With “The day of THANKS” behind us, I can hardly believe it’s time for christmas shopping, putting up lights….etc. GEEEEEZ! That came soooo fast. I feel like Thanksgiving just flew right past me. Although turkey leftovers are finally devoured, I cant help but continue to reflect and feel absolutely grateful for this special day. Here a few shots from Thanksgiving;)

We not only celebrated Thanksgiving on this day, but also, Mom’s bday!

We started eating pretty damn early. Come to think of it….drinking too;) By 11 am, turkey was already done, and warm in the oven, mashed potatoes done, and we were making hard boiled eggs. A fuckin FAVE!!!!

All you do is….place whole block-a-brie in a small baking dish, top with fresh made fruit compote ( We made our own raspberry chia jam), crumble some almonds over top, and bake until cheese is oozing out the sides! WHAT?! I know, sooo bomb. That shiz was gone in 0-60 seconds. byeeeeee

This is my absolute favorite pic. My pops with Emma. Ok, so…..partly because she looks identical to me when I was her age. No joke. Mirror image. It was crazy to see them together. I felt like I was seeing myself, “daddy’s girl” 28 years ago. Wow.

My cousin SeanJay is staying with my folks while going to music school in burbank, so he celebrated with us, as well as his parents. BTW….amazing aunt & uncle;) Soooo happy to have had them visit from Las Vegas!

Unfortunately I didn’t get many shots of the actual dinner;( maybe that’s because I was stuffing my face like a hippo. Did I mention that I’ve gained 10 POUNDS this month?!!!!!! holy jesus cristo!!!!!!!Yep, that’s what happens when

#1: you burn out

#2: you’re happy 

lol, whatever.

Of course, I managed to snap a pic of my dessert. I ate the shit outta that SUGAR FREE CHEESECAKE. 

No one could tell it was a “healthified” version of a cheesecake. Like seriously, people are obsessed with this recipe. I’m proud;) I usually serve as individual cheesecake rounds, but it wasn’t working out for me. To make time, I just cut up bite sized squares.

The other cut up cake you see in the center, that’s a traditional argentinian cake called PASTAFROLA. Made from shortbread and quince jelly, It’s like nothing you’ve everrrrrrr had! It’s delicious and flaky, and melts in your effin’ mouth!

Anyway…we had a fabulous time, and now…..I’m ready for:

Marcin and I have been talking about trying this super cute cafe by his place. Literati Cafe has been on our list, and we finally made there for a super yummy brunch on Sunday morning. In the heart of West La, on Wilshire, (one of the busiest streets ever) you wouldn’t even guess it. Thanks to the beautiful and serene garden patio, you get such a great local, mellow vibe. I loved it. It was like a little gem. I highly recommend you try it out. I loved that they were dog friendly in the patio area, and nobody was “LA” stuffy, you know!?20131202-174936.jpg

We tend to share everything we have at restaurants, to be able to try a little of everything. It’s really funny actually…when we first met, he told me that he was an only child. First thing I thought was….( & said) “oh god, do you have problems sharing? Cuz I love sharing…especially food.” lol. He was like, “ummmm, no, I mean….no, I don’t think so….” hahahaha

The breakfast menu is ridiculous! I reallllllllly was eying the griddle cakes and french toast, but stuck with something on the healthier side. lol. I ordered the VEGGIE MELT form the lunch menu, and it was soooo good. I didn’t realize how much I liked sprouts in my sandwiches. Yummmmmm.

Marcin ordered the chicken pesto sandwich which was on ciabatta bread. It was good, but I think mine was better.Maybe the chicken breast was a little dry.  We also split a side of kale chips and shared a glass of chardonnay & pinot grigio. It was a beautiful sunny day, which means….day drinking is completely acceptable. Grrrreat.

We walked back home and I believe took a bit of a nap. Hmmm, I never used to nap. Lately, I’m kind of  into it. After a waking up and realizing it was still amazing out. It was safe to say…we needed to seize the day. We leashed Willy and headed to Santa Monica for a nice beach walk. I completely obsessed with my new black Friday find, my NIKE lunar sprints. The are like…heaven on your feet. Like a god damn cloud!!!! They are available in quite a few colors, but I believe they are “youth”. Before heading to dinner at Warszawa, we caught a beautiful sunset. Finally used the “panoramic” setting on my Iphone. Have any of you ever caught the supposed “green light” that flashes when the sun is about to set???

We watched, stared, but….never happened. Still stunning skies all around. So lucky to be in LA. This is a December evening on the beach I mean… c’mon!

I’ve decided to finally get off my ass…and get back to a workout routine. This month has been crazy, and I really let myself go. I’m not saying that I’m freaking out and obsessing over it, but I’m ready to get back on it. I realize that I don’t like the way I feel when I’m carrying that bit of extra weight. There…I ate, I drank…A LOT. And now, I’m ready for moderation. I’m getting into my 30′s (January 31) and I realize that I just can’t keep fluctuating that much. The bingeing will catch up to me and it’s gotta stop. So that will be the start of my new year’s resolution I think.

Anyway, with that said…Here is my accountability. I am posting my workouts for the week. Start small. Reach your goals by writing them down. Do not beat yourself up. That starts a vicious cycle of guilt and anxiety. Instead, focus on your progress, and cut yourself some slack. No one is perfect. We are our own worst critics. Remember…to those who love us, to them…we are perfect just the way we are;) <3

IT’S THANKSGIVING MAÑANA!!!!

 

Who’s cooking what? I’m dying to know!? Well, I kinda cheated, I’ve already celebrated Thanksgiving:) yep… Last Sunday, and it was a blast. I know weird and early. It was mom’s Bday on the 22nd and we had family in town, so we decided to have it a week early. Otherwise, it would’ve just been us 3 on the actual day. Wompwomp. I’ll be sharing pics on this weekend;) I of course made my classic and (favorite to most peeps) SUGAR FREE CHEESCAKE. Oh and a shaved Brussels sprout dish that I promise to share next:)
Anyway….even though I’ve already had my thanksgiving, you know it ain’t stopping me from continuing to celebrate it till Saturday, at least:) lol. I’ve still got 3 “FRIENDSGIVING” celebrations to feast on!
Listen, it’s totally unrealistic to think that this time of year, is the best time to maintain or even lose weight. Let’s get real chicks. November & December are months of curves! That’s right…I’ve decided to just enjoy everything I want to enjoy, while still keeping a balance. To be totally honest, I haven’t really worked out to much these last couple weeks. Eeeeek, you know what!? WHATEVER!!!!! speaking of balance and enjoying….. Boy have I got a yummy recipe for y’all!!!!!!
WHO DOESN’T LOVE PUMPKIN PIE!? well, you are weird if you don’t. Seriously. I die for pumpkin pie! Well, really… anything that resembles pie. Lol. This recipe was concocted by my MOST FAVORITE BLOGGER EVER!!! Have you ever checked out www.proteinpow.com??? Those of you who are always asking me how I think of all of these weird substitions, well, here’s your answer! Anna from Protein Pow has been an absolute inspiration in my kitchen.

Her recipes are not only super easy, they also allow you to eat all of those yummy flavors and textures that we all loveeeeeee, without the guilt. She uses loads of different protein powders and really interesting ingredients to create the ultimate (& usually very low sugar and carbs) desserts and meals. Enserio….(Spanish;) I don’t don’t the effff she does it.

THE CRUSTLESS PUMPKIN PIE!!!!

These are the perfect texture and seriously feel like the real deal!
I used these little silver tartlet ramekin things, but you could also use a regular muffin tin. Optional & helpful tip: add the silicone muffin cases instead of just filling batter right into the pan. They are really great for “not sticking” to the sides.

This recipe will grant you 6 lovely single serving pies:)

Make these tonight! they are sooooooo easy, I swear! Have them ready, refrigerated, and I promise, NO ONE will even think that they are the healthier alternative! Sneaky!;)

CRUSTLESS PUMPKIN PIE
 

Ingredients
  • ½ can of pumpkin puree
  • ¾ cup of liquid egg whites
  • ¼ cup of vanilla ( cinnamon swirl )whey protein powder (I used Cellucor’s cinnamon swirl)
  • 1 tsp of toffee flavoring, even vanilla flavoring (optional….great if you have a gnarly sweet tooth ;)
  • 1 tsp of cinnamon or pumpkin pie spice
  • TOPPING:
  • *unsweetened almond milk
  • *vanilla whey protein
  • *fat free sour cream or 0% greek yogurt.
  • Mix in until desired thickness.
  • *sprinkle cinnamon and crushed walnuts or pecans for crunch!

Instructions
  1. mix all ingredient with a hand mixer and bake at 330 degrees F. for 30-40 minutes. I found that with my more shallow ramekins, I only needed 30 mins, but in deeper muffin tins, perhaps more time. Also depends on oven.
  2. keep checking for doneness. Try using a toothpick through center.
  3. Let cool once out of the oven.
  4. Prepare your protein frosting, top, and serve,

Friendsgiving<3

These are my besties! Well, missing a few:) We decided since Brooke was in town from San Fransisco (in the orange top) that we would get together for a FRIENDSGIVING. We were also celebrating Kelly’s new purchase, her first home! It’s so weird how far we’ve come. I don’t wanna grow up! Everyone is moving in together, buying homes, having kids, starting businesses, It feels surreal.

We’ve all been friends, it seems like, since I moved to the U.S.A. Ok, maybe not since 7, but for sure since 12 years old. I seems like as we get older our circle of friends get smaller and smaller. People start dropping off. I am so lucky though that I got such a great core group. Like I said, we are missing a few. You know who ya are;)

I drove straight to Kel’s in Valencia after work, which is about a 45 minute drive from Beverly hills. Thank god there wasn’t traffic! Best part about the day after thanksgiving. Everyone was pretty much there already pouring some good wine, a LOW CARB cocktail (i LOVE my friends), and some yummy appetizers.

I had to take a picture of this fabulous arrangement. Mums, roses, and tuberoses, MY ACTUAL FAVE!! If you have never smelled a tuberose, you are seriously missing out.

I can’t help but think…will I ever get married?

I must admit, I’m a bit lost with this whole idea. I’ve grown accustomed to my own things, my own money, my space, that I guess I’m just nervous that I feel too OK alone. I mean, listen, I’m not trying to be all grey gardens, but, these things happen. By nature. Plus I’m a hairdresser, I hear marriage drama all the time. I’ts exhausting. Sometimes I feel like I’m going through it with them. The idea seems nice….The gown, the flowers, all of it, but I can’t help but wonder…

Till death do us part?

There is something about just sitting around with a bunch of your girlfriends just laughing and of course eating and drinking. I only had a couple of glasses of wine.

This cheese I swear tasted like a blueberry cheesecake. It was gone in under 60 seconds. Whatever, I ran six miles today.

Freakin. cresent .weinies.

I was good…not one went in this mouth!

Can’t really say that about the block of cheese I devoured.

HAPPY THANKSGIVING!

Hi everyone!!! Happy Thanksgiving to all! Welcome to my favorite holiday and NO WORKING OUT today. I’m making up for it by working out tomorrow. Friday would usually be my day off. Switch. I don’t think I can say that we have a specific tradition in the Bedo household. Every year is different,  but It’s always a great time!The only thing that is pretty consistent is that  I end up being so stuffed every year, I swear I end up like a beached whale. No joke. This year, I broke the cycle. I definitely ate more than I would on a normal day, but managed to keep the binging under control. Thank goodness. It may have something to do with the fact that this year the party was pretty small, and we didn’t over do it with the amount of food and side dishes.

Let me re-cap you of what last year was like:

  • Party of 30 people
  • Prepped for 3 days
  • I did all the cooking , except desserts.(yes, for real. I wanted to say that I had hosted a huge thanksgiving feast once in my life)
  • A wet brined turkey the size of my body
  • A honey ham
  • A rotisserie chicken
  • Sausage/ sage stuffing
  • Brussel sprouts with pancetta
  • Pear, walnut, blue cheese butter lettuce salad
  • Fresh cranberry sauce
  • Cornbread muffins
  • Gravy
  • Bourbon sweet potatoes
  • Garlic mashed potatoes

I mean…..It was gnarly. I must admit, well worth it though> It turned out AMAZING!

This year, we kept it mellow and changed up the menu. It was just Mom, Dad and I and My uncle and his wife and their 4 month old baby girl, Emma. (freakin adorable).We were able to catch my brother on skype. He was crunching away in his lab. Not sure if I mentioned before, but, my brother is a genious, a neuroscientist, no big deal. I got sad seeing that he wasn’t celebrating and eating with all his friends, but  he so kindly reminded me that “uh Paula, I live in Canada, I’ts not thanksgiving here fool” LOL. Such a dumb ass.

Anyway, So, early this a.m. (6:00) I drove to the parentals house.  Usually Mom’s up ready to go with coffee made, but I guess she decided to sleep in, cuz when I walked in..Crickets. zzzzz

Mom had one of the protein muffins in the fridge so I muched on that and made some coffee.

I decided to get my crusts  started, since Miss. Martha Stewart (in the thanksgiving issue) mentioned that I would have to do several rounds of refrigeration. Mom was gonna need the oven round 11:00 am. So , I began to make a mess in the kitchen as usual. I’m not one of those,  clean as you go type. I wish I was.

The pie I chose out of the mag was the sour cream apple crumble pie, although I changed a few things.

  • I made the crust out of whole wheat flour instead of all-purpose
  • I used light sour cream
  • I did less of the strussel topping.

All in efforts to “healthify” my Thanksgiving.

Mom got up, got beautiful, (she wouldn’t let me photograph her in her pj’s) and got stated on her beef roast stuffed with pancetta.  The bomb. Btw, It’s this beauty’s BIRTHDAY today, doesn’t she look 26?? Happy birthday mami!!

It was such a beautiful day out, that we decided to set the table in the backyard. Who want’s to be indoors on a day like this anyway?! I sat and read the rest of the new Living magazine and sipped on some kombucha. I love the gingerade flavor. I knew I would need some probiotics after this meal!

Look who arrived!!!!  Uncle Manuel, Ingrid & Emma, this lil princess. She’s 4 months old.ahhhh, those cheeks. This day was so special, mostly because it was my first time meeting this sweet pea.

After I annoyingly squeezed her to death for an hour, we headed outside for some appetizer.

These are Mom’s homemade empanadas.  Fried beef ones on the left, and baked spinach ones on the right. An Argentinian staple, and probably one of my all time to die for foods. I grew up on these. I could have easily taken down both these platters like I had never seen food before, but, I opted to just enjoy one of each and let the rest of the guests enjoy. My uncle is a wino, so he brought over a fabulous cabernet sauvignon from Mendoza, Arg.

This year our Thanksgiving had an Italian/Argentinian flare.

And….some random cranberry sauce that Mom decided to whip up. It didn’t really end up pairing with anything but whatever. Gotta have something traditional.

We had the perfect amount of food. Nothing went wasted, and everything was delicious.

My pie was a success. I was a bit nervous because of the changes I had made to the recipe but thank goodness it all was good in the end. pretty huh?

The cake below was brought to work for me the day before by my fabulous baker friend, Jules Peres of Immaculate Confections. This is her famous vanilla bean rum cake. Ridiculous.

I made some last minute fresh vanilla whipped cream as mom made the teas and coffees.

Once that pie went down, it was pretty much food coma from there out. I enjoyed my coffee in front of this gorgeous fire. The Perfect way to end this perfect  Thanksgiving. I am thankful for my health, my family and friends,and my Wilbur<3
