…..oh andddddd chips and salsa.;) oops

sugar-free chocolate covered strawberries. YUMMMMMMMMMZIESSSS

Super simple and much healthier than traditional choco-covered strawberries. Give it a try.

1st:
Rinse fruit and let completely dry

2nd:
in a med bowl, mix 3 tbsp melted coconut oil
1/3 cup 100% cacao powder ( I used raw/organic)
1 tsp vanilla bean paste or 1/2 tsp vanilla extract
3 drops stevia
Pinch of salt

3rd:
Place on parchment paper and into the fridge they go to set.

Yesterday started off with a trip to the gym. The plan of attack:
GPP FITNESS amazing-NESS!
Yeah, I know…WTF. First thing in the morning….yes fasted.
Homegirl needed to burn off some of that alcohol and chips from Sunday!

That’s right….you take a full deck of cards with you to the gym or you could also do this at home, find a nice space where you can jump and run around like a crazy, and do one card at a time.

My warmup was 20 minutes on the stair master on “INTERVALS”. Got my heart rate up and my body sweatin’.
I headed to the mats where there was also a long “runway” for my sprints.
So, whoever the F*%k last shuffled these cards was a Mother Trucker, cuz I kept getting burpee after burpee card, like it was my J.O.B! Ughhhhhhh I was dying.

I switched up my jokers from 400 meter run to sprints.
Also switched aces from 10 reps to 50 jumping jacks.

Yep, that’s right, you don’t stop until you finish the deck of cards. This workout is fantastic to try with clients for time. It’s a full body workout, and trust me, you really burn does muscles out.
When I finished… I was sweating bullets, panting, and completely flushed. Super proud of my motivation, geez.
I looked like I was training for the Olympics or something, lol, to the point where one of the trainers comes up to me and says, “Hi, I’m Mario, sorry to bother you but….what are you doing? Are you an athlete?
Ummmm…” LOL, no…but I like to train like I am.
I was so happy to share with him my new obsession with GPP fitness.

I could NOT wait to get home and devour this Vega Sport Chocolate Protein shake! I’ve been wanting to try this for a while, so I was stoked when Vega hooked it up for the swag bags at blend retreat! Yipeeee. It was like drinking melted chocolate ICE CREAM! Holy delicious! I’m sad I only had 2 packets:(

Mid day snack…Blueprint Green juice. It’s super yummy, but I gotta say…I’m hungry again in about 3 seconds. Hmmmmm.

So….pre-lunch (movie) appetizer…. And no, this wasn’t all for me chicks. Lol. A lil midday wine to celebrate the holiday, don’t judge. It was far past noon.;)

I discovered a new favorite cheese y’all!!!! And……you can find it even at Ralph’s! It’s called Beecher’s Handmade (from Seattle) OOOOOMMMMMGGGGGGG
It’s a semi-hard cows milk cheese. A little sharp, aged for 15 months. So bomb. We also enjoyed a fabulous bottle of wine. Acacia “A” Pinot noir is my latest find. For around $15 it’s a great bottle that’s soft on the palate. This particular one has nots of raspberry, black cherry, slightly sweet but a bit peppery. Oooohhhhhweeeeee, really lovely.

Actual lunch was simple, fresh, and clean.
Mixed baby greens tossed in orange olive oil w/ muscat champagne vinegar,along with some BBQ turkey breast fresh off the grill. Gotta balance it out right!?

A much as I’m not such a huge fan of protein bars, except the occasional quest bar, sometimes, you really just need a grab and go, right? This isn’t a meal replacer, I cannot handle those. ( I’m a hungry girl) this is a perfect snack!

Fusion Fest with Women’s Health Magazine & my interview with “The Next Fitness Star” finalist Kit Rich

I am so excited to share with you all my fun day at the FUSION FEST put on by Women’s Health Magazine at Exhale Spa. I felt honored when they asked me to come and check it out and have a chance to speak with the “The Next Fitness Star” finalist Kit Rich. I am a HUGE fan of the magazine so I was STOKED to to be a part of it.

I arrived at the Fairmont Miramar hotel on Ocean dr, and made my was through the gorgeous grounds to the spa. They directed me to the rooftop where I would be taking my first ever Core Fusion class! Yes, on the rooftop, in the open air. Absolutely stunning 360 views. I may be able to do this everyday, well, if I could afford it;)

Btw… Thanks CHOBANI & OGIO for my sweet ass new gym bag. I’m totally obsessed!
Since I was 30 min early, I did a quick bi & tri workout before heading out to the patio for my 5:10 pm class.

The sun was out, but it wasn’t too hot. Just right. I’ve never taken a workout class that required sunglasses, but hell, I’ll roll with it. Especially if you throw in a DJ to pump out jams while you work out! I’ve tried every kind of work workout you could imagine, but never a Core Fusion class.

The premise of the class focuses on core strength to create the ultimate full body workout. In this class we only used weights, but it’s ever changing. You may find yourself using weights, balls, bands, and your own body weight as resistance. The key to this regimen is the raise the heart rate to a point where you will continue to burn calories long after the class is Done.
A total of one hour, and trust me, by the end of it you are shakin’ in your boots! I was already super sore from my GPP workouts this past weekend, so I was dying.

I was so happy to see the line up of contributors and vendors for this event as well. First off, one being one of my favorite alcohol lines “VEEV” One of the owners of the company happens to be a client of the salon, and couldn’t be sweeter, so I am happy to support. I’m not a huge hard alcohol lover, but this new line has got me hooked. I mean, not like alcoholic hooked, but you know what I mean. Lol.
This company is based on organic, all natural ingredients. Most importantly being the world’s FIRST acai spirit with 1% of all proceeds going to rainforest preservation and environmental initiatives. This ish is a game changer.
I was stoked to try their new line of VitaFrute super fruit cocktails. Premixed. All ya gotta do is pour over ice and serve. Holy dangerously DELICIOUS!

These babes were hooking this chick up with some refreshing Vita Coco coconut water.
I’m not gonna lie….I think coconut water taste like sweat…maybe like breast milk.. Hmm, either way, not a fan. I told them that, and they assured me that if I tried the mango/ peach flavor combo, I would rethink my gross comment. Welp…..what can I say…I was like dayyyyyyyyummmm. sooo yummy! A little too much sugar content for me, but ultra hydrating and not gross AT ALL! You know…..coconut water happens to be the BEST hangover cure…just sayin’
I threw a couple in my swag bag and headed to my target!

When Women’s Health Magazine contacted me about seeing if I was interested in speaking with one of the Next Fitness Stars, Kit Rich, I jumped at the opportunity! This is going to be huge y’all! It’s about time we developed a competition like this. After I’m sure, a ridiculous number of contestants signed up, auditioned, and sent videos, only five finalist were chosen. Once chosen will be flown to New York City where they will star in a video short showcasing their workout and participate in a photo shoot to appear on the “flip” cover of the July/August issue of Women’s Health. Videos will be posted online for readers and fans to vote on their favorite finalist and also sent to our celebrity panel to judge their top finalist. The overall winner will be selected based on a combination of reader/fan votes and celeb judge votes.

*Star in 4-6 Women’s Health fitness DVDs to be sold nationwide

*Star in an editorial feature in Women’s Health in Jan/Feb 2014 issue

I was excited for the chance to sit and chat with her, because in doing my research I wasn’t quite sure what to expect. I knew that she was pilates based, had a big celebrity clientele, and was highly sought after, but, after what seemed like,” just a couple of Amigas chattin'”, I realized, there was much more to her and her vision of what’s to come in fitness.
This girl couldn’t have been more sweet or real. She was on point and didn’t skip a bit. I like that. She answered all of my questions with no hesitation and with complete confidence in the direction she was going. I sat down with her, and the first thing she says to me is ” It’s so great to me you, From Fries to Fit huh?, tell me a bit about you and where that came from?!” I mean, I love her! I really appreciated that, she really made me feel like there was absolutely nothing else she’d rather be doing at that moment then talking to me. Trust me, there was craziness going on around us, so it was a bit loud;)
This girl is headed to the TOP! She has an amazing sense of self and body awareness. In speaking to her, I realized we had a lot in common. Actually, thinking about it now, a lot of women will be able to relate to her.

FF2F:
How long have you been in the Fitness/ Pilates industry, and how did you get into it?

KIT:
My story was not some crazy ” I used to be so fat, now I’m so skinny” story. My story started 9 years ago, very humbly, with a bad case of body dysmorphic disorder, and wanting nothing more in life but to gain a better sense of my body and myself. I started taking some Pilates classes, getting better and better, and one days, things just clicked for me. I knew that this was what I needed to be doing. Fitness was gonna be my life and career. I got certified and began teaching classes, and quickly gained a super loyal clientele. Now I mostly focus on teaching privately.

FF2F:
What drives you as a trainer? How do you find the motivation?

KIT:
Look, to me, it’s not just about ” get fit, loose weight, work, work” that’s all great, but.. Jillian Michaels has that market on tap. My main focus, with what I do with my clients, and what I’m trying to get out there, is this:
How did we get ourselves here?
Why did we allow ourselves to work for fitness rather than making fitness work for us?
I think it’s about self awareness, using the tools that each one of us has, but doesn’t always use, and using those internal tools to create motivation and balance in workouts, and in life. The less you stress, the more you can feel your best. I create workouts that are effective, target your entire body, and help you find your own motivational tools to want to push yourself to do it better next time.

FF2F:
Did you ever expect to be “The Next Fitness Star” finalist “?

KIT:
I know! Crazy, right!? You know, 3 years ago, I auditioned on Oprah’s OWN network casting for “The Next TV Star” and made it to the top 20, but didn’t make it to the top. It must have been meant to be that now, we are sitting here, and I’m in the top 5 for “The Next Fitness Star” I feel honored, this is where I should be.

FF2F:
Kit, tell us…..any secret fat burning tips?

KIT:
Really, it’s no secret at all. — If your diet contains less energy than your body expends, you will lose weight. In other words, It’s about what you are putting in your body and how much of it, in relation to how much you are physically working your body to expend the calories you just consumed. I believe in 80/20. Moderation is key, and we must work, everyday, to ensure that balance stays in tact. Self control and motivation will drive you to that lifestyle.

FF2F:
What can we expect from Kit Rich in the future? Where do you see yourself and company in the next 5-10 years?

KIT:
It’s just the beginning, and I couldn’t be more excited! I see books, DVD’s, camps, shows. All of it. I’m here to change the way we see fitness and ourselves. I want to help people look their best while becoming the best they can be inside. The future is bright, that’s for sure!

When I finished my interview, I spotted these cute gals with some amazing workout gear I had never seen before. As I went through their rack of super cute digs, I chatted with the girls to get a bit of background on Strut This fitness wear. First of all, it’s a mother-daughter run and owned business, which I love. I’m all about supporting local and small businesses, you know that. Especially, if I’m loving their product.
The material is to die for, and super soft. You can really tell, they didn’t cut corners here.

Listen, I know, who doesn’t love Lululemon, but on the real, they are just sooooo expensive. Ugh. I was seriously looking for something new and fresh that I could sport in Zumba, hiking, traveling, and hardcore gym workouts, while NOT Breaking the bank.

Good day, good day beauties…. You know what I LOVE about, What I Ate Wednesday’s……… WHAT I ATE ON WEDNESDAY;)
Since I am not in the salon anymore today, I really get to sit, create and enjoy some great lookin’ meals. Well, you be the judge;)
I am finally starting to get back into the groove of things after a very exciting and fun weekend away at the blend retreat. I taught Zumba this morning at 10:30, and to be honest, I didn’t know if I was gonna make it through it! I am still sooooooooo
Sore from the GPP workouts, that yesterday, I needed help walking down the stairs! Geeeeez. Whatever…suck it up Paula, you loved that shit. Oh yes I did. Can’t wait to start my GPP Fitness ritual starting next week.
6 days on- Sundays off. Yikes. Nervous to be doing these alone. I will be posting the workouts, so please do them with me;)
Anyway…. Sorry, I get distracted.
BREAKFAST 8:00a.m.

1 small slice of Brocolli Protein Bread (recipe to come)
Organic low salt turkey breast
Hard boiled egg whites
1/2 a kamut cake with Natures Hollow sugar free (made with xylitol) raspberry syrup & New York super foods chia peanut butter.

Seriously, you need to get down on this ish. CHIA PEANUT BUTTER! ok, I love all nut butters, and since I am a fanatic, I like to try out every single one on the market! I don’t like to get bored you see. This was a really nice alternative!

This company is family owned, and family run. You what that means. Small business usually keep it tight to make sure they can offer a really great product, with organic, clean, non-gmo ingredients. The guys at New York Superfoods create products for active individuals with all natural, gluten free Superfoods. No, they did not ask me to review them, this is just what I do sometimes. You need to know what’s out there, especially if I you are into health and fitness. Stay educated on products in the market that we can utilize to enhance life and performance. I considered today, a special Wednesday. You know why? Cuz I got back from Utah with soooo much swag to try! Woohoo!
I tried my first scoop of Fit mixer today for much needed energy. It was pretty great! I liked that there weren’t any artificial ingredients, and that it truly felt good in my body. It also contains natural colors and flavors from beets, strawberries, and coconuts, and is naturally energizing due to its main ingredients of Palatinose and green tea and green coffee extracts. I was on fire today, and actually burned 40 more cals than I have been lately:) Maybe it’s because This stuff contains Raspberry Ketones to help you burn fat quickly while maintaining energy levels throughout your workout*. It also delivers Palatinose, a slow-burning carbohydrate designed to support sustained energy throughout the day
I’m gonna keep it up and see how it works out for me. We’ll see. Curious to try their other products.

Another product I tried today ( 2 hrs before teaching) was Shroom Tech by Onnit. I’m usually quite weary about changing around my supplements. I honestly usually just stick to CLA, green tea, protein, and an energizing mixer per-workout, but, since hearing a lot of buzz about this company, and once chatting with them at the retreat this past weekend, I was very interested. Today was my first day, so I’ll have to revisit this product & review once I start becoming more aware of how my body is being effected.

Today’s class was super fun & the polar doesn’t lie! 711 CALORIES! Hot damnnnn! in Zumba, you have got to let go and dance your ass off. FULL OUT. Make it count.

I, no surprise, am like a starting child after class, so I made sure to pack one of my homemade blueberry protein shakes to take with me. I swear, if I try are run around town after class, and don’t put anything in my belly, I will start to convulse. Hardly, but vey O-so very shaky. Not cute. This holds me over and tastes like a dessert;)

Vanilla Blueberry Protein Shake:

1 scoop About Time Vanilla whey protein.

1 cup 30 calorie unsweetened Vanilla Almond Milk by SILK.

2 heaping tbsp of 0% CHOBANI Greek yogurt

1/4-1/2 cup organic frozen or fresh blueberries

4 drops NuNaturals stevia extract drops

2 drops of vanilla extract

3 ice cubes

1 tbsp chia seeds

I had lunch with a girlfriend at this AMAZING Place in North Hollywood called HealthyCA.
This place is a total hidden gem! It’s mostly a catering place I think, cuz the actual restaurant portion is tiny. They can really only seat a handful of peeps there, so your best bet is to walk in, order at the counter, and ask for it to go. Te pics say it all. We couldn’t quite make up our minds as to what each one of us wanted, so we opted to split each entree. I like to share and try everything;)

I mean, seriously. I kinda want to make it a ritual of going there every Wednesday, and calling it a “treat meal” cuz it ain’t no ” cheat meal” that’s for sure. It couldn’t get more, CLEAN, ORGANIC AND GLUTEN FREE.

Finally….NAILS. I got a proper mani/pedi and enjoyed every bit of it. I was getting GEL nails, but decided to give my lil nails a break. Plus, I can’t help but get a bit freaked by those uv lamps they make you stick your hands under. Can’t be good after a while. I would always forget to put sunscreen in my bag:(

I used to do the spa chairs, until one of my friends got fuckin’ mersa ( flesh eating bacteria in her toe) from the bowl not properly being disinfected. Hell no, I’ll stick to the disposable plastic tub inserts. Byeeee

My new favorite “before dinner snack”. All of you, I’m sure, know I DIE for cottage cheese. This concoction I believe I’ve shared on Instagram before. I could have it every single day, I no lie.
I feel like a superhero after consiming so many Superfoods.

Blend Retreat 2013 in Salt Lake City with some AMAZING beauties!

Hello my lovelies! Ok, so it’s not quite the morning after my return, but yesterday I got caught up reorganizing my life and settling back in!
What an AMAZING weekend that was! Most if you who follow my life/blog know that I’ve been planning to take part in this fun, fitness blogger retreat in Salt Lake City, Utah, but didn’t know quite what to expect. Well, I wasn’t the only one who was a bit nervous, let me tell you;) I guess, if you really think about it…”I’m about to spend 3 days with people I’ve never met, in fact share a bed with a chick I’ve never met..” Hmmmmmm, the thought was a little funny, but hell, you only live once! Lol.

I flew out of Long Beach ridiculous early on Friday morning, and while standing in line to check in, I ran into my blendee! She tapped me on the back and said, “Gina?” I turned around and said ” um no but,….Blend retreat???” Yay! My first meet with Bobbi McCormick from mynhershoes.com .She is a total sweetheart. Right away we hit it off! Thank goodness I found her, cuz I tend to never know what the hell is going on, ever. She had arranged to go straight to the GPP fitness gym with a few other girls to start the weekend with a killer workout. So, I hopped on the opportunity to hitch a ride with them, and try out this gym that I had heard so many great things about.

The gym was quite big, spacious, and super clean. It looked like a “crossfit” gym and typically, I get a little intimidated walking into these types of gyms. After my workout, I learned, GPP is a beast of its own. In a REALLY good way. This was our first workout of the weekend.

I have never done anything like this. I cant even describe it, that’s why I posted this video. I wanted you all to see, and experience what I did. I had a feeling that my idea of “Sore”, was gonna have a new meaning. What’s soooo great about this company, is that they realize that they are not everywhere, so they offer their workouts FREE online every single day! I know, I CANNOT WAIT to start incorporating this into my day to day life. With that said. In 35-40 minutes….my body was like jello.

This is what I LOVE about their philosophy:

GPP is about getting you healthy. Period.

We believe the only worthy reason to exercise and eat right is so that we can lead richer, fuller lives. Lives not limited by capacity and/or self-induced disease.

At GPP we realize that health isn’t about who the fittest person in the world is. It isn’t about who can lift the most weight, run the fastest, or obtain the highest work capacity imaginable. These things are silly, wasteful pursuits. They have no meaning. They serve no purpose.

Instead, get your workout in and go home. Go be a human. Do things that interest/edify you. Contribute to your family, your community and/or society.

Staying at the gym and pounding out more workouts, so that tomorrow you’ll have more capacity to perform even more working out, so that then, you will be able to do yet ANOTHER even more difficult workout, only serves the workout. It can also become a black hole of intention, focus and purpose. This black hole is filled with everything which is opposite of health.

At GPP we do NOT serve our workouts (read, “the Demotion of Exercise). For we realize it is our workout’s job to serve us. We would much rather put energy into activities which are less based on self and more focused on what is truly important.

We couldn’t check in until 3, so all the girlies decided it was time to get down on some grub. It was now 1 o’clock, and we all know how hungry we get after a killer workout. Hello STARVING! We were referred to a local favorite called Plates & Palates.

Everything was soooo fresh, and made right in front of you. Simple eating. Salads, Sandwiches, soups, fresh juices, and gluten free desserts. Amazing! I ordered the Greek chicken caeser w/o dressing. Didn’t need it. Soooo tasty! There were 8 of us blendees at lunch, so it was nice to get to know each other a bit before being bombarded with 50 new names and faces to memorize;) lol.

Finally, we arrived at our beautiful destination! It was time to check in to the Hyatt Escala Lodge, in Park city Utah. Not only is the resort absolutely stunning, and service impeccable…..you also are greeted every morning, day, and night by a ken doll look-a-like who couldn’t be a bigger sweetheart! Scott, was his name, but we re-named him “dreamboat”. He doesn’t know that yet, but I’m sure he knows he’s very good at his job. Lol.

A bit cloudy and drizzly out but who give a F*@k, do you see this place!? It was actually a nice change for me. If you’re from LA, in “almost summer”,then you appreciate nothing more than fresh, clean air. oh, and a cloud here n there is like a gift sent from above! Absolutely beautiful. Get used to that word, cuz that is exactly what I think of Utah, and I’ll be saying that a lot:)

When we checked in, we were greeted by the ladies who were responsible for this fantastic retreat. Lindsay W, Janetha, and Katie, also fellow fit bloggers. Super sweet Amigas! We were handed a badge with out full name, and blog name, since most everyone would know me as “fromfriestofit” anyway…. Along with a ridiculous Ogio bag filled with SWAG from all the sponsors! Who doesn’t love free shit!? It just keeps on gettin’ better.

Justin’s Nut butter, attune foods, and Green Mountain Coffee sponsored a lovely snack hour while all us blendees mingled and laughed about how we would forget each others names 2 seconds after meeting, but promised to remember by the end of the retreat.

After a couple hours, we all headed back to our rooms to shower up, unpack, and get ready for the opening ceremony dinner.

But not before an AWESOME cocktail hour hosted by Silk! (Also happens to be my favorite milk alternative;)
Hors d’oeuvres were…fresh veggies with loads of different dips, black bean & chipotle cakes, and gorgeous veggie spring rolls. Yummmmmm.

Since Silk sponsored the cocktail hour, naturally the drinks being offered were all made with a certain Silk product.
My favorite drink was the strawberry mint slushy! My god, it was the bomb! I gotta be careful around those types of drinks, they go down wayyyyy to smooth. Uh oh. Ok sooooo, I can’t lie. When I saw my favorite twins at the airport, I was like ahhhhhhhhhh. Oooommmmmggggggg. Purely Twins are my celeb fit blogger crush. If you don’t already follow the, get real, you’re missing out. They are super sweet girls who, not only once owned there own raw food bakery, they now have a wonderful e book, come up with killer workouts, and create recipes that are genius! They were an absolute pleasure:)

Dinner was delicious and clean of course. White fish, chicken, quinoa cakes, loads of salad, roasted root veggie soup… Eat it alllll up. Duh.

I skipped out on the crust of the tart…homegirl was freakin full at this point, oh and I was 3 glasses of red wine in….time for bed. GPP bootcamp at 7:00am. Nice.

Woke up Saturday morning feeling and looking like a CHAMP. NOT. Here we go. 7:00 am wake up call for the second workout of the weekend. When I say this was GNARLY…..pleeeeeaseee don’t underestimate me. This was insane!
BURPEES, PUSH UPS, SQUATS OH MYYYYYYYYY. Even if I felt like I was gonna die, I pushed through and felt amazing afterward. All I knew was, when I finished, I would run straight to the breakfast buffet. Like a cow.

Totally balanced breakfast. I threw in a chobani flavor that I hadn’t tried yet. Delish, but didn’t end up finishing it, too full. Story of my life. Lol.

The Laughing Cow also provided us with some ridiculous 1/3 fat cream cheese. I’m totally obsessed with these new flavors. Instead of spreading it on a bagel, I opted instead for eating it on my fruit. Freakin genius! Thank you, thank you for being a generous sponsor!

After breakfast, we all met back in the lobby to see if the group hike was still on. It had been a bit rainy, so we thought it would be way to muddy. But it stopped raining, and we said effffff it, we’re going. Pro Bar sponsored this hike and offered a few of their products for us to take in our packs.

And…..we were off. Chilly, yes. Unbearable, no. This place is absolutely stunning. Everywhere you look…stunning!!!!! More than half of us went on the hike, the others opted for a ZUMBA class. Obviously, since I teach ZUMBA, and do it 2x a week….I wanted the outdoors experience.

Ok, this is we’re things got a bit rough….and when some Amigas decided to turned around. Perhaps smart. Muddy enough…..ughhhhh. Not gonna lie, most girls had to throw away their shoes after it was over. Packing them to take back in their luggage would’ve been painful. My dumb ass of course wore my really nice trail racing Salomons, so I was like “bitch pleeeease, I’m about to sit in the bathroom and wash these bad boys out in the sink” I was so not about to throw them out. They did warn us to bring old piece of shit shoes, but oooops, I forgot:(

A 4 mile loop though this gorgeous terrain, made the fact that my shoes felt like they were gonna come off with each stop, completely worth it:) it was peaceful, and the air was clean & crisp.

On the way up, I snuck a bite of my fuel PROBAR. Yum. It was fruity and nutty. It kinda reminded me of a larabar. Quite similar actually. Really tasty. Gluten free, and all natural sugars.

Got to our midway point, and ate the rest of my bar. I just don’t get why I’m so hungry all the damn time. It’s crazy! It was time for a photo op. the more I ate it, the more I liked it:)

This retreat was so organized. I love it. We arrived back to snack hour put on by ONNIT. The lovely Orlando, and Whitney, Miss United States blessed us with a delicious protein shake made with their hemp force protein powder. We also tried some of their nut butters and protein bars. He’ll yessss! I was actually really impressed with their products, and overall information of the Company.They also were giving out samples of their supplements, in which, after researching, have been a huge hit in the fitness industry. Shroom Tech, and Alpha Brain. ONNIT stands for brain and body health, total human optimization. Pretty amazing company with a vast line up of athletes, and medical professionals. Check them out please and do you’re research. Especially if looking for a new outlook on fitness, foods, and supplements.

Once showered up and relaxed, it was time to meet up with the chickies and head into town for dinner. We met in the lobby lookin alllll sorts of’ cute, flirted with “Dreamboat” aka “ken doll”, and headed to sushi in Park City;)

Nope, didn’t eat the rice from the sushi. I was that annoying girl. But whatever, Maren was scraping the tempura off her “tempura” roll. F*%king hilarious. We were in the corner, so, luckily our waiter didn’t spot us being fussy and high maintenance. Ha.

Stuffed and feeling like a beached whale, naturally, I decided it was a good time to shop for clothes. Meg and I stopped in to this super cute boutique called Olive & Tweed.

Not only did they have super cute clothes, they also showcased some beautiful and unique jewelry from local designers. I picked up a silky tank, a bronzed arm band (I’m convinced they’re making a comeback) and some gorge rose gold drop earrings.

Home….pshhhhhh. Home meant party at the suite! Janetha’s sweet mom (Momma B) was makin’ her famous “Utah Scones” more like DONUTS! lord give me strength. This suite was huge, so most of the blendees were there. It was so nice. It was like a night out with everyone. It was packed with peeps, wine, and ” scones”. My kind of fun;)

I called it kind of an early night, seeing that the night before I had 1/2 a bottle of wine (who’s counting) so sat night, I wanted to make sure I got enough sleep for the 7:00 am wake up with GPP workout!
Before heading in, I picked up a tank from one of my fave fit chicks, Miranda from Living Proof Gear. Super sweet girl. She hooked it up with a tank for every single one of our swag bags. This chick is the real deal! Thanks boo. Pick yours up here.

Our workout again was, no exaggeration, hard, crazy, painful, but INCREDIBLE. as I finish of this post actually, I am about to go soak in Epsom salt. Yeah, that’s right, 2 days later. Say much?
Before heading to breakfast, which, duh, I was dying for….I had a chance to take some pics with 2 of the trainers from the GPP fitness team. These girls inspired me to keep going and push myself.

Sunday morning….we just finished our workout…I think it’s time for breakfast. Today’s breakfast brought to you by some really great peeps. One being Chobani. You would be surprised how many ways in which to utilize Greek yogurt. Greek yogurt is a great source of probiotics and protein. Here are my Chobani Amigas!

So sad this weekend was coming to an end:( after breakfast we all headed upstairs to pack up our suitecases. Wahhhhhhhhh. More exciting though, was the raffle they had set up for us before heading out on the road. Apparently, everybody wins! Yippeeeeee. Did I mention, I’m lucky;)?

Blue diamond was generous in donating boxes of their new almond floors, which are so BOMB BTW. They are promoting thir new favors out now, which are…blueberry, raspberry, strawberry, and toasted coconut. Haven’t tried all the favors yet but, knowing me…my fave will be strawberry;)

I was right! Everyone won something! I love this. It was so fun. I wanted soooo bad to win that nuttzo, I practically peed my pants when they announced my name!
Well, since everyone won something the first round…. They threw the names back in for the few raffle products they had left. Hallelujah….I won again! What did I tell you!? This time…. A case of Chobani yogurt delivered to me! Oooommmgggggg. I was in foodie heaven. Sorry, not sorry.

After the raffle, sadly, everyone had to start making their way to the airport:( Bobbi and I’s flight didn’t leave till 7:00 pm, so wwe had some time to do something before heading out. Lucky for me, Bobbi invited me to head up to sundae with she and a friend of hers who lived nearly. Ummm, yeahhhh. Cynthia (sweet as pie) picked us up for a beautiful trip trough salt lake into Sundance.
Destination: the Robert Redford Sundance Resort. It’s beauty: remarkable.

The views were more than impressive. During this time, it’s packed with mountain bikers using the lifts to take their bikes all the way to the top and ride their crazy asses down. A creek running through the front of the restaurant. I couldn’t help but stop and marvel. Listen, I never see this in LA, leave me alone;)

Hello babies!!! Hope everyone had a RAD Mother’s Day weekend! First day back in the salon today, and I’m feeling refreshed and ready for a super busy week!

Tuesday: A.M 40 min cardio…ZUMBA tonight…not teaching, but taking.

Wednesday: ZUMBA 10:30 am-11:30am.
Lunch date with an Amiga, then friend’s birthday celebrations.
Dinner meeting with a client.

Thursday: Salon all day.
Evening: Blogger Beauty event at Roman Salon.
8:00 pm ZUMBA teach class

Friday:
Fly to Salt Lake City Utah at 7:00 AM for the Blend Retreat. not back till Sunday night. I am soooooo EXCITED about this weekend away with my fellow FIT bloggers! I can’t wait to meet all of these amazing chickies that I’ve gotten to know through all sorts of social media, finally, in person;) you know who ya are!;) This weekend, is not only filled with fun outdoor activities, but also a great source for networking, ideas, and getting to know each other better. I will be rooming with a few girls , authors of some awesome blogs!

Maybe one of my favorite days of the week… I started off having a wonderful mbreakfast outdoors at Aroma tea and coffee, located in quaint Tujunga village, Studio City. To my honestly, there is nothing better than having a really great meal while sitting outside. I take people watching verrrrrrry seriously.

The menu is VAST, I opted for the lighter fare. I wanted everything that damn place had to offer, an AMAZING clean menu. I went for a powerhouse breakfast that consisted of…tender charbroiled chicken breast, fluffy egg whites, with a side of 9 grain toast, and freaks fruit. It was heaven on a platttttttta!

Enjoyed an iced coffee with unsweetened almond milk, and a bit of stevia. Most restaurants only have Splenda as an alternative, but yes, I DO carry around a lil dropper bottle of stevia with me…in my purse…everywhere that I go. Don’t judge. I ate that breakfast like it was my J.O.B. I put in werrrrk. Yum-MY!
Oh, and please do excuse my tired eyes, apparently didn’t realized I was gonna be in the “food” shot. Lol.

Ended up at Malibu State Park for a late morning hike. It was a stunning view, although, I didn’t expect it to be that dry out. I still think we went the wrong way. Someone told me I should have seen a creek and swim hole…yeah, never once saw a drop of water, and Diego’s paws were getting RAW from the heat. Last thing on earth you want happening…. A bulldog overheating. Probably a bad idea seeing that it was 105 degrees out. Dumbass.com.

Poor baby was seeking shelter under trees for signs of shade. After 15 min we turned around, and said ” I think it’s time for the beach.”

Headed north on the PCH, looking for a signs of “dog beach”, which technically…there are none. S annoying. We ended up at Leo Carrillo. Apparently, the further north you travel up the coast, the more lenient on dogs being allowed onto the sand. Who knew….
I wish willy could’ve been there, but he stayed at my parents house, cuz I knew I was leaving outta town, and wouldn’t have been able to drop him off any other day. ( they don’t live around the corner, you see..) SADFACE. He would have loved it. I OWE him:)
It was a bit windy, but sunny and perfect. The waves, super cute in size. Actually we were able to catch some kids RIPPING! love watching surfers.

Tonight’s class was on FIRE! 35 of us dancing our booties off, and I swear to you, I’ve NEVER sweat that much in my life. Literally, my soaked ponytail was whipping sweat onto everyone behind me. Ugh, I’m sorry girls. Good thing, was we were all that way. Lol.

Happy Thursday fit friends!! Not much to report today, but I honestly feel crazy if I don’t catch y’all up! My FF2F 50 days clean eats/no cheats is going really well! Well into it now, and I feel fantastic… Ok, I must tell you though…I have had some wine, oh and maybe a margarita….buuuuuuuut I’ve so so balanced lately, don’t I don’t consider that a cheat. Whatever, judgers. 😉

Anyway…my typical breakfast…. Egg whites are ALWAYS up in there. This was yesterday….

Egg white scramble with sautéed kale, red peppers, no salt organic turkey slices, green onion, and a bit of Homeboy Salsa. I always buy homeboy products because I LOVE what the company stands for, and of course, super duper tasty. This non-profit organization, Homeboy Industries, provides rehabilitation services and job training to ex-gang members and announced the launch of its first consumer products, salsa and tortilla strips, for sale through mass-distribution at over 256 Ralphs locations across Southern California. Pretty incredible. Please take a moment to watch this video to understand truly who incredible they are!

My morning read. Women’s Health Magazine. Pretty much, the best FIT read out in my opinion. I especially HAD to have it when I read the front cover…”BEST ABS EVER!” as I stood in line at Target the other day. WTF, are you kiddind, YES PUUUULEAAAZZZEEEEEE!!!!!!Hardest part of my body to define, by far. ugh.

I taught Zumba yesterday morning at 10:30, so I made sure to eat that bomb ass breakfast early enough that it wouldn’t come back up as I danced my ass off.

REMINDER: If you do Zumba, PLEASE allow at least 1 hr of full digestion before coming to class……lol

What I generally do, is bring a protein packed snack for after class. Not gonna lie, I could eat a COW after class. You would feel the same if you took my HIGH-OCTANE class. 700 calories in 1 hour. Yeah….I thought so….

My AFTER CLASS MEAL:

The rest of Wednesday was mellow, did a couple private clients (haircuts, that is) and came home to make this gorgeous multi colored salad. Simple, but full of protein. I try to take in around 25 grams of protein each meal.

LUNCH:

Kale

2 hard boiled eggs (mostly whites)

2 slices no salt turkey slices

Cherry tomatoes

Grapes

Sesame seeds

Olive oil/lemon/apple cider vinegar

Salt & pepper.

FINALLY made it to the dog park on Mulholland. Been wanting to take Willy there, but never could find the damn place. Anyway, as expected, Willy was not interested in playing with any dogs and was stuck to me like white on rice. No joke.

Tonight’s ZUMBA class was on fire!!! They killed it! The verdict on the polar heart rate monitor: A whopping 664 calories! Sweat like a beast, and worth every second of it!
After class, to participate in my friend’s 30 day squat challenge, we did 250 squats. NO LIE! I’m dying…. Although never tired enough to not pose for some dance studio SELFIES! Lol.

Hello my lovelies! In today’s “Thursday’s Things” I’ve got a post that is completely unrelated to health and fitness, but I found it to be so interesting that I thought I would share:)
On my mellow Sunday, I decided to visit the MOCA In downtown LA for the latest exhibition.

Now showing at the Geffen, is Urs Fischer’s latest work. Fischer’s installations and sculptures have been exhibited worldwide, and his style is nothing short of unique, imaginative, superficial and shocking.

In this particular exhibition, Urs invited 1500 SoCal locals to fill the MOCA galleries with their own creative sculptures made of clay. An absolute stunning example of a project that “with 308 tons of clay, turned process into product, and an artist into collaborator.”

I walked in, not knowing what to expect. My eyes were immediately overwhelmed with gray. I didn’t know where to look, where to start. All I knew, is I wanted to see it ALL. It was a dark, humorous, fantasy land that seemed like we were in a crackhead’s effed up thought process. Strange, and amazing all at once!

The most amazing thought about this instillation was that everything could be destroyed so easily, that the sculptures themselves, once picked up, could crumble.

Happy ( late) Monday Babes!!!

I don’t understand why people hate Mondays, and why they say ” I’ve got a case of the Mondays” ew. What’s that about. Ok, maybe it’s cuz I’ve got it off, but still. Mondays are statistically shown to be the best day to better yourself, your life, your decision making, etc, all of it. Have you never said ” I’m soooo starting on Monday, I swear!!” Lol, well, in my case, I started last Monday:) of course, I start something new everymonday. For example, today, I started adding super greens to my sports drinks. I’m just full of “new” whatever.

As you all know, Mondays are typically the meal prep day for me. So this post will prrrrrrety much be focused on food. Ok with y’all? I thought so;)

Since starting the 50 CLEAN EATS/ NO CHEATS I have felt nothing short of AMZING! If you haven’t already started following me on instagram, do soooooo! Listen, I’m not forcing you to do 50 days, shit, do 30 days, whatever. The point is to Challenge yourself to make the effort and change your body. Cheating on your clean plan can add up. This challenge is to make ourselves aware of what we are consuming and to to check in with our bodies and see how they are changing because of it. You can start this whenever you want. Ok, really…..GET. ON.IT. You’re worth it, stop waiting around. I’ve been posting all of of my fitfriends as well as my recipes and clean eats to inspire all of us. So far, 7 days down, 43 to go. Jump on whenever you’re ready;)

Anyway, for myself, I’ve decided to go 60% raw. I absolutely love a lot of the principles of keeping a raw diet, but honestly, with the amount of working out I do, I need my protein, and hell, I like hot food. Soooooo, 60% will do:) so here it goes, I busted out my huge ass commercial dehydrator, and started making snacks for the week. I love this thing. Think of it as a slow cooker x10. The idea is to dehydrate foods at such a temperature that will NOT remove the essential enzymes, and nutrients. This temperature is anything 115 degrees or lower, so clearly, at this temp, shit takes a lonnnnng time to “cook” planning ahead is key.

I was recently hangin with a friend who is about 85% raw, and he hooked it up with this fab recipe.
It’s the bomb.

Raw Zucchini Fries
 
Prep time

Total time

 

Keep all those amazing nutrients and enzymes by using a dehydrator at a low temperature instead of using an oven! These zucchini fries are a fantastic snack whether you are “raw” or not!
Author:
Recipe type: RAW
Serves: 2-3

Ingredients
  • 2 large zucchinis or 3 medium
  • 2-3 tbsp olive oil, or any raw pressed oil
  • 1 tsp crushed garlic
  • 1 tsp sea salt
  • ¼ tsp cayenne pepper
  • 3 tbsp nutritional yeast
  • 3 tbs flax meal
  • 1 tbsp apple cider vinegar

Instructions
  1. st, cut zucchini in ½, then cut your strips. Remember: once dehydrated they do shrink up quite a bit, so don’t make them shoe string fries:) unless you want to of course, then go ahead with your bad self!:)
  2. Place in a bowl, add all wet ingredients and toss well.
  3. Add dry ingredients and toss well.
  4. Space them out evenly on the dehydrator trays.
  5. Dehydrate first at 140 degrees for 30 min, then reduce to 110 degrees for 8-10 hours. leave in longer if seeking crispier, but make sure to check.

Serving size: 3 Calories: 165 Fat: 12 Carbohydrates: 12 Sugar: 5 Fiber: 5 Protein: 7

And for the HOT food:
Meal prep Mondays consists mostly of proteins & veggies.
This next part: SOOOO EASY. No recipe needed.

-A bag of frozen skinny green beans from Trader Joes. I believe they’re called ” haricots verts” I mean, really…. They’re green beans. Lol

-Thinly sliced mushrooms

– Bean sprouts ( laaaaavvvvvv these)

-Coconut oil

-Salt & pepper

-crushed garlic ( like it’s your J.O.B) I like a lot;)

-liquid aminos.

-cayenne pepper( fo that spice!)

-optional: sprinkle sesame seeds

This will last me all week as a side to my protein. I even add this mix to my morning egg whites. Get into it. Super healthy and yummy.com.

I’m over red meat right now…. All I crave I swear, is SALMON! Super high in omegas and protein, it’s the ultimate when trying to keep a lean machine figure. Yes, I’m trying to make myself a lean machine. Salmon is considered a superfood. I baked 3 large fillets of wild Alaskan salmon with a very simple marinade,

-Lemon.

-Salt & pepper

-Crushed garlic

-A dash of blood orange infused olive oil

-Orange zest

Salmon only really needs to be marinated for 30 or less. It eats up flavor quick. Please don’t try to marinate for longer, unless you’re ready to eat ceviche. C’mon babes.
I threw in some broccoli…why not. It add color:)

Oven at 350 degrees for 20 minutes and you’re done! Viola!

Raw Chocolate Avocado Pudding

An amazing SUPER pudding without all the processed crap! A raw alternative. its delicious and gives you wings!:)
Author:
Recipe type: Raw
Serves: 3 servings

Ingredients
  • 2 ripe avocados
  • ⅓ cup RAW organic cacao powder
  • ¼ cup RAW honey (or if worried about sugar/carbs use sweetener of your choice. I love natures hollow for sugar free option)
  • ½ cup unsweetened almond milk. I made my own raw nut milk, but you can use organic flax or almond milk.
  • 1½ tsp raw vanilla bean paste. or if not worried about being raw, extract is fine.

Instructions
  1. Mix all ingredients, and blend in a medium bowl with food processor, vitamix or hand mixer.
  2. Serve chilled.

NEW FAVORITE PRODUCT FINDS!

Every week that I do my shopping, I make it a point to try something new and amazing that I MUST share with you. I am a little bit Whole Foods obsessed. These are my reviews and I have not been paid to do so. I’m bringing you the scoop on what I think is worth the cost.
Wile in Ojai last weekend, we stopped at this super cute local market that carried all sorts of super healthy, small business products.
When I saw this cereal, I nearly fell to the ground. Ooooommmmmgggggg PROTEIN CEREAL! Hell yes, how many can I buy before looking like a freak.
I’ve been having a single serving a day. It’s so yummy. Tastes just like apple cinnamon Cheerios. I know, bomb!
I actually love to eat my daily serving before a ZUMBA class. It’s not heavy on the tummy and is the perfect balance of protein, carbs, fiber, and fats. A cup a day, keeps the doc away;)

Have you ever used this? I’ve found it’s really fantastic as a salt substitute in Asian style cooking. I’m loving this stuff. Cold mountain miso is all made from organic whole soybeans and non-gmo. Because of its fermented nature, it’s very healthy for our systems.
There are loads of uses for miso. Think salad dressings, marinades ( especially on salmon), soups, and many more.

I’ve been mixing my BCAA with my raw super greens powder for a killer athlete drink. I drink this during and post workout. Btw…. I just burned 670 calories dancing my ass off. Byeeeeeee

HAPPY TUESDAY TO ALL MY BEAUTIFUL FRIENDS! I am feeling super inspired today! I feel like a new person;) I spent the weekend in Ojai, CA with mom, and had such a great time! Although fighting a terrible cold, I made sure to take plenty of supplements and suck it up. Getting a quick, relaxing weekend away, was just what the doc ordered. I got some serious sun. I look like a dirty face, no lie, we hiked, got massages, and enjoyed yummy healthy food:) I feel a bit cleansed really. There were some things that weren’t quite sitting well with my heart, that now feel settled.
I’m looking at things in a new light, and realized that it’s time to MAN UP. Lol. Life is too short.

As most of you fabulous fit folks already know…. Monday marked the FIRST day of my 50 day clean eats/no cheats challenge, and so far, I am AMAZED at how many friends are participating! Sometimes, we all need a lil kick start! Right? Duh. Soooooooo, this is why I’ve started this. I am an EXTREMIST. Always have been, it’s my nature. So, when I fall off, I need someone to sit me down and say, “alright, stop fucking around, and stop being a cheater”. This is precisely why I started this. I LOVE a good challenge. I’m competitive with myself, so this will drive me to stay on track, and all my lovely friends are inspiring me to continue on the journey!

Ok, so originally, I was set to do 100 days.. Buttttttttt, I realized my best friends wedding was just under that, so that obviously wasn’t going to work, now was it!? Lol
50 days sounded perfect. Not too crazy. Although, most of my meals tend to be clean, I am the queen of binging on a cheat day. Not cute. So NO MORE CHEATS FOR ME! We all know “cheat meal” is a trigger word.

This morning I woke up like a champ! Ready to get my sweat on! I was gonna hit the gym but instead I opened my emails and saw that I got my latest post from MYFITSTATION, a blogger I religiously follow, in which she shared some amazing workouts that I NEEDED to try. So, I got my ass in front of that mirror, got out my kettlebell, my gym-boss trainer and tried each lane of these power house workouts. AMAZING!

I am totally loving these workouts. Try each one and see which works best for you. Switch em’ up, repeat them, whatever. The best past, is that you can do these pretty much anywhere you have a little room. 😉 In my case, in my bedroom;)
I hope they don’t mind that I’m sharing these on my blog, but they were just too good to not post.
I set my gym-boss ( best lil FIT tool out there) to 30 sec work + 10 sec rest. For 10 sets. Then, I would restart the boss back at set one when I started the following workout.

I am so craving this RIGHT NOW! I am a HUGE lover of banana bread, but typical banana bread is full of carbs and sugar, which is not the business for my FROM FRIES TO FIT 50 CLEAN EAT/ NO CHEAT CHALLENGE(follow my insta), sooooo, I’ve come up with my own clean ass, delicious version!

Please do not expect some dry ass “healthy tasting” bread. This is seriously moist and perfect. You will wanna roll your eyes in utter satisfaction with every bite. I’ve finally perfected this. Ahhhhh, I’m so stoked! Even more excited to share with all of you FIT foodies;)

Gluten Free SUPER Banana Bread
 
Prep time

Total time

 

A delicious GUILT FREE banana bread that is low carb, gluten free, and full of healthy OMEGAS and Protein!
Ingredients
  • 1 cup ripe mashed bananas
  • ½ cup organic unsweetened applesauce (could also use 0% greek yogurt)
  • 2 tbsp coconut oil (melted)
  • 2 lrg eggs
  • 1 egg white
  • ¼ cup erythritol or xylitol
  • 1 cup flax meal (could also do ½ of this as oat flour to cut fats) although flax is a great fat for omegas!
  • 3 tbsp coconut flour
  • 2 tbsp almond flour
  • 1½ tsp baking soda
  • ¾ tsp salt

Instructions
  1. Pre heat oven to 350 degrees.
  2. Grease a loaf pan and set aside.
  3. In one bowl, mix all your wet ingredients. Mashed bananas, eggs, egg whites, applesauce (or 0% greek yogurt), coconut oil. mash and mix thoroughly.
  4. In a separate bowl, mix dry ingredients. Flax, coconut flour, almond flour, baking soda, and salt. Mix well.
  5. Combine bowls and mix together.
  6. Add batter to the pan, and bake for 35 mins or until the toothpick comes out clean.

Notes
Keep in mind… To calculate to proper amount of net carbs: Subtract fiber from carbs to calculate. In this case, the NET carbs are 8. (14 carbs minus 6 fiber.) Carbs that come from fiber do not affect blood sugar/insulin/glucose levels. Enjoy Fit Friends!!!!

From sweet to savory…..thought I’d balance us out a bit. The following are some super healthy meal ideas that have become staples in my hizzle.
First: RAW NORI WRAPS
These are super fun. You can stuff with any of your favorite veggies!
The ones I made last night for my meal prep weren’t fully raw( a touch vegan) but still full of amazing nutrition.

In this wrap:

avocado

alfalfa sprouts

kale

almond vegan cheese

hummus

parma nutritional yeast

braggs liquid aminos

hot sauce

These are fantastic for packed lunches. Another option, if you’re not a fan or nori, is soy paper or swiss chard leaves make for great wraps. Really low in calories and nothing but clean and nutritious.

Here’s my dinner GO TO!

Miracle noodles!

The healthiest pasta you will EVER consume.

Shirataki noodles are the ultimate substitute. They fill up your tummy as if you were actually stuffing your face with an actual full plate of REAL pasta:) OK, maybe not exactly like it, but hell, for 20 calories instead of 300, I’LL TAKE iT! They take on whatever flavor you add to them, and they are full of fiber.

Once out of the bag, you may notice a strange smell. Not to worry, stick in a colander, rinse thoroughly under warm running water and we’re ready to roll. Some folks like to flash boil them, that’s cool too, but, AIN’T NOBODY GOT TIME 4 DAT.

In a hot skillet, add a tbsp of EVOO, add noodles, season with garlic & salt. Maybe even a bit of basil or oregano. We are not trying to cook them here…they are already cooked, we are simply adding flavor and heating them up with the seasonings.

In a separate small saucepan, add your tomato sauce. I love this brand.

Transfer the noodles to a bowl, pour your marinara on top, sprinkle with fresh parmesan and VIOLA!!

OH HEY BODYBUILDER!

Tired of all those protein bars out there, full of sugar, additives, and ingredients you can’t pronounce?? I AM!!!

The only protein bars that I’ve found so far that I absolutely LAAAAV are QUEST BARS, but honestly, they can get quite expensive sooooooooo….this is the best alternative I’ve found, plus I’m obsessed with pumpkin. All year round.
I’ve made sure to attach a printout option as well as the nutritional facts.

Only 77 calories each, you will NOT feel a bit of guilt. I originally found this recipe on monimeals.combut altered it a bit to satisfy my diet needs.

Healthy Protein Pumpkin Bars
 
I cut these in rectangles and wrap each one in foil. They are a perfect on the go protein snack.
Ingredients
  • 4 egg whites
  • ¾ cup organic (canned) pumpkin
  • 1 tsp vanilla extract
  • 2 tbsp sugar free honey (Natures Hollow)
  • ¼ cup oat flour (I just ground up my oats in a coffee grinder, but could also use a food processor or bullet)
  • 2 scoops vanilla protein powder. I use About Time Whey
  • ½ tsp pumpkin pie spice
  • ½ tsp cinnamon (or less if you feel so)
  • ½ tsp baking powder
  • Optional: crushed walnuts or pecans sprinkled over the top before placing in oven.

Instructions
  1. Preheat ove to 350 F.
  2. In one bowl, mix the egg whites, pumpkin, vanilla extract, and maple syrup.
  3. In another small bowl whisk the oat flour, protein powder, and all the spices along with the baking powder.
  4. Add this to the wet ingredients and make sure to mix very well.
  5. Pour mixture into a baking loaf pan or a square pan coated with cooking spray.
  6. Add the nuts if you want over the top.
  7. Bake about 18-20 min or until a tooth comes out clean. Enjoy!

My diet has been yo-yo-ing for a bit now, and realize that is the reason why my body isn’t changing much. Those of you who know me, know I’m quite extreme when it comes to it. I’m trying not to be so obsessive and stress so much about it, so in light of my obsessive/binger nature, I’ve decided to go 50 DAYS STRONG without cheating or binging to try and alter how I view food.
It’s funny, I was gonna do 100 days, but then realized that my best friends wedding was during that time and thought…hmmm, ” ain’t nobody got time for dat” and frankly, 100 days would be really Elgin hard for me, so lets start here…
50 days. I am again, breaking up with food. Kinda feels like I’m going sober.

I find that if I write down the workout plan for the week, I’m most likely going to stick to it.

Hi babes! It’s been a super packed week! I feel like I’ve been nonstop! Today…I’ve got a really special recipe for you. Well, a couple of recipes on todays post,but this first one, I shit you not, will blow your mind.
Get ready for the BEST tasting, and the most HEALTHIEST chocolate muffin that you will devour ever in your FIT life!
With 12 grams of protein and only 9 net carbs, you have found your new “BREAKFAST BESTIE”
You’ll never have to break up with chocolate again if you keep these guilt free muffins around;)

I found this recipe originally from fellow healthy blogger fitandhealthywithdebbie.blogspot.com but tweaked a few things to my own liking. Check her version too…you may end up liking it better. I’ve also recalculated the nutrition facts to my version 🙂
If you’ve ever played around with baking with protein powders or even most flour alternatives, then you know the dilemma….dry or rubbery. Ugh, it’s happened to all of us. Usually, the reason being, not enough moisture/liquid in recipe, over cooking, and not mixing well enough. Soooo touchy these healthy recipes! Geez:/.

With these perfect little morsels…I think I had an “Aha- moment”. They were DELIGHTFUL, cakey, soft, moist, amazing flavor…ALL OF THE ABOVE!

WORLD’S HEALTHIEST CHOCOLATE MUFFIN!
 
sugar free, low carb, gluten free…I mean you just can’t beat that. It tastes absolutely SINFUl, but I promise… GUILT FREE.
Author:
Recipe type: Breakfast
Cuisine: American
Serves: 6

Ingredients
  • 1 cup oats made into a flour. ( i just threw mine in the food processor)
  • 4 tbsp Flaxseed meal (ground Flax)
  • 2 tbsp Coconut flour
  • ¾ cup unsweetened cacao powder
  • 1 scoop or packet About time “chocolate” protein powder
  • ½ tsp Cream of Tartar
  • 1 tsp baking powder
  • 1 tsp baking soda
  • ¼ tsp sea salt
  • 3 egg whites
  • ½ cup organic unsweetened applesauce
  • 1 tsp pure vanilla extract
  • ½ cup 0% greek yogurt OR Fromage Blanc ( I love Vermont Creamery, less sugar and carbs than greek yogurt and tastes the same…Whole Foods)
  • 3 tbsp sugar free honey (natures hollow)
  • dark chocolate chips or carob chips. The darker, the better:)

Instructions
  1. Grease a 6 muffin tin. I used coconut oil spray.
  2. Pre-heat the oven to 350 degrees.
  3. In a large bowl, thoroughly combine all dry ingredients, once mixed well, add all wet ingredients one at a time, while continuing to stir and mix.
  4. A hand mixer would also work great at this point. OR, honestly, you could just blend everything except the choco chips in a vitamix or food processor.
  5. Using a spoon, evenly dollop batter into muffin cups
  6. Sprinkle chocolate chips over each one
  7. Place in oven and bake for about 12-14 mins. I will always check mine a bit early cuz I go crazy if I burn my muffins!

I’ve always preferred a European style breakfast…you know, coffee & a pastry. Although sometimes opting for a healthy egg white omelette or turkey sausage out of “this is what I should be eating, Once I realized that I could sneak in all the nutrients and protein I needed into a muffin, without devouring a 500 cal pastry from coffee bean, my mornings turned into my favorite meals of the day!
So this is how I started off my WHAT I ATE WEDNESDAY.

I’m still not used to being off on Wednesdays from the salon, so I wake up frantic, then realize I get to sleep in, then I start baking, duh… Oh and then, I start dancing in my living room;) a bit of ZUMBA at 8:00 a.m is always a good time!
I taught ZUMBA at 10:30, and my Amigas rocked the house!
They work me out as much as I work them out, so I make sure to replenish my body and feed my muscles right after class with protein shakes.
I’ve found my new Fave!
Here’s your next recipe…. A bit of homework for y’all….
YOU HAVE TO TRY THIS ASAP!

There are a few optional items in this recipe, in which you can omit…but I recommend them, so up to you;) one of them being bee pollen… BEE POLLEN is recommended by herbalists to enhance athletic performance, relieve allergies, and help with stomach issues.
Another optional ingredient…IRISH MOSS. Which is used as a natural thickener and comes with loads of nutritional benefits that you can read up on here.

One ingredient you clearly do not want to skip out on, is the PROTEIN. In this case, I used about time vanilla whey. 25 grams of protein per scoop, and all natural!

Fresh fruit is always a plus. This was a treat for me! A full mango (well, a small one) it was ripe, and soooo ready! Also in this recipe, 1/4 banana…for that yummy flavor and smooth texture that gives this recipe a “shake” vibe.

I also like to add a spoonful of flax meal. Flax offers an enormous amount of healthy omega fatty acids. I make sure to keep my flax meal in the fridge or freezer to prevent spoilage.
Omega fatty acids are essential in a healthy diet.
Studies show that consuming fresh flax meal, or flax oil can help to reduce the chance of heart disease, lowers bad cholesterol and blood pressure. When you get the chance….add it to everything you can think of;) lol.

Ban-mango Vanilla Protein shake
 
Post workout protein favorite!

Recipe type: Brunch

Ingredients
  • 1 mango cut up
  • ¼ frozen banana
  • 1 packet or scoop Vanilla About Time Whey Protein
  • 1 tsp bee pollen (optional)
  • 1½ tbsp Irish moss (soaked and blended) optional.
  • ½ cup Unsweetened Vanilla SILK 30 cal almond milk
  • ½ cup water
  • 3-4 ice cubes
  • ½ tsp vanilla (I used vanilla bean powder but you could use regular ol’ extract)
  • 1 tbsp flax meal
  • 1 tbsp EITHER low fat cottage cheese, 0% greek yogurt, OR fromage blanc
  • OPTIONAL- sprinkle with chia seeds and unsweetened shredded coconut

Instructions
  1. easy peazy… throw it all in a blender or vitamix and call it a day.

Calories: 215 Fat: 4 Carbohydrates: 17 Sugar: 13 Fiber: 5 Protein: 29

Lunch was super clean and completely predictable… Roasted chicken breast, brocollini, and roasted peppers with hard boiled egg whites. Boring, but nutritious and quite yummy. I managed NOT to dry out the breast. Story of my life.

The most exciting part of “WHAT I ATE WEDNESDAY……..
This ridiculous seed and nut butter! NUTTZO.

I have been hearing and reading about this amazing nut butter for a long time, so I made the plunge. $12.99 well freakin spent. So worth it. The taste is UNBELIEVABLE! I was so anxious to try it, that I popped open the jar right as I got in the car at the Whole Foods parking lot. Don’t judge me….. NUTTZO if you’re reading this…SEND ME MOREEEEE!!

So as you now know, I am the newest member of SCFITNESS and feel totally honored and happy:) this weekend was our first photoshoot for the new website. Here are just a couple shots of my awkward self. Prob not the one that’s gonna go up, but just sharing:) I can’t wait till these damn bangs grow out. They were in my face the whole freakin day. Ugh.

In other ZUMBA news….. A super exciting time for not only us as intructors but also for students and fellow ZUMBA lovers. ZUMBA Fitness now has a fantastic app for iPhone where you can find your favorite class or instructor and CHECK IN! let everyone know that you are up, and dancing, and maybe inspire others to do the same! Not only can you check in, but NOW, ZUMBA home office will will make a donation to a campaign aimed towards ending world hunger every time you check in!

The idea is called ” THE GREAT CALORIE DRIVE”
For every calorie burned in class, ZUMBA will donate money so that others can eat! Pretty amazing, and so excited that I get to be a part of this. So, remember to always check in, and log in your calories burned. I always wear my ft60 polar heart rate monitor, and never burn less than 600 calories!

The day of the shoot, I had taken J. FIT’s bodysculpting class, which left my legs and body feeling wobbly, she kills me,so I was stoked to get home and spend some much needed mommy time with Wilbur! Aww, my boooooooo;)
At the end of the day, after Running around all day…this is what I really wanted. Home sweet home!

ZUMBA CERTIFIED Y’ALL!

I have an announcement y’all!!!
Since we’ve last spoke….

I am now officially ZUMBA CERTIFIED!!!
After nine hours of dancing my lil heart out in San Diego….. I got my certification! Woooooohooooooo;)

9 hrs in the same freakin room. Thank god I brought lunch and snacks. The whole experience was super fun! Yes it was long, but actually enjoyable. Mostly dance, and some PowerPoint.

I’m sure most of you are familiar with ZUMBA, and the bright colors all the ZUMBA folk wear, right?
Well, I never thought I would be “that” instructor… ( I’m usually in black or grey) but, I gotta tell ya, I lost my ZUMBA shit in there! Lol. I came home with purple and teal pants, fluorescent sports bras, bright orange headband, weird “party time”bracelets… I got home and literally started laughing out loud at myself. I’m kindaaaaa feelin’ it though. 😉

Ok, so some of you may have already seen this pic if you follow me on instagram, but I just had to share…. I am sooooo damn sick of turkey it’s ridiculous. The other day I roasted a 12 lb turkey at 5:00 am. ( no bigs, just what I do) as part of my week meal prep. Well, after 30 minutes of carving the freakin’ thing, I thought to myself.. ” hmmmm, maybe 12 lbs was a bit big” NOOOOOOOO, really???? I have been eating turkey for breakfast, lunch, and dinner for like 4 days, and I wanna scream. It’s really delicious….but seriously c’mon.

Ooh, and I just taught my first class!!! But before heading out, I made a protein shake for after class, obviously knowing I would be starved afterwards. ( Usually what happens to me after working out intense for an hour…bottomless pit syndrome)

1 packet About Time strawberry whey protein
1 handful Swiss chard
1 tbsp fromage blanc
1/2 tsp pure vanilla powder
Organic blueberries
Organic raspberries

Ahhhhhh! Hi lovelies! I’ve got to catch you up! So, this week officially marks my first week with Wednesdays off from the salon;) wooooohoooooo. Also, this Wednesday is my first ZUMBA class! Oooommmgggggg. They don’t know what’s comin’…I’m about to go ZUMBA crazy on their asses. Also what I think I may start doing, is posting a new dance once every couple of weeks on the blog, that way students can refer to the post to learn the dance before coming to class. What do you think? ZUMBA instructors out there…thoughts?

Anyway….notice something new on the site? My lovely friends at optimal fusion helped create a new freakin AWESOME LOGO! Super cute:) apparently the ” Fries” were actually McDonalds fries spelled out ” fries” on a desk, and photographed. GENIUS. Anddddd….we all know that fries were my binge food of choice. Ugh.

Easter was great..mellow. Just what I wanted. Consisted lots of dancing in the garage in front of a mirror. Just practicing my ZUMBA moves, NO BIGS.
This morning’s breakfast was super duper clean.
I had made a big batch of roasted veggies, and have been pretty much adding a handful to every meal:)

Monday morning Zumba was RIDICULOUS! It was a fabulous surprise when the LULULEMON girls showed up from the Studio City location. They did awesome, and were SUPER stoked on SC fitness. Looking forward to having them in take class more often! Really sweet girls!

This week, I’m planning on either locking myself in my house practicing my Q’s and dances, or in the studio. I know really predictable:)

After zumba, I have the pleasure of visiting the dentist…sooooo fun! Luckily, no cavities:)

Lunch was again, roasted leftover veggies, along with some red lentils (Trader Joe’s) in low sodium broth, cayenne, turmeric, yellow curry powder, cumin, paprika, garlic, oregano, salt and pepper. Cooked on low till lentils are soft and soaked.

Topped it with, of course, Fromage Blanc & siracha

The afternoon seemed quite hectic. Mondays usually go by way to fast, my list of errands keeps getting bigger and busier. I had planned to double up classes this later this evening, but my body said. Ummm, NO.” My tummy was killing me ;( womp wooooomp. I sound like such a whiner, gross. I ended up taking it easy at home, catching up on some reading. My sweet client sent me this article knowing that I’m a huge fan of juicing and the vitamix. APPARENTLY, it’s all the craze:)

I no longer buy trail mix that has been pre packaged. Usually, it contains too much added sugar or oils, and usually not raw. Now, I get all of my favorite raw nuts, seeds, unsweetened coconut, superfood berries ( goji, mulberries) and cacao nibs, and mix them all up in a mason jar. Perfect snack without additives. A handful ( palm of hand ) equals to a serving.

No, I did NOT eat all three quest bars, but my girlfriend Haley surprised me with 3 bars of her new favorite flavor for me to try, and I just had to share my heavenly experience with MISS. Chocolate brownie. Holy sweet party in your mouth!!!

Didn’t spend too much time in the kitchen today, but I did manage to bust out a batch of my favorite Blueberry Protein Muffins. They are super easy and take no time! You know me, meal prep Monday;)

Tonight was all about me. I wasn’t feeling my best. I laid down and actually took a nap, which absolutely never pans out for me. This time I was out for at least 2 hrs. Sooooo nice. Never made it to my back to back classes, but I did get in for a 9 p.m hour long massage. 😉 Don’t mind my MC Hammer Thailand pants.

There’s an amazing place around the corner from my house, called Foot Inspiration, that I can’t get enough of. I’m trying to get 1 massage a week, but paying $75 for an hour/ once a wk was outta the question, so this place is the bomb. It’s considered a reflexology massage. They really do hit every pressure point all over your body. I strip down to a sports bra, and booty shorts, since it is more of an ” out in the open” kinda place. I must say, I slept like a cozy lil baby!

Better late that never, eh!? Hope everyone enjoyed a beautiful, sunny in LA, weekend!;) I certainly did. If you don’t know me by now, my “after weekend” posts usually include a sunday fam BBQ day, and what kind of person would I be, of I didn’t post every one of those special Sunday’s pics. To most of you, they look the same as every past Sunday’s, but to me, it’s about catching up, enjoying my folks, their backyard, the dogs running around like psychos, mom and I spending too much money bargain shopping, trying to convince dad to build me something ” rustic, yet contemporary” ( I need a new desk) LOL, oh and the best part…. Stuffing my face with red meat, chorizo, and blood sausage. It’s my once a week VICE.

Here are some highlights;)
New favorite POWER protein Breakfast:
1/2 cup egg whites
1/2 mashed ripe banana
A few drops vanilla extract
1 tbsp raw nut butter
1 tsp flax meal or flax seeds
1 tsp unsweetened shredded coconut.

Best damn kale chips around y’all. Brad’s RAW Foods offers kale chips that are packed with the best flavor. I’ve tried loads of different brands and these by far are the crunchiest, and healthiest:)

Btw, sorry I’ve been neglecting fitness pics, but…thing is, I’ve been so focused on my ZUMBA training, that I haven’t really had the time to do any other kind of workout lately. I get certified this week!!! ahhhhhh So I thought I’d let you know….I’ve been doing ZUMBA 4 days a wk. oh, and in between, practicing at home or with my headphones at work in while dancing like a freak in the staff room. Yes, I am the only one hearing the music, so everyone’s like WTF is she doing. Lol.

Anyway, now that I’ve confessed the fact that I haven’t been at the actual GYM, we can move forward with this post of mostly food;) hehe.

Sunday BBQ prep. Salad with cilantro, green onions, tomatoes, lemon, red wine vinegar, olive oil, and oregano.
About to sautée some brussel sprouts.
And cook up some sweet potato as mom and I’s carb of choice.

I must say….. It is perfection. not too sweet, not at all “veggie” tasting, and it’s virtually GUILT-FREE. Cake & coffee, precisely what I needed after spending too much dough. I swear, give me cake, and I don’t give a shit about anything else. Hahaha.

RECIPE ALERT!!!
Have you ever gone to M Cafe???
Well, if you haven’t had the pleasure yet, I highly recommend it. Granted, there are some things, I’m not such a big fan of, but there is one dish in particular that I’ve completely fallen head over heels in love with. M cafe caters to a healthy macrobiotic diet/lifestyle. Read more about macrobiotic here. I searched high and low to bring you the best version of M cafe’s KALE SALAD WITH SPICY PEANUT DRESSING.
his is huge news….. You’re gonna freak out, and yes, you will thank me. Kale can sometimes get a bit boring, so this recipe really spruces up your relationship with it.

The original recipe calls for regular ol’ natural peanut butter, but I thought I’d switch it out for a less fattening option….my trusted PB2 will do just perfect. ( scroll to the right, click on specialty foods, and scroll through the pages, you will find pb2 on my amazon faves!)

I’ve attached a print- friendly recipe for you to grab. I made this so quick, oh, and I ate it just as quickly;) it’s super easy!
1. Blanch the kale
2. Sautée shallots, onion, garlic
3. Make your spicy peanut dressing.
4. Combine, garnish, and serve;)

“M Cafe” Kale Salad with Spicy Peanut Dressing
 
Obsessing over M CAFE’s Kale salad…..naturally….I HAD to make it! Delicious, with a kick, and outrageously healthy;)
Ingredients
  • 1 large bunch kale (about 3-4 cups)
  • ¼ red onion, sliced very thin
  • 1 shallot
  • ½ tsp high heat oil. (I used safflower oil)
  • Spicy Peanut Dressing
  • ½ cup PB2 (1/2 cup when mixed with water) Or natural peanut butter, but will raise the fat content
  • 1 Tbsp Nature’s Hollow honey
 (sugar free)
  • 2 Tbsp low sodium soy sauce
  • 2 Tbsp brown rice vinegar
  • 1 tsp. garlic, minced
  • ½ tsp. ginger, minced
  • ¼ tsp. cayenne pepper
  • ⅛ tsp. salt
  • 1 ½ oz hot water

Instructions
  1. 1. Remove the kale from the stems. 
Add a pinch of Salt to a pot of boiling water, then blanch the Kale for 3 min. 
Remove the Kale from the boiling water and shock it in a container of ice water. 
Finally, squeeze the excess water out of the cooled Kale.
  2. Sautee onions and shallots with a bit of salt and pepper and ½ tsp oil until softened. Set aside.
  3. Spicy Peanut Dressing: Place all dressing ingredients into a blender. Blend until mixture turns into a smooth consistency.
  4. Drizzle the dressing on top of the Kale and onions, and mix the kale and dressing together until kale is evenly coated. Garnish chopped peanuts.
  5. *Makes enough to dress 2 large bunches of kale. Stores well refrigerated for up to 6 weeks.

Notes
Note: I used PB2 to cut down on the fat, but you can certainly use all natural peanut butter.

Alright, so my obsession with cauliflower has grown to new heights. Although, cauliflower crusts and rice are nothing new to any of us….it doesn’t mean we can’t re-invent them over and over;) Lol. I just can’t get enough! This is my idea of CARB-o-LOADING. Faux “Rice”&
” Pizza”, yes pleaaaazeeeee:)

Lets start with fried rice in the skillet. By the way, notice the printable version of the recipe below:) hope that helps. I know it can be annoying to search though posts, and bring your laptop into the kitchen to be able to see a recipe;)

1st up:

CAULIFLOWER “FRIED RICE”

I got alllllll Asian on it, with my “non-disposable” chopsticks:) whaaaaaaaaa. You would not believe how similar to real rice this shizzle is. This recipe is so damn easy, I whipped it up before work, and viola! The best part, is that you can add any veggies you want in it.

In this recipe, I kept it really simple. Leeks, edamame, garlic, egg, & soy sauce. This can be paired with your choice of protein. Personally, I’d be stoked to pair it with jumbo garlic shrimp, or even grilled scallops. Ooooommmmgggggg. Doesn’t that sound stupid good right now!? But, you could also enjoy all by it’s lonesome as your main dish, you vegetarian, you;)

If you didn’t love cauliflower then, your gonna have to now! I’m gonna tell ya what yo’ mama never told ya!
CAULIFLOWER is a great source of Vitamin C and manganese which are both powerful antioxidants. It also contains high amounts of vitamin k, and omega 3 fatty acids which decrease inflammation. Also a fantastic source of b vitamins and fiber.

Faux “Fried Rice”
 
Prep time

Cook time

Total time

 

Enjoy fried rice without all those carbs! Much more nutritious than your typical fried rice & tastes and looks just like the real deal! Yummmm.
Ingredients
  • ½ head large cauliflower or 1 small head
  • ½ cup edamame (i used the frozen bag from Trader Joe’s)
  • ½ cup chopped leeks
  • ½ tsp crushed garlic
  • 1 tsp coconut oil
  • 1 egg
  • 2 tbsp low sodium soy sauce or liquid aminos
  • salt and pepper to taste
  • 1 tbsp chopped green onion (for garnish)
  • (optional: chopped carrots, peas, onions)

Instructions
  1. Using a food processor/ vitamix/ or simply a grater…pulse or grate raw cauliflower to “rice” consistency. Should equal to approx. 2 cups.
  2. Add coconut oil to hot skillet, and on medium head, add edamame, leeks, salt & pepper and any other veggies you wish to add. Sautee for 5-10 mix while stirring to ensure NO BURNING.
  3. Now add cauliflower, garlic, soy sauce, and sautee for another 5 minutes.
  4. Lastly, add an egg, and scramble it in. Continuously stirring. Cook a few more minutes. Until “fried rice” consistency.
  5. Remove from heat and serve. Garnish with green onions, and toasted sesame seeds.

SWEET ONION & PEPPER ITALIAN PIZZA ON CAULIFLOWER CRUST

Say what you want….Yes, played out I’m sure comes to mind when you hear of “cauliflower crust pizza”, but you know what….WHATEVER!

I am a pizza lover, and unfortunately I can’t be having MOZZA Pizzeria every night, so this is my alternative. Obviously, you could also make it other ways. (I.E. with almond meal, flax meal, coconut flour) All of those options are GREAT for low card eaters, but if ya ask me, the cauliflower version couldn’t get any healthier. With the most nutritional value out of all the other options, you need feel absolutely NO guilt.

The assembly of the crust couldn’t be easier.
Use your food processor, vitamix or grater to pulse or grate cauliflower. U will need about a cup of it.

Steam or cook in skillet till softened, then throw in a bowl.
Add LIGHTshredded mozzarella or Swiss. 1 cup. Yes…throw it in the bowl.
While your there…go ahead, throw in 2 egg whites, your garlic, oregano, and salt & pepper.

Preheat oven to 400 degrees.
Mix well in the bowl.
Grease your pizza pan, or baking sheet, and mold your crust.
Make sure that it’s not too thin or too thick.
Cook for 20-22 minutes. We are looking for browning here, K.

Ok, so… You can use regular pizza sauce, but be mindful that it can make the crust quite soggy, so I prefer a bit of slightly watered down tomato paste.

Ok, maybe I should have mentioned this a few pics ago butttttttt…….. While the crust is cooking, you could sautée your onions and peppers. You know, to save time n’ all;) grease your skillet with a bit of olive or coconut oil. ( 1 tsp) keep the heat at medium. High heat will most likely burn your veggies before they even cook. Oh and I used sweet yellow & orange peppers, they’re my absolute! I made this Italian style, by adding oregano, garlic, and Italian seasonings to the skillet as well.

Once caramelized ( about 15 min) pour over crust. Top with ripped pieces of mozzarella ( light of course) and throw back in the over to melt the cheese. About 5 more minutes, or stick in the broiler for a min just to brown.

Italian Style Onion & Sweet Pepper Pizza on a Cauliflower Crust
 
Prep time

Cook time

Total time

 

A delicious way to enjoy pizza! LOW CARB STYLE!
Ingredients
  • CRUST:
  • 1 cup pulsed cooked cauliflower
  • 1 cup grated LITE mozzarella cheese
  • 2 egg whites or 1 whole egg
  • ½ tsp crushed garlic
  • ½ tsp oregano
  • salt and pepper
  • TOPPINGS:
  • 1½ tbsp tomato paste mixed with 1 tbsp water
  • 1 onion sliced thin
  • 4-5 small orange & yellow peppers. Sliced very thin.
  • ½ tsp garlic
  • 1 tsp italian seasonings
  • salt & pepper
  • 1 tsp olive oil or coconut oil.
  • Lite mozzarella or Lite swiss on top
  • (optional: Top with red pepper flakes)

Instructions
  1. Crust:
  2. Pulse ½ head of cauliflower. Should equal to 1 cup pulsed cauli. I used my vitamix, but you could use a food processor or grater. I prefer it VERY small grain.
  3. cook till softened. Either steam in in microwave or over the stovetop.
  4. Once cooked, add it to a bowl, and add egg whites, mozzarella, garlic, oregano, salt and pepper, and mix thoroughly.
  5. Pre-heat oven to 400 degrees.
  6. Grease a small pizza stone, baking sheet or pizza pan.
  7. Mold your mixture onto the pan, making sure it is evenly distributed and not too thick, but not too thin.
  8. Cook at 400 for 20 min.
  9. Remove and let sit while making toppings.
  10. TOPPINGS:
  11. In a small ramekin, mix tomato paste with water and spread over crust.
  12. Add 1 tsp oil to a hot skillet ( low-med heat) and add thinly sliced onions, peppers, garlic, seasonings, salt & pepper and sautee till caramelized. About 10-15 minutes.
  13. Keep stirring and being careful not to burn.
  14. This step, of sauteeing, can be done while crust is baking.
  15. Once done and caramelized, add to pizza crust.
  16. Top with ripped bits of Lite Mozzarella or Lite Swiss and stick back in the oven for 5 min. Or broiler for 1 minute (just to brown and melt)

Yada,yaya,yada…Well, what can I say, I had yet, another fabulous weekend, and a great start to my week. Busy as ever, so I will try my best to catch you guys up on the latest and greatest in Paula world;)
Remember, as of APRIL 1, I will finally have Wednesdays off from the salon to focus on my blogging and ZUMBA, woooohooooooo! I feel like so much has happened since the last we spoke!

Let’s start with my bridal shower meeting on Sunday with the girls. No, not my bridal shower, (puleeeaaazeee) my bestie Brooke’s. Remember……San Fran weekend????? Lol.
Alicia hosted a fabulous brunch at her house in which she served homemade yummy fajitas, with low carb tortillas ( love her), fresh fruit salad ( bananas, strawberries, blackberries, blueberries)

Today is officially the first day of SPRING, and I am on it like white on rice! Stopped at the farmers market this weekend and picked up some beautiful fresh flowers to brighten up the house. I am feeling spring, FOR SURE, except that…for some reason….I’m in all black today. Hmmmm. Weird.

Later that day, I joined the Sandy Campy Fitness team for a meeting about the new upcoming schedule. I will be teaching Wednesday mornings at 10:30 am, and Thursday nights at 8:00pm. We had loads of fun, ate delicious pot stickers and a raw kale salad. Oh, I forgot…..and BOMB ASS chocolate mousse cake. Yummmmmmmmmm. Sandy is so sweet. Before we left, she gave each one of us a cute little heart shaped gem stone on a chain. Along with the stone, we also got a list of different gems and what each color stands for. Love my new team:)

Made sure to take time to do a bit of grocery shopping as well. Trying a few new things.
Jarlsberg LITE Swiss cheese. ( 1 slice= 3.5 fat, 0 carbs, 9 protein)
Suzie’s kamut cakes (30 calories, 0 fat, 5 carbs)
Applegate herb turkey slices ( 2 oz= 0 fat, 0 carbs, 10 protein)

Words you, and I should live by….. This is totally true. Seriously…because knowing me, after a couple glasses of wine…..I start raiding the pantry. Not a good look on anybody. If there’s anything remotely unhealthy in my house, trust me, it’s gone in 2 seconds…all of it. I’m trying to work on this. I promise.lol.

My most exciting purchase this weekend! I’ve been looking for the perfect Popsicle molds and hallelujah!!! I have found them! I stopped into Crate & Barrel and of course, wanted to buy everything…and saw these from the corner of my eye. The best part was, they were 13 bucks for 6 molds! Please do follow one of my favorite instagram friends who inspired me to start making protein pops. FITALICIOUS_ME. Time for summer…and ice cream;)

Best news of all!! I taught a song in Sandy’s class last night! My first time front and center:) It was AWESOME! The room was full of fantastic vibes, and I had my Spartos to keep me hydrated and full of energy!
