110 CALORIE APPLE CINNAMON PROTEIN MUFFINS

Hi guys! Hope everyone is having a fabulous week so far:) A few days ago, I woke up super early (4 faaaakin 30 AM earlyyyy)  with the sudden urge to bake. So, I started researching recipes that I could make into something guilt free. I’m finally feeling like my body is slowly but surely normalizing after the carb-o-load that was, Italy…and the 3 weeks after that, that I just DIDN’T GIVE A FAAAAAK. Lol.  Although feeling back to normal, I’m still craving pastries, croissants, and all things sweeeeeeet. Yes, you absolutely can get addicted to sugar and carbs. The gelato I had 2x a day didn’t help the addiction. Nope.

Anyway ya’ll, I came up with these BOMB ass muffins that make you feel like you’re having a cheat, when in fact…it’s a GUILT FREE TREAT! Take a look at the ingredients up top…If you are like me, and like to whip up healthy treats…most of those things you should always keep around because they are a great base for healthy baking. Lets see the macros on these babies…

**Note: I MADE MINE INTO 12 MINI MUFFINS (50 CALS FOR 1, 100 CALS FOR 2) but, you can make a batch of 6 regular sized muffins. Topping is added in the macros**

(1 regular sized muffin. Mini= 50 calls each)

FAT: 1.4 G

CARBS: 11 NET

SUGARS: 6.5 G

PROTEIN:9.6 G

I am completely obsessed! Here are you instructions:

Directions:

1. Pre-heat oven to 350*

2. Combine oats and almond milk and microwave for 1 minute.

3. Add in wet ingredients… applesauce, grated apple, egg whites (or 1 whole egg) and mix in.

4. In a separate bowl, mix coconut flour, protein powder (I used Met RX protein plus Vanilla), your choice of sugar sub, salt, baking powder, and cinnamon .

5. Combine wet and dry ingredients.

6. Grease or spray your muffin tins and fill evenly with mixture. (Not too full) Should make 6 regular sized muffins.

7. Bake at 350* for 20-25 mins.

Now…. For the TOPPING!

This is totally optional, but it is counted in the macros above. If you remove this step, it’ll save you about 20 calories. I used fat free sour cream with stevia and vanilla, BUT…you can do whatever your lil heart desires. I did it this way because it keeps it SUPER LOW in CALS, but you could also do a fat free cream cheese topping or even 0% greek yogurt.

I keep them in my fridge and have 2 mini muffins before heading to the gym in the mornings! They provide my body with the perfect balance of nutrients to fuel my body, and give me great energy to go a little harder! PLEASE try this recipe and let me know your thoughts!!! Hello and happy Sunday! My favorite day of the week and you know what time it is!!! It’s BRUNCH time. Lol.

I’ve got a post for you today that is dedicated to the waffle. Before I pour myself a mimosa…here are a few recipe faves to switch up the sunday ideas.

Hanging out with the family today, and spending some much needed grandma time. We headed to the Antalope Valley Poppy Reserve after breakfast to see the beautiful fields of poppy’s that cover the hills. Welp….sadly…not one god damn poppy to be found everywhere. LMAO. All we got was 1 hr of sweet car ride tunes.We got there, and turned right back around. lol.

Back at Rancho Relaxo…Norma, my Ficus Lyrata is doing marvelously at home. Mom taught me to clean the leaves with milk and since doing so, the leaves are shiny and bright!

Cheers to prosecco and fresh squeezed grapefruit juice. Hallelujahhhh The new fave!

They’re pretty, pink, and sets the tone for the freakin’ weekennnnnnd!

Ingredients

  • 1 750ml bottle of Prosecco, chilled

  • 3-3.5 cups of fresh grapefruit juice (~4 very large), chilled

  • Sweetener ( I used a couple drops stevia) or simple syrup (optional)

So…here they are…Its waffle time! These are a healthier, grain free, paleo option to the typical leggo my eggo. If you don’t have a waffle maker (I feel bad for you) this batter, which is one serving…can also be done on the skillet and devoured as a pancake. Das right.

For me, eating healthier, doesn’t need to affect the flavor. These are so yummmmmyyyy! There may be more ingredients than you are used to, but…get into it. Don’t give me sh*t.

The recipe is above and I hope you give it a try…I topped these fabulous #eatclean waffles with some Nature’s Hollow sugar-free syrup and some chopped pecans. Absolutely divine, delicious, and bomb.com. The recipe made 2 big waffles and I cut them into triangles…you know…so that it looks prettier and it looks like there is more on the plate. Lol.

It’s not that I NEVER eat carbs..I mean, please betch… but when I can limit without comprising bomb-nesss, I do. Give-n-take boo’s.

 Just so you know…It’s lunch hour…& I am now eating spinach tart, fresh mozzarella, quinoa chips with kale dip, and having sangria. It’s the simple things in life that keep us happy, lol. Spent the night hanging out with my besties catching up and feeling baby bumps..(not mine, lol) , and now got all the fam over for an afternoon of snacks and sangria. That’s what I call..a weekend

Creamy Chicken Chili recipe…& my new FAVE 40 calorie snack!!!!

Happy hump day babes!!! So far the week has been quite busy, and I’ve been fortunate enough to squeeze in some really amazing workouts as well. I’ve only had a few days this month where my feet have flared up. Thank you geeeezuzzz! ( if you don’t know, I had to quit Zumba sadly due to gnarly foot pain) I’ve been powering through, and avoiding too much pressure and compression on my lil tootsies. It’s been fun though getting creative in the gym I must say though.

Anyway, last week we had an actual rainy and semi-cold weekend ( for LA, LOL) which inspired this next recipe! Finally, I’m sharing a SAVORY recipe! Whattttttt!?!?!? I know, not my usual…but I think it was time, don’t you!? So with that cozy weather last week….I was in need of a hearty, protein rich soup.

One night, while pinning….I came across a recipe that inspired this baby. Of course….I had to do some adjustments;) I wish I could give a shoutout to the chickie who originally posted this on Pinterest…but paper entry I didn’t pin it. Hmmm weird.

Here it is…in all it’s EFFIN glory! This recipe makes quite a large batch, so I would either: FREEZE IT…OR PORTION IT OUT FOR A WEEK OF MEAL PREP!
It will have 5-6 servings, although I calculated it for 5 servings… I like big portions;)

Creamy Chicken Chili
 
Ingredients
  • 2 Large chicken breasts. ( I use organic/free range)
  • 1 small yellow onion
  • 1 small can Ortega fire roasted green chillies
  • 3 minced cloves garlic
  • 1 tbsp coconut oil
  • 4-5 cups chicken broth (I use Low Sodium)
  • 1½ tsp cumin
  • ¾ tsp paprika
  • ½ tsp oregano
  • ½ tsp coriander
  • ¼ tsp cayenne pepper
  • salt & pepper
  • 1 cup white beans (I used Trader Joes Organic Great Northern beans in can)
  • ½ cup fresh or frozen corn
  • 4oz fat free cream cheese or lite neufchatel cheese
  • juice of ½ a lime
  • ¼-1/2 cup chopped cilantro
  • Optional: grated monterrey jack cheese or cojita cheese & broken up tortilla pieces.

Instructions
  1. In a dutch oven or lrg soup pan, heat 1 tbsp coconut oil.
  2. **Add in chopped onions
  3. **Add in 2 chicken breasts on med heat
  4. **Soften onions & sear chicken breast
  5. **Add minced garlic
  6. **Add chicken broth
  7. **Add all spices
  8. **Bring that to a boil.Once boiling…turn knob to SIMMER.
  9. **Simmer for 15 minutes.
  10. **Remove chicken and SHRED it..throw it back in.
  11. **Add in 4oz fat free cream cheese while on simmer. (It will chunk up, just keep stirring and removing lumps.
  12. **Add in corn
  13. **Add in ½ cup of the beans whole & the other ½ cup of the beans blended with a couple tbsp of your broth. This adds thickness and creaminess to the chilli.
  14. **Add juice of ½ a lime
  15. Simmer for 10 more minutes.
  16. Top with an extra squeeze of lime, fresh cilantro, and cheese:)

There are 5 servings in this recipe. 1 serving is 237 calories.

Here’s a shot of most of the major ingredients…. I forgot to show the fat free cream cheese, but it’s in there. 4 oz of it. It’s super easy to make. Soup is the absolute best! You literally throw shit in a pot….and viola!!!
Also…feel free to add SPICE! As spicy as you would like…amazeballz. Also…I usually make my recipes really low carb…and I promise this is still under my “good carb guidelines”
These beans are high in protein, and there is only ONE CUP of them in the whole recipe. Get into it. Byeeeeee

I topped it with grated low fat Monterrey Jack cheese, a squeeze of lime, and fresh chopped cilantro. OMMMMMGGGGGGGG. I’ve been eating this ishhhh for 4 freakin days, and I’m still not sick of it:) lol
Seriously… Make this ASAP! Oh…especially if you’re in the mid west or east coast..where it’s fuckinnnnn COLD!!!!!

CHOCOLATE PROTEIN PANCAKES! And lots to be grateful for….

Happppppyyy MONDAY!! This weekend has been awesome! As promised, let’s start with this ridiculous stack of CHOCOLATE PROTEIN PANCAKES! they are not only super moist, (ew..I hate that word) they are the perfect texture and taste DELICIOUS!
I am a huge activist of pancakes on the weekends, lol. I mean, not “real” pancakes…lol….I mean, MY pancakes;)
I promise…you can eat them WITHOUT all the bad carbs, fat, and sugar. It’s allllll about the substitutions. This recipe calls for very few ingredients. Some may look a little unfamiliar to you, such as…”psyllium husks or “coconut flour but these products should make an appearance in all of your baking pantries! These are essentials to keeping a healthy “LOW GLYCEMIC” and “LOW CARB” kitchen. Don’t get allll obsessed with the words, low carb, I just mean “BETTER CARBS” 😉

Chocolate Protein Pancakes
Prep time: 
Cook time: 
Total time: 
Serves: 2
Ingredients
  • 1½-2 scoops chocolate whey protein ( I used Cellucor Molten Chocolate)
  • 2 tbsp Psyllium Husks
  • 1 tbsp Coconut Flour
  • ½ cup steamed mushy cauliflower 😉
  • 2 eggs
  • ½ cup egg whites. ( I used carton egg whites)
Instructions
  1. Use a NON STICK PAN. I LOVVVE Scanpan! on MED. heat.
  2. To grease pan, I used Natural coconut oil spray. (Found at Trader Joe’s)
  3. ***Just a little spritz per pancake***
  4. First mix all dry ingredients and slowly add in all wet, including steamed soft cauliflower. Beat or mix very well.
  5. Spoon in your batter as to not make too big of pancakes.
Nutrition Information
Serving size: 3 pancakes Calories: 280 Fat: 7 Carbohydrates: 2 Sugar: 2 Protein: 38

Now….this recipe or “stack” is considered 2 servings.
For 3 pancakes..280 cals, fat 7, carbs 2, protein 38.

#2 reason what this weekend was fab….I have been KILLIN it at the gimnasio¡!!
I have been adding in more cardio intervals. Some “Fasted“, some not, but I have been really noticing a huge difference in my body. I fuckin hate cardio. But seriously. I DO. Just pick a machine and make that heart rate jump up, then come down. Best way to burn fat in short period of time. Interval training!!!! I promise…it’s worth it!

Don’t miss this recipe!! EASY 90 cal BANANA OAT PROTEIN COOKIES!

Happy hump day beauties!!!! Today’s post is short but sweet:) I’ve got a really SUPER DUPER EASY recipe for a pre-workout 90 calorie snack idea! for me, because I tend to workout so early in the morning, I consider this 1/2 of my breakfast. I brake up my breakfast into pre-workout & post-workout.

For example what I did this morning.

FASTED CARDIO WITH CELLUCOR HD powder.

1 1/2 BANANA PROTEIN COOKIES BEFORE WEIGHT TRAINING (killed shoulders and abs)

POST WORKOUT : 6 EGG WHITES.

This is the perfect balance or carbs for energy before lifting and protein post training.

Banana Nut protein cookies
 
Prep time

Cook time

Adapted from Bodybuilding.com
Serves: 9

Ingredients
  • 2 very ripe mashed bananas (I thawed previously frozen ones)
  • 1½ cup quick cooking oats or traditional. (either is fine)
  • 2 scoops protein powder. (I used 1 scoop of About Time Banana Creme, and 1 scoop of Isopure 0-carb Vanilla)
  • (optional: A small handful chopped walnuts and raisins)

Instructions
  1. Pre-heat oven to 350 degrees.
  2. Mix rolled oats and protein powder well.
  3. Mash your two bananas, and add to dry mix. Mixing and mashing very well.
  4. Optional: Fold in chopped walnuts or raisins. (this will increase macros a slight bit per serving. Fat and sugar content)

Notes
90 calories per cookie WITHOUT walnuts or raisins. This is a great pre-workout snack! Remember…Carbs are good, we use them for energy before a killer workout. Protein AFTER;)

Serving size: 1 Calories: 90 Fat: 1 Carbohydrates: 17 Protein: 7

The only problem with these….it’s hard to just have one!!!!!! Lol.
I’m so into these, that I now have a hoarders freezer full of extra ripe bananas. No. Joke. Go ahead, print it out and share with fam and friends:)

I am a huge believer in MORNING FITNESS! This silly selfie, like allll my gym selfies, are taken between 5 AM- 7 AM. YEP. I’ve always preached it. The best part about early morning workouts, your body still practically has no idea what the fuck is going on, so you could pretty much trick it into doing anything! lol. The second best thing, is that, you realllly set the tone for the rest of your day. When you start your day on the right foot, on the “fit” foot, you are less likely to binge throughout the day.

Hello my sweet friends!!!! Well…it’s 87 degrees here in LA, I just got home from the gym, and I thought….shit. I need to holla for the big LOVE day;) I gotta tell ya…I’ve not a huge Valentine’s Day freak, but I do appreciate random acts of sweetness ! I do believe these acts should be practiced on most days…not just because someone decided to make it a holiday. Lol
I’ve been so busy lately, that I must admit my posting and cooking has been lacking to say the least. Unfortunately my meals have been very boring. ( back on that mealprep) You know what that means… Chicken breast..brocolli..sweet potato. Lol. I’m not gonna bore you with that. Lol. But, FORTUNATELY,I did say I was gonna get it back after the holidays, didn’t I!? 😉

CHOCOLATE ALMOND PROTEIN COOKIES!!!!

90 CALORIES FOR 2 COOKIES:)

Ok so remember a few posts back, I had shared with you some Breakfast Protein Cookies???? Well, I loved those so much, that I had to try a chocolate version! 😉
This recipe is soooo easy, 5 minutes to mix…7 minutes to bake.
EASY PEAZZZZZY!
With only 90 calories for 2 cookies, consider this your new GO-TO protein snack! Oh, and puleeeaaase….who doesn’t like chocolate. (People who don’t, are not to be trusted.)

Chocolate Almond Protein Cookie
Prep time: 
Cook time: 
Total time: 
Serves: 3
Ingredients
  • 1 Scoop Chocolate Whey Protein (I like THIS ONE..Molten chocolate)
  • ⅛ cup Almond flour/meal
  • ¾ TSP Baking powder
  • 2.5 TBSP carton egg whites
  • ¼ cup Unsweetened Applesauce
  • ½ TSP almond extract (could also use vanilla)
Instructions
  1. Pre Heat oven to 350 degrees.
  2. ALWAYS mix all dry ingredients first.
  3. ADD in wet ingredients. One by one. Mixing well.
  4. On a cookie sheet lined in parchment, plop down 6 med cookies. Do NOT flatten them out. Leave them dolloped.
  5. Bake for 6-7 mins.
  6. They cook fast;)

So, the reason I’ve been quite busy….well, I’ve been killin it at the gym # 1, lol, but also because I’ve had some of my family from Argentina visiting! Woohoo;) These are some of my FAVORITE people in this world, I swear. When I’m not at the salon, or the gym…I’m with Family:)

This past weekend we took them to Sequoia National Park. This place is stunning! I told them to get geared up for snow……but they had no idea what I meant. Lol
Here we are…before the storm..chains…and almost getting stuck on the mountain. No bigs. Happy as pigs in shit.

I haven’t see this much snow in a reallllllly long time! It was soooooo beautiful. I highly recommend this weekend trip to all of you. especially if you live in LA, where it always feels like summer 😉

Hey guys!!!! Hope all of you had a fabulous weekend! For those of you who are in the Mid West or even East Coast….I’m so sorry for that nasty weather you’ve had:( ugh. I honestly don’t even know what that’s like. I’ve been fortunate enough to grow up most of my life, in sunny southern Cali, where the sun shines almost all year round:) I consider myself very lucky, trust me.

As you know, I realllllly fell off during the November and December, but I assure you that I am slowly getting back into the my healthy lifestyle. I suffered from a bit of binge eating the last couple months, yes I admit,  and I didn’t know how to control it. Deep breaths, I tell myself.
I’ve decided to change a few things about From Fries To Fit in the new year…one of them being, more dedication and focus on healthy recipes. As a new health blogger, I’ve noticed myself becoming a bit bored with trying to keep up with writing about fitness.
Listen, I’m into it, I swear. It’s just that I’ve found that I’m not that into writing about fitness. I will continue to share some workout stuff in my posts, but the main focus will be on RECIPES! with that, I will be including all of the macros for each recipe. Yeeaaayyyyy!!!

I’ve realized that my main issue…is with food. Yep. I can’t work out all day long. The one thing I need help with is controlling my food and making better decisions in general.
So, with that said…I hope you enjoy all these amazing new recipes coming to you from yours truly;)

BREAKFAST PROTEIN COOKIES!

This has become an absolute favorite of mine! Sometimes good ol’ eggies just don’t cut it.

#1: This recipe is soooo damn easy, you could do that shit with your eyes closed!

#2: The flavor is rich in vanilla and absolutely kills the craving to have the other sugary naughty ones.

Those little brown things…those are carob chips (could also use sugar free chocolate chips, or 85% dark chocolate) . Now, thats optional, and would add a few extra calories to the mix, but they add loads of flavor and frankly….WORTH IT!

The one thing you MUST REMEMBER when cooking with protein powders, is that, they cook very fast. If not careful and aware, these babies can get tough. I say…try as couple batches:)
I made mine in a Breville convection oven, and they were done in literally 6 1/2 minutes!!!!!!

Ingredients
  • 1 scoop vanilla whey protein (I like this one)
  • ⅛ cup almond meal/flour ( I like this one)
  • 1 tsp baking powder
  • 1 large egg white
  • ¼ cup unsweetened apple sauce
  • ½ tsp vanilla extract

Instructions
  1. Preheat oven to 350 degrees
  2. Thoroughly combine all dry ingredients in a bowl.
  3. Using a fork, add in all wet ingredients, and mix well.
  4. removing all clumps.
  5. Using a slipmat, or a parchment paper lined cookie sheet, dollop your cookies using a spoon.
  6. Bake for 6-7 minutes
  7. Recipe makes 6 cookies.
  8. cookies=1 serving

I finally got to sport my new Billabong 4:3 wetsuit that the boo got me for Xmas!!! Yeay! I was amazing to finally not feel freezing in that water. We surfed for a bit, but after my head started pounding ( maybe cuz we had loadzzzzz of wine the night before) I got out and was ready for snacky time. My surfing is still pretty shit. Lol. A day at a time;)

I’m always VERY prepared when going to the beach.I bring a table. (I know…) I stock up on healthy snacks, like nuts, fruit, turkey roll-ups and of course a bit of sparkling wine;) We met up with some friends for an afternoon picnic and headed home.
I live for Sundays……sighhhhhhhhhh
Oh, and guess what…..
I met Marcin’s parents this weekend, and they were beyond cute! They made us a fab dinner along great wine, and (so thoughtful) a sugar free dessert! The sweetest couple.

IT’S THANKSGIVING MAÑANA!!!!

 

Who’s cooking what? I’m dying to know!? Well, I kinda cheated, I’ve already celebrated Thanksgiving:) yep… Last Sunday, and it was a blast. I know weird and early. It was mom’s Bday on the 22nd and we had family in town, so we decided to have it a week early. Otherwise, it would’ve just been us 3 on the actual day. Wompwomp. I’ll be sharing pics on this weekend;) I of course made my classic and (favorite to most peeps) SUGAR FREE CHEESCAKE. Oh and a shaved Brussels sprout dish that I promise to share next:)
Anyway….even though I’ve already had my thanksgiving, you know it ain’t stopping me from continuing to celebrate it till Saturday, at least:) lol. I’ve still got 3 “FRIENDSGIVING” celebrations to feast on!
Listen, it’s totally unrealistic to think that this time of year, is the best time to maintain or even lose weight. Let’s get real chicks. November & December are months of curves! That’s right…I’ve decided to just enjoy everything I want to enjoy, while still keeping a balance. To be totally honest, I haven’t really worked out to much these last couple weeks. Eeeeek, you know what!? WHATEVER!!!!! speaking of balance and enjoying….. Boy have I got a yummy recipe for y’all!!!!!!
WHO DOESN’T LOVE PUMPKIN PIE!? well, you are weird if you don’t. Seriously. I die for pumpkin pie! Well, really… anything that resembles pie. Lol. This recipe was concocted by my MOST FAVORITE BLOGGER EVER!!! Have you ever checked out www.proteinpow.com??? Those of you who are always asking me how I think of all of these weird substitions, well, here’s your answer! Anna from Protein Pow has been an absolute inspiration in my kitchen.

Her recipes are not only super easy, they also allow you to eat all of those yummy flavors and textures that we all loveeeeeee, without the guilt. She uses loads of different protein powders and really interesting ingredients to create the ultimate (& usually very low sugar and carbs) desserts and meals. Enserio….(Spanish;) I don’t don’t the effff she does it.

THE CRUSTLESS PUMPKIN PIE!!!!

These are the perfect texture and seriously feel like the real deal!
I used these little silver tartlet ramekin things, but you could also use a regular muffin tin. Optional & helpful tip: add the silicone muffin cases instead of just filling batter right into the pan. They are really great for “not sticking” to the sides.

Make these tonight! they are sooooooo easy, I swear! Have them ready, refrigerated, and I promise, NO ONE will even think that they are the healthier alternative! Sneaky!;)

CRUSTLESS PUMPKIN PIE
 
Ingredients
  • ½ can of pumpkin puree
  • ¾ cup of liquid egg whites
  • ¼ cup of vanilla ( cinnamon swirl )whey protein powder (I used Cellucor’s cinnamon swirl)
  • 1 tsp of toffee flavoring, even vanilla flavoring (optional….great if you have a gnarly sweet tooth 😉
  • 1 tsp of cinnamon or pumpkin pie spice
  • TOPPING:
  • *unsweetened almond milk
  • *vanilla whey protein
  • *fat free sour cream or 0% greek yogurt.
  • Mix in until desired thickness.
  • *sprinkle cinnamon and crushed walnuts or pecans for crunch!

Instructions
  1. mix all ingredient with a hand mixer and bake at 330 degrees F. for 30-40 minutes. I found that with my more shallow ramekins, I only needed 30 mins, but in deeper muffin tins, perhaps more time. Also depends on oven.
  2. keep checking for doneness. Try using a toothpick through center.
  3. Let cool once out of the oven.
  4. Prepare your protein frosting, top, and serve,

Hi friends! Happy HUMP day! Had such a busy day today in the salon, it was great! Only thing….around 3 pm…I started feeling super sick:( no clue why. Ugh, I hate that. All I wanted to do, was get home, have some soup + oatmeal, and blog:) not too much to report today, but a got a few shots from my Sunday Funday at the beach….some fab new bangles from MADEWELL…white nails, and a super AMAZING mugcake recipe!!! Marcin & I threw together a delicious picnic, packed surfboards, threw willy in the car, and headed north on PCH. It first started out cloudy, but cleared up fairly soon. The surf was pretty small, but super fun! Well, for me at least…I like the small, cute waves;)
Poor Willy, we tried to leave him on the beach as we paddled out, but……apparently….dogs go into full on SAVE YOUR OWNER mode, and he literally leaped into the ocean (no, he doesn’t swim) thinking we were gonna drown! It was seriously the craziest shit I have ever seen him do! Straight pounded by waves, poor baby. We even tried to tie him up while we went out, and he started screaming bloody murder. I mean, has that ever happened to any of you? Wtf! He had to wait in the car…

I just noticed….the boo looks like Orlando Bloom in these pics. Lol. Adorbs.

I gotta tell ya….I get so much inspiration for food, and recipes off all my fitfam friends in Instagram! This particular recipe shouted out to me. Adena, over at PRETTYLITTLEFEAST, posted this not too long ago, and it just had FF2F ALLLLLL over it! PUMPKIN…YESS…CHOCOLATE PREOTEIN…HELL YESSSSS! anyway…
This seriously took me 3 minutes to make. I mixed all the ingredients, in the same bowl I cooked it in. C’mon. Super easy! No excuse!

Chocolate Pumpkin Mugcake
 
Recipe type: Healthy
Serves: 1

Ingredients
  • 2 tbsp chocolate whey protein
  • 1 tbsp coconut flour
  • ¼ tsp baking powder
  • 2 tbsp unsweetened almond milk (I love this one)
  • 2 tbsp egg whites
  • 2 tbsp canned pumpkin
  • a few drops of stevia or 1 packet (if powder)
  • (optional topping: PB2 mixed with a bit of water & strawberries)

Instructions
  1. place ingredients in a greased bowl. ( I used coconut oil spray)
  2. Microwave for a MINUTE.
  3. Continue to cook in 15 SECOND intervals, to make sure you are not over cooking.
  4. Flip onto a plate & add toppings.

You can top this with whatever you want! Greek yogurt, honey, almond butter… I love powdered peanut butter… 85% less fat. I’m all about it. Duh.

LEAN MUSCLE…SHED FAT! PHASE 2!

Hello babes! Happy Wednesday! A little late on the post but a Beautiful start to the week. Finally WEEK 5 (phase 2) of my LIVE FIT TRAINER program has begun, and I couldn’t be more stoked. Finally some shit is about to start going down! Cardio is increased from ZERO to 3-4 days a week including 5 days of weight training. Another exciting part of this phase is the “leaning out.”
Remember the first 4 weeks, yeah, that was all “bulking.”
Now it’s time to shred!

Monday came and went sooo fast! Lots of meal prep going on here! During this PHASE 2, I decided to switch things up a bit. I’m starting to get more outside the box now. Chicken, sweet potato & broccoli kind of got boring so, I’ve now moved on to ground turkey, lean sausage, tuna, and some other fish like cod & tilapia. Brown rice, quest bars, and flax crackers as my starches, and a larger array of colorful veggies. I’m definitely feeling more comfortable with really understanding how much of each macro nutrient I should be eating.
The diet remains pretty similar to the last phase and nutrition is KEY!( 5-6 meals a day. = approx: 20 carbs/ 9 fat/ 24 protein per meal) other than my dinner now has no starch pretty much.

This is considered one of my 5-6 meals in a day. Of course, now, I season everything with mrs. Dash. (NO salt seasoning to reduce sodium consumption)

I’ve measured this out to be less than 200 calories.

 1 sausage link: 120 calories – 6 grams fat ( you could try veggie sausage as well, just not sure how many cals and fat they have.


1/2 cup frozen onions and peppers

 

3 chopped asparagus

1/4 chopped zucchini

***Cooked on non-stick skillet with any organic pan spray.( I like Trader Joes coconut oil spray)

One can of albacore tuna in water. Mixed with your faves.

I make this and have it ready to go. In a Tupperware..in the fridge..ready to grub. Prep is key. I pretty much am always hungry, and if I don’t have stuff made and prepped in the fridge, such as this, or hard boiled eggs, maybe some turkey slices, I will eat whatever the eff is naughty and around me. Lol.

This recipe is simple:

Apple cider vinegar or red wine vinegar ( a splash)
1/2 a juicy lemon
1 tbsp capers
4 chopped cherry tomatoes
1 dollop fat free sour cream
Salt & pepper
A bit of chopped fresh onion
A squeeze of siracha or fave hot sauce;)
(Optional : cilantro)

Ok, sooooo I didn’t completely cut out boring ass lean chicken, cuz the truth is…it is a great source of lean protein, and I do believe I need at least once a day;)
6 oz here folks.
Made a whole big batch of organic brown rice in an ancient rice cooker that I pulled out of god knows where. ( low carb lady hasn’t had “rice” in AGES!!!) anyway, really excited about I cooperating this starch. Before 4 p.m. This is;)
1/2 a cup RICE = a serving

And for my fave part!

This kale Sautée!
Sautéed with shallots and garlic with a bit of coconut oil spray on a non-stick pan
The SECRET To this delicious kale: STEVIA!!!!. Yep. That’s right. Kale tend to taste a bit bitter, so I added just a few drops of liquid stevia to the mix and Voila!!!! Sooooo good! Try it!

On top of my new fitness routines and nutrition plan during PHASE 2, is the introduction to new fat burning and toning supplements. In doind ALLLLLLLLL of my research, I’ve found a company and product that is best suited for me.

Cellucor 

NO Extreme is my (no-creatine ) PRE WORKOUT supp for phase 2 and C4 (w/ creatine for phase 3

HD is my fat burner. On for 8 wks. off for 4 wks cycle. (did not use fat burners during bulking. Phase 1)

CLK is my supp stacked with the HD for toning & sculpting. Also on a cycle of 8 wks on 4 wks off.

BCAA is my Aminos for DURING and POST WORKOUT.

I started busting out my CEP Compression socks for heavy LEG days. I really do find that it helps promote circulation and reduces chances of injury. They take a year to put on my damn feet, haha, but well worth it.

Here she is folks. No filters. just me. I see improvement in muscle definition after just 4 wks of this program! Ok, of course, not near where I want to be, but on my way.

Obliques are making their way to front and center and biceps are slowly but surely reaching for the sky. Listen, it’s a journey. No one said it would be easy. I feel great, strong and healthy. With this program, I’ve found nutritional balance in caloric intake which I’ve always struggled with. Alright time to make those muscles pop now!!!! lol.

 Please don’t even look at that stupid flexing face I’m pulling.Good lord.

ITALIAN SKILLET TURKEY & VEGGIES

ITALIAN TURKEY & VEGGIE SKILLET
 
Prep time

Cook time

Recipe type: SKINNY
Serves: 4

Ingredients
  • 1 package extra lean (1.5 G fat per serving) turkey
  • 1 small chopped onion
  • 5 mini peppers (yellow,red, orange)
  • 4 cloves chopped garlic
  • 3 big handfuls of spinach leaves
  • 4 tbsp Bella Vita (low carb) marinara sauce (i like spicy)
  • ½ cup water
  • 2 tbsp red wine vinegar
  • ½ tsp cumin
  • 1 tsp paprika
  • 1 tbsp Mrs Dash. extra spicy seasoning
  • ½ tsp oregano
  • salt and pepper to taste (easy on the salt)
  • optional: 1 tsp siracha or fave hot sauce.

Instructions
  1. sautee onions and peppers with a bit of salt & pepper on a non stick skillet with oil spray. Med heat.
  2. Once softened, add water, vinegar, and marinara sauce.
  3. mix and add turkey. MAKE SURE TO USE A SPATULA TO KEEP BREAKING UP THE MEAT.
  4. Add all spices, hot sauce and garlic and cook on Low/med heat to avoid drying out the lean meat.

Happy weekend my loves!!! Today is Saturday, ( I’m sure you won’t be getting this post till tomorrow though;) but….I wanted to start catching you all up on how well the LIVE FIT TRAINER program has been going.

I just finished 2 weeks, and I feel super fit. I’ve been lifting heavier than I have ever lifted, without any cardio. Well, except my Zumba class on Mondays;) shhhh. Don’t tell Jamie Eason🙂

Anyway…if I didn’t know the extreme importance of a healthy diet then…… I sure doooooooo now!!!!! Wow! I was actually imaging my body looking like a fuckin gladiator with all this lifting and no cardio, but in fact, the opposite. My body feels tighter, not bigger. Here’s the mistake people make. Lifting heavy with no cardio….and EATING BAD!!!!! That’s when you look big. Because my meals have been super clean and consistent calorie intake, I’ve been able to stay lean WHILE bulking. Genius.

Yes, it’s not the easiest thing to do. Eat healthy all the time. Honestly, this program has you eating beyond healthy. You must make it a lifestyle. Weighing your food, counting your calories, making sure you are in the right %’s within your macros. (protein-fats-carbs) it’s a science people, and I get it. It’s not for everyone.

So far, this is working. It’s also helped me control my binging. Myfitnesspal has kept me feeling really accountable. I’m guessing that’s what I needed. If you want results…you’ve got to make changes in your life that must be permanent. Just like my friends who have had babies…I always tell them when they’re feeling like cows after giving birth, I say… “Hey, it took 10 months to get your body like that, it ain’t gonna take 1 month to take it off!” Ok, not like I’ve ever been preggo, but…its the same thing with women struggling with weight all their lives. It took 29 yrs for my body to look like this, it ain’t gonna take 2 wks to get it exactly to where I want it. It’s about being patient, consistency, and 75% diet & 25% fitness. Your head has GOT to be in it. Trust me, throwing in the towel, which I’ve done many times over, is much easier, but seriously chicks. Lets get it together. Enough already.

Typical morning breakfast:

1/2 cup egg whites, spinach, assorted veggies, and 1/4 cup quinoa scramble with a dollop of Trader Joes fat free sour cream ( 15 calories for 2 tbsp) and hot sauce

Typical lunch:

6 oz lean chicken breast. ( preferably organic, veggie fed) —PROTEIN
1/4 cup quinoa—STARCH
1/2 cup steamed broccoli & zucchini—VEGGIES
Add a tbsp salsa.

Jamie Eason’s Carrot Cake Protein Bars
 
Prep time

Serves: 8

Ingredients
  • 1 cup oat flour
  • 2 scoops vanilla whey protein
  • 2 tsp cinnamon
  • ½ tsp baking soda
  • ¼ tsp salt
  • ⅛ tsp allspice
  • ⅛ tsp nutmeg
  • 4 egg whites
  • ½ cup erythritol, Truvia, or Ideal ( I used xylitol) or even a couple packets of stevia
  • 8 oz baby food carrots
  • 4 oz water

Instructions
  1. Preheat oven to 350 degrees.
  2. Mix flour, whey protein, cinnamon, allspice, nutmeg, baking soda and salt together in a bowl.
  3. Mix egg whites, Splenda, baby food carrots and water (optional) in a bowl.
  4. Add wet ingredients to dry ingredients and mix together.
  5. Spray glass pyrex dish with non-stick butter spray.
  6. Pour ingredients into dish.
  7. Bake 20-30 minutes.
  8. Makes 16 squares.

VEGGIE STUFFED PEPPERS!
These are wildly delicious and only 123 calories for one whole stuffed bad boy!!!! Absolutely amazing!
Clearly, you could add some ground turkey or lean beef, but I’ve already done that here.

This is sooooo easy! Try them out. I’ve been really into using nutritional yeast in dishes lately, and it adds this really fantastic, kind of cheesy taste to things. I am dying over it. Soooo good.
Tis recipe makes 4 large stuffed peppers.
4 servings—- 125 calories per serving. 4 gr FAT. 10 gr NET CARBS. 9 gr PROTEIN!

 

VEGGIE Stuffed Peppers

Ingredients
  • 4 large peppers (any color)
  • 1 large organic zucchini
  • 1 small onion
  • 3 cloves garlic
  • 1 cup organic grated carrot
  • ¾ cup chopped white mushrooms
  • 2 celery stalks (chopped)
  • 3 tbsp peeled canned tomatoes
  • 2 tbsp nutritional yeast
  • 1 egg
  • ½ cup fresh grated parmesan
  • spices: salt, pepper, Mrs. Dash seasonings, oregano, red pepper, garlic powder
  • Topping: Fat free sour cream and onion mix in a pouch.

Instructions
  1. Make a circular cut through the top of your peppers with a knife. remove all seeds.
  2. Set aside.
  3. Chop all your veggies & garlic like pic above.
  4. In a med-lrg pan, greased with a bit of pam or coconut oil spray, add all your chopped veggies, garlic, and seasonings.
  5. Sautee until softened. About 10 minutes.
  6. Once softened, remove from heat, and place in a lrg mixing bowl.
  7. Here, you will add…egg, nutritional yeast, parmesan, and the 3 tbsps tomatoes from the can along with some more seasonings.
  8. with that mix, you will fill the peppers to the rim.
  9. Cook in a small baking dish where they can be standing upright.
  10. Bake for 35 minutes on 375 degrees.

Fat free sour cream ( 15 cals for 2 tbsp) mixed with TJ’S onion mix! Bomb.com. I topped these awesome stuffed peppers with a tbsp of this mix, and fell in love. I’ve been adding a tbsp to everything, especially on my eggies in the morning;)

PROTEIN BEFORE BED!!!
CHOCOLATE CASEIN “rice” PUDDING!

Holy mother of god.

INGREDIENTS:

2 packages of SHIRATAKI Miracle Rice

2 scoops chocolate CASEIN ( I use gold standard)

2 1/2 cups SILK unsweetened vanilla almond milk (30 cals per cup)

1 tbsp unflavored gelatin

2 tbsp fat free sour cream or 0% Greek yogurt

4-5 drops stevia

DIRECTIONS:

Remove “rice” from package, place in meash colander and rinse for a while.
In another bowl, mix 1 tbsp of unflavored gelatin with the 2 1/2 cups of milk & microwave for 1 min 30 sec.
Remove and whisk in casein protein.
Once combined, add stevia & sour cream (or 0%greek yogurt) and mix thoroughly. Place covered in fridge for a few hrs. Eat as night meal.
ONLY 118 CALORIES A SERVING. Serves 3

OHHH and of course, I can’t be forgetting to share my re-feed meal for this week. Lots of sushi last night along with a couple glasses of wine and beer.
How many calories over my max of 1460 you ask?..
Well….this meal took me 600 calories over my macro limit for the day. Taking me up to 2099.
Not bad though. Generally, refeed meals will be around 400-600 over your macros.
Yuuuuummmmmyyyyyy. I enjoyed it like such a fatty.

Happy Tuesday lovelies! It’s been a FABULOUS day today, I must say….I’m absolutely loving my new job at Román Salon!
This morning I didn’t have a client till 11 am, so I took full advantage;) I woke up to my 5:45 A.M. iPhone alarm, thinking I would catch the 6:00 A.M. Hotyoga class at corepower, but instead, I decided to leave that for the evening and take a morning hike:)
Of course I woke up with a rumbling hungry tummy (as I always do) so, I quickly whipped up some super clean ( & low carb) coconut flour/banana pancakes. Here’s the recipe.

MAKES 8 SMALL PANCAKES

8 tbsp coconut flour

1/2 packet of stevia

7 egg whites

2 large eggs

1/2 mashed banana

Dash of cinnamon (optional)

NOTE: they cook pretty fast on a greased skillet, soooo, watch em’
I topped them with a little sugar free honey & figs:)

** RAW NUT BUTTERS

These are usually my go-to baking products. All of these are available at your local health food market, so stock up your pantry, and get to playing and testing in that kitchen of yours! Staying on track of your healthy habits has never been so easy or delicious! Honestly, my substitutions for naughty breakfasts has kept me very satisfied, and I never feel as though I’m “missing out”. Get me?

Before heading out on my morning hike to Fryman Canyon, I made my morning green juice which consisted of the the following:

* 1 big Swiss chard leaf

* 4 Dino kale leaves

* 3 big romaine leaves

* a handful of parsley

* 2 stalks celery

* 1 small Persian cucumber

* fresh ginger

* fresh turmeric

* 1/2 green apple

* 1 lemon
I also have been adding some new faves to the mix:

**whole aloe juice

**chlorophyll
I have really been feeling the difference when having one of these in the morning.

It’s been such a hectic couple of weeks, that my folks offered to babysit Willy for this week, and I couldn’t be more greatful. I’m sorry, but having a pup with severe separation anxiety can be really stressful. I always feel so bad when I can’t be with him all the time. It stresses me out thinking about it frankly. So, luckily…he LOVES going to his grandparents house. Ugh…does it make me a bad mommy that I need a break????:(
Mom, sent me a pic of willy this morning. Look at him!!! Sooo happy! She took him to the park, and he ran wild!

Although pretty foggy still out, the hike was awesome! I would say, the loop ties about an hour all together. It’s a nice balance of uphill/downhill. If your into hiking, or even trail running/racing….you have GOT to get these trainers! They are so lightweight and fit like a dream. Oh, and no laces;) the Saloman Speedcross 3’s are THE ONLY SHOE TO BUY!!

I like seeing shoes worn and dirty. Gives them life.

By now, 8:30 am, I’ve still got an hour to kill before hopping in the shower. God I love this schedule!
Anyway, as you know….the weakest part of my body is my core. I remembered that last night, I had received my Spartan Race WOD email, and I was alllllllllll AB intense, so I threw my tired ass on the floor and started crunching, twisting, lifting, you name it…I was doin’ it. Lol.
Ok….now I’m DONE!

Had a really great day at work. Was fully booked from 11-4, then came home:) a little weird coming home to an empty house. I’m used to Willy crying and jumping up like a crazy for 45 minutes after I walk through the door. Lol.

I almost didn’t know what to do with myself being off so early. I’m used to not getting home till 7 on Tuesdays.
I had a quick snack and headed to CorePower for a 6:00P.M. Hot Power Fusion class. Although a bit tired, I felt really strong in today’s class.

I literally walk out of there dripping. As if I just got out of the shower. It’s so crazy. I tried to take a pic of how sweaty I was, but it really doesn’t suffice. In fact, this is a pretty dumb picture. Lol

I was starved after class, so I reheated some leftover baked salmon, and through it over a big salad. Omg, I just can’t get enough salmon these days. For dessert, I ate another one of those delicious pancakes from this morning. I couldn’t help it. Totally obsessed.
I’m actually in a bit of a food coma right now as I write this, so please excuse my grammatical errors and bad language, I swear, it’s my body telling me to shut the f*%k up and go to bed;)

Before I pass the EFF out, I am super excited about what I recently got in the mail!! Eeeeeeeeeeweeaaaaa, I love my friends at APS. (Allproscience) They have sent me some super sweet samples of recovery to try out. I’m super active, and just as important as fueling your body before a workout is, so is RE-fueling your body after. These are 100% natural, and have no artificial sweeteners. I am so feeling that. I seriously hate gimmicks. These peeps give to ya straight. Hello and good day fabulous friends! I’ve got soooo much to tell you! Like, big stuff!! on second thought…. im gonna save the big personal news for later. For now… even BETTER stuff I’ve got for ya! so, lets get right to it! Most of you know that I am obsessed with my fellow blogger’s site, proteinpow.com, and I’ve been making her broccoli protein bread for what seems to be ages now. Well, loving that recipe so much…I decided to try a little something out.

Every time I would make this broccoli bread, the consistency would remind me of a yummy, squishy piece of pound cake. Ok, squishy mayyyyyy not be the best term. Hmmm, more like soufflé -yyyy, but dense like a pound cake.
Anyway…blah blah….on this morning, my sweet tooth had kicked into overdrive, and I needed something…like, QUICK!

Glancing at her Broccoli Protein Bread recipe, I pondered while my stomach screamed for sweetness. I thought…ok..sub broccoli for cauliflower (milder flavor)…then, sub unflavored whey for vanilla whey….OMGGGGGGGG. ummm, hi NEW FAVE SHIT!
I gotta tell ya’ it’s seriously bomb.com. I’ve been having a portion every morning topped with a little ghee and sugar free honey. This honestly couldn’t be a better way to enjoy your protein powder. I’m sure I’m not the only one who gets sick of shakes, right!?20130807-165055.jpg

 

 

Vanilla Protein Pound Cake
 
OMMMGGGGG!!! amazing…and completely guit-free!
Author:
Serves: 4

Ingredients
  • ½ cup steamed cauliflower
  • ½ cup egg whites (I used organic egg whites from Trader Joe’s)
  • 2 eggs
  • 1 cup vanilla Protein powder. ( I used About Time Vanilla protein)
  • 4 drops stevia
  • 1 tsp Vanilla bean extract
  • pinch of salt
  • pinch of cinnamon

Instructions
  1. Steam ½ cup of cauliflower.
  2. Heat oven to 325 degrees and grease a small loaf pan.
  3. In a medium bowl add all ingredients including steamed cauliflower, and mix with either a handmixer or throw it all in a blender.
  4. Bake for 30-40 min depending on oven. should be slightly browned on top and a bit firm to touch.

Serving size: 2-3 sm. slices Calories: 178 Fat: 2 Carbohydrates: 2 Sugar: 0 Protein: 37

Now….a couple of notes. Although a very easy recipe to assemble, please be aware of the size of pan in conjunction with the cooking time. I used a loaf pan, (not the standard one) if you do use a standard size one, lower baking time.

The best part about this recipe….for 1 serving (3 small slices) there is a whopping 37 grams of protein!!!!!! WTF! To keep sugar and carbs low..choose this brand.I made sure to calculate accurately through My Fitness Pal. Un—believable! Check out the rest of the nutrition facts in the above printable recipe.

I was on one this weekend. Kitchen mode to the max! I boomerang often from sweet to savory, then back from savory to sweet. Story of my life. I can’t win. Pretty much always hungry. Lol.

Eggplant is my JAM! I usually grill it, roast it, even dehydrate it sometimes creating a raw eggplant jerky, but for some reason…have never tried making baba ganoush.. UNTIL NOW!!!! Don’t ask why the hell I haven’t made it yet, cuz I order it every time when at a Greek or Mediterranean restaurant. It’s smooth and soooo yummy. Even people who aren’t such eggplant fans tend to eat this shit up!
Because of the roasting…the eggplant becomes soft, almost caramelized. It’s divine.

This recipe has totally lasted me. The serving is 3 tbsp for 90 calories! amazeballz. I’ve been putting on top of flax crackers, salads, chicken, along side my roasted veggies… You name it! It’s very mild and creamy and I know you will swoon over this recipe!

Homemade Babaganoush
 
Make your own, and save yourself from all the added fat and preservatives!
Author:
Recipe type: Mediterranean

Ingredients
  • 2 med. eggplants (roasted)
  • 1 tbsp tahini
  • 1 tbsp olive oil
  • 2 tbsp fresh lemon juice
  • ½ tsp cumin
  • 2-3 minced garlic cloves
  • ¾ tsp sea salt (can always add more for taste)
  • 1 tbsp finely chopped parsley
  • pinch of paprika (optional)

Instructions
  1. slice eggplants in half. Place cut side up on a baking/roasting pan or sheet.
  2. pierce several times with fork.
  3. Roast at 400 degrees for 40-45 mins.
  4. Once cooked, let sit to cool.
  5. Spoon out meat, and toss the skin.
  6. Place roasted eggplant, along with all other ingredients into a Vitamix or food processor and pulse or blent until desired consistency is met. Smooth is ideal.

Serving size: 3 tbsp Calories: 90 Fat: 5 Carbohydrates: 12 Sugar: 5 Fiber: 7 Protein: 2

First up…
My first time buying sushi grade wild salmon. Holy mother of pearl!!!!! Why haven’t I EVER done this!? I bought a huge slab and have been goooogoooo gaga-ing for 3 days straight! I’ve now stuck the other piece in the freezer to grill later. For some reason, while at the Sunday market, I always would just pass by the fish guy, and pay not an ounce of attention. On this day, I was alllllll about it. Maybe it’s because my red meat eating days are pretty much behind me for the most part.

Just look at er!!! She’s perfect! Juicy and ripe! That’s right. This is my ultimate. I could eat 5 in a row. They are the tastiest crop right now. The MANGO NECTARINE. I’ve even been throwing them in my morning juices and it makes my life complete!!!

Helooooo..helllllllllooooooo! I’m back! Just feeling like I’m finally getting back into my groove and this week has started off AMAZING! My house is still a bit messy, but hey. Whatever.
Started off the week full force at the gym and now a proud new member of COREPOWER yoga.
I’m really into it right now, and the best part…. It doesn’t irritate the tendonitis! Thank god. I used to loathe yoga, now…it’s the ONLY thing that makes me focus in every sense of the word. My breath…awareness in my body and allowing myself to truly understand how to clear my racing mind. So into it! I’ve been doing the heated fusion classes, but still really enjoy traditional and non-heated.
Anyway… I am feeling strong, and I’m enjoying my new practice and progress.
What are you guys into right now? Do you listen to your body?

My breakfasts lately have been incredible POG’s!!! that’s right.. (pots of greatness!) my Instagram friends inspire me to change it up constantly. 1- to stay excited about clean yummy foods and 2- especially to avoid binging eating.
I literally fill a mason jar full of super delicious & nutritious foods such as

I was at my folks house (house-sitting) so we decided to hit up Urban Home. There she was..in all her glory. My new desk! ok, it may or may not actually be a dining table…but eff it. Honestly…the pic just doesn’t do it justice, and no it’s not 2-toned wood. It’s the light. So annoying. I swear, it’s really pretty. Best part, it’s a bigggg ol’ thang! ok.. So I bought it, then we both realize….”um, how are we gonna get this to my house 25 miles away.?” Mos def not in my VW Golf. Lol. Figuring this out mañana… Also a few more items I need to find…preferably like, tomorrow….

Reviews are fun! Not only do I get to sample some really great products, ( sometimes not so great 🙁 lol) but It allows me to share with all of you, foods and products to encourage continues success in your fit and healthy lifestyle. So first up… DETOUR BARS.
I tried these for the first time at the Blend Retreat a couple months ago, and had a secret crush on them, particularly the new flavor. Neapolitan. Well maybe cuz that was my favorite ice cream flavor growing up. Seriously.
The lovely folks over at Detour, sent me a lil box to get me hooked, lol. I also had a copule of friends, who aren’t Neapolitan obsessed, try it to see if they would be into it….and the main consensus, “MMMMMMM, YUMMMMMMM. That’s lovely.”
This is a LOW SUGAR, WHEY PROTEIN BAR.
I don’t think it’s considered a meal replacement bar. For me, it’s a snack bar. Mid day, or after a workout in between meals.
It is actually low in sugar, but I’m not a huge fan of sugar alcohols. I used to not mind them, And I’m sure a lot of you also don’t, but lately, I’ve noticed that when I consume certain sugar alcohols, I get gassy, and bloated. Not cute.

What I absolute LOVE, is the taste! Not too sweet at all! Pheeeew. Some bars are so sweet it almost makes me sick! These are the perfect texture. Slightly nougat-ty, with no chalky after taste.

When doing my research on this product, I came to realize how much our food system has changed! French Vanilla:)

The thing with “French Vanilla Protein Powder” is that they all sort of taste the same to me. I like to switch up brands to see if I feel a difference between different “qualities” rather than “flavor. What I’m trying to say is,that you can tell this particular protein is better in quality.

The great thing about purchasing “Vanilla” is that, it can be used in sooooo many ways. You get your monies worth. It’s got more of a subtle taste compared to some of the other flavors. It’s easy to mask the vanilla flavor a bit, not so much with chocolate or strawberry.

On this particular morning….I was having a gnarly craving for protein pancakes.

Since I’ve been knocking out my GPP Fitness workouts first thing in the morning, I am starved and my muscles are craving protein by the time the clock strikes 7:00 AM. LOL.

This would be the perfect time to sample my French Vanilla APS Protein in baking!

I topped mine with a bit of Nature’s Hollow (sugar free) honey, sprinkled with hemp seeds, and a dollop of nut butter.

Play around with this…top with different fruits, seeds, and yogurts.This is a great staple recipe. Try it with different flavor protein powders.

Blueberry Protein Cakes

Light and protein packed, these cakes are meant to rev up your metabolism. Who doesn’t love pancakes? Now, you can enjoy them guilt-free. Add these into your LEAN MEAL plan today!

Serves: 1

Ingredients
  • 1 packet / 1 serving APS French Vanilla Grass Fed Whey Protein
  • ½ tsp baking powder
  • Pinch of cinnamon
  • ½ cup egg whites
  • A handful frozen (prefer organic) blueberries.

Instructions
  1. In a bowl, mix dry ingredients first, making sure to really work in that baking powder (it tends to clump)
  2. Add egg whites and mix well.
  3. A hand mixer is ideal to remove all chunks, but if you’ve only got a whisk, then whisk away!
  4. Fold blueberries in last.
  5. Grease a small skillet, spoon in batter.
  6. **Please note, that the batter consistency is quite liquidy, so they do expand. Using a small skillet keeps them the right shape.
  7. **Also don’t pour too much batter at once.
  8. MAKES 3 HOTCAKES.

Notes
You can top with whatever you want! In this recipe, I topped my hotcakes with RAW HEMP SEEDS, and SUGAR-FREE HONEY

PROATS (PROTEIN OATS)

Another GREAT way to add APS French Vanilla Protein is to add it to your oats! Yes..I call them PROATS. Don’t judge. It’s what they’re called in the gym world. Get into it.

Oats are great for you. If you’re gonna eat carbs…eat oats. They are a fab source of fiber, vitamins, and minerals, and are very low in fat. Although good for you, they can really get boring. And…frankly, I won’t be adding sugar, raisins, and whole milk to them any time soon, so this is my delicious alternative.

The perfect nutritionally balanced meal. Fuel your muscles with this power meal!

Ingredients
  • ½ cup oats (old fashioned,plain)
  • 1 packet/1 serving APS French Vanilla Grass Fed Protein
  • ¾ cup water
  • ¾ cup Unsweetened almond milk (I LOVE this one)
  • ½ tsp cinnamon
  • ⅓ cup egg whites
  • OPTIONAL:
  • * Psyllium husks (for added fiber)
  • * A few drops stevia if you like a bit sweeter. Taste as you go!
  • * Chia seeps sprinkled on top
  • * A tbsp of your favorite nut butter. ( I LOVE this one)

Instructions
  1. In a bowl, mix ½ cup oats and APS protein powder. Add boiling ¾ cup water.
  2. Stir well.
  3. Now, add ¾ cup Almond milk, stir and microwave for an extra 40 seconds.
  4. Add egg whites, and microwave for another 40 seconds- 1 minute.
  5. Add in cinammon and any other optional ingrediets!

Serving size: 1 Calories: 364 Fat: 7 Carbohydrates: 32 Sugar: 3 Fiber: 4 Protein: 43

Again, I used the french vanilla whey in this recipe, but do not hesitate to switch it up. Chocolate would be great as well, add a lil stevia, a tbsp of cacao powder, and throw in some cacao nibs and VIOLA!

Ok, sooooo….. this one’s gonna knock your socks off! Let me tell you, I LOVVVEEEEEE CHOCOCLATE!!!! If I could have it morning, noon, and night….I WOULD. For real.I’ve tries a few different chocolate WHEY proteins, but this one is by far the smoothest, lightest, and NON-grainy. Probably due to their high grade ingredients. I’m telling you people!!!!! Do your research! The reason why I liked it better, was that it wasn’t so sweet! I’ve had some issues with some of the chocolate protein powders being over the top sweet. No thanks. I can add stevia if I want it a bit sweeter, you know.

I make it a priority to make these fun, yummy treats for myself because I deserve them;) Plus, I want to have something really AMAZING tasting, that is healthy for me, not something that is gonna jeopardize my hard work everyday at the gym, training at home, or my dancing. I want results.

I tried the Bavarian chocolate in a shake, but I wanted to get down on some baking with it, so this is what I got!

Pretty standard single serving protein cake, but it won’t ever get old.

Instructions
  1. In a bowl, mix dry ingredients first.
  2. Then add egg whites and almond milk.
  3. (add a few drops stevia if you would like)
  4. Mix very well!
  5. Bake at 350 for 8-10 minutes

Serving size: 1 Calories: 290 Fat: 4 Carbohydrates: 14 Sugar: 3 Fiber: 4 Protein: 44

With this recipe, be mindful of over cooking. Check it at 8 mins, but for sure out by 10 minutes. It should be soft and moist. If you don’t get it the first time, don’t fret, most likely your oven runs a bit hot. Keep making it and playing arund with this, cuz it’s sooo worth it;)

** I topped mine with some raw cacao nibs, which did I mention, are natures’ #1 antioxidant. Yep.

OPTIONAL TOPPINGS:

* 1 tbsp nut butter

*0% greek yogurt

* Sugar free honey/syrup

* 1/2 tsp coconut oil or ghee (especially if you dried it out a bit)

SWEAT PINK SWEAT PINK SWEAT PINK!!!!

Since I was a little girl…(here we go) lol…I have been strawberry obsessed! Fresh strawberries, Strawberry ice cream, Strawberry paletas, strawberry milk, it keeps going. You catch my drift. I’m just gonna go ahead and say…I’m pretty much a STRAWBERRY connoisseur. I’m not surprised that I left this for last!

ok, so here’s the deal. The last Strawberry protein that I tries was About Time Whey protein. It was really damn good! So I was curious to see how this one would match up. In shakes, I prefer the About Time…In baking or other stuff…I way prefer APS Grass Fed. Now, this is strictly on flavor…..As far as ingredients and supplements, I think APS is a bit better quality, most likely why it probably tastes more natural, but About Time has less sugar and carbs. Only by a few, not a huge difference, but you choose;)

These are so incredibly easy to make, your 6 year old could make them! Andddddd……. with 4th of July around the corner, why not cheat like everyone else?! Except….. you’re not really cheating with these perfect little morsels. Trust me, they taste like a total cheat. 😉 That’s part of the fun! A little red, white and….pink..Hmmmmm. You get it.

 

MINI STRAWBERRY PROTEIN MUFFINS

The strawberry flavor is just the perfect amount and not too sweet. They are delicious. This recipe made 9 minis, I’ve scarfed down 5 already today….I feel no remorse. lol. Only LOVE!

REMEMBER:

For  NET carbs, Minus the fiber from the carbs to calculate NET CARBS.  Carbs from fiber do not affect blood sugar levels, like carbs that aren’t from fiber.

Mini Strawberry PROTEIN Muffins

With 4th of July around the corner, these are the perfect little treat! They’re bite size and look super cute. Moist and delicious!

Ingredients

Instructions
  1. MUFFINS:
  2. In a medium size bowl, mix all dry ingredients first. Protein, coconut flakes, baking powder, and coconut flour.
  3. Add egg whites, chobani, and almond milk and ½ ripe mashed banana.
  4. Put in blender or use hand mixer to thoroughly mix batter.
  5. Chop up 3-4 washed strawberries and FOLD into batter last.
  6. Grease your mini-muffin pan. I used a 12 mini muffin pan. You can also make regular sized muffins, you just may have to alter the time)
  7. Bake at 350 for 8-10 minutes
  8. (MAKES 9 MINI MUFFINS)
  9. YOGURT TOPPING:
  10. with a hand mixer whip the yogurt, stevia, and vanilla until smooth.
  11. place the whipped topping in a pipping bag and swirl on top of muffins. (you could also use a plastic baggie, and make a small hole in the corner to pipe the yogurt swirl.)
  12. top with fresh strawberries.

OH HEY BODYBUILDER!

Tired of all those protein bars out there, full of sugar, additives, and ingredients you can’t pronounce?? I AM!!!

The only protein bars that I’ve found so far that I absolutely LAAAAV are QUEST BARS, but honestly, they can get quite expensive sooooooooo….this is the best alternative I’ve found, plus I’m obsessed with pumpkin. All year round.
I’ve made sure to attach a printout option as well as the nutritional facts.

Healthy Protein Pumpkin Bars
 
I cut these in rectangles and wrap each one in foil. They are a perfect on the go protein snack.
Ingredients
  • 4 egg whites
  • ¾ cup organic (canned) pumpkin
  • 1 tsp vanilla extract
  • 2 tbsp sugar free honey (Natures Hollow)
  • ¼ cup oat flour (I just ground up my oats in a coffee grinder, but could also use a food processor or bullet)
  • 2 scoops vanilla protein powder. I use About Time Whey
  • ½ tsp pumpkin pie spice
  • ½ tsp cinnamon (or less if you feel so)
  • ½ tsp baking powder
  • Optional: crushed walnuts or pecans sprinkled over the top before placing in oven.

Instructions
  1. Preheat ove to 350 F.
  2. In one bowl, mix the egg whites, pumpkin, vanilla extract, and maple syrup.
  3. In another small bowl whisk the oat flour, protein powder, and all the spices along with the baking powder.
  4. Add this to the wet ingredients and make sure to mix very well.
  5. Pour mixture into a baking loaf pan or a square pan coated with cooking spray.
  6. Add the nuts if you want over the top.
  7. Bake about 18-20 min or until a tooth comes out clean. Enjoy!

My diet has been yo-yo-ing for a bit now, and realize that is the reason why my body isn’t changing much. Those of you who know me, know I’m quite extreme when it comes to it. I’m trying not to be so obsessive and stress so much about it, so in light of my obsessive/binger nature, I’ve decided to go 50 DAYS STRONG without cheating or binging to try and alter how I view food.
It’s funny, I was gonna do 100 days, but then realized that my best friends wedding was during that time and thought…hmmm, ” ain’t nobody got time for dat” and frankly, 100 days would be really Elgin hard for me, so lets start here…
50 days. I am again, breaking up with food. Kinda feels like I’m going sober.

I find that if I write down the workout plan for the week, I’m most likely going to stick to it.
Does it help you at all? Lately, I’ve been trying to lift more. I’ve been good on my cardio, but I feel like my muscles are getting smaller. Ugh.

Better late that never, eh!? Hope everyone enjoyed a beautiful, sunny in LA, weekend!;) I certainly did. If you don’t know me by now, my “after weekend” posts usually include a sunday fam BBQ day, and what kind of person would I be, of I didn’t post every one of those special Sunday’s pics. To most of you, they look the same as every past Sunday’s, but to me, it’s about catching up, enjoying my folks, their backyard, the dogs running around like psychos, mom and I spending too much money bargain shopping, trying to convince dad to build me something ” rustic, yet contemporary” ( I need a new desk) LOL, oh and the best part…. Stuffing my face with red meat, chorizo, and blood sausage. It’s my once a week VICE.

Here are some highlights;)
New favorite POWER protein Breakfast:
1/2 cup egg whites
1/2 mashed ripe banana
A few drops vanilla extract
1 tbsp raw nut butter
1 tsp flax meal or flax seeds
1 tsp unsweetened shredded coconut.
I know sweet eggs!?

Best damn kale chips around y’all. Brad’s RAW Foods offers kale chips that are packed with the best flavor. I’ve tried loads of different brands and these by far are the crunchiest, and healthiest:)

Btw, sorry I’ve been neglecting fitness pics, but…thing is, I’ve been so focused on my ZUMBA training, that I haven’t really had the time to do any other kind of workout lately. I get certified this week!!! ahhhhhh So I thought I’d let you know….I’ve been doing ZUMBA 4 days a wk. oh, and in between, practicing at home or with my headphones at work in while dancing like a freak in the staff room. Yes, I am the only one hearing the music, so everyone’s like WTF is she doing. Lol.

Anyway, now that I’ve confessed the fact that I haven’t been at the actual GYM, we can move forward with this post of mostly food;) hehe.

Sunday BBQ prep. Salad with cilantro, green onions, tomatoes, lemon, red wine vinegar, olive oil, and oregano.
About to sautée some brussel sprouts.
And cook up some sweet potato as mom and I’s carb of choice.

We also shared a really great bottle wine. Then, we decided to go shopping. This is probably how I managed to spend way too much money “bargain shopping.” Two cart’s full of stuff, does kinda cancel out the fact that you’re getting a good price. NOTE: avoid shopping and drinking.

I must say….. It is perfection. not too sweet, not at all “veggie” tasting, and it’s virtually GUILT-FREE. Cake & coffee, precisely what I needed after spending too much dough. I swear, give me cake, and I don’t give a shit about anything else. Hahaha.

Have you ever gone to M Cafe???
Well, if you haven’t had the pleasure yet, I highly recommend it. Granted, there are some things, I’m not such a big fan of, but there is one dish in particular that I’ve completely fallen head over heels in love with. M cafe caters to a healthy macrobiotic diet/lifestyle. Read more about macrobiotic here. I searched high and low to bring you the best version of M cafe’s KALE SALAD WITH SPICY PEANUT DRESSING.
his is huge news….. You’re gonna freak out, and yes, you will thank me. Kale can sometimes get a bit boring, so this recipe really spruces up your relationship with it.

The original recipe calls for regular ol’ natural peanut butter, but I thought I’d switch it out for a less fattening option….my trusted PB2 will do just perfect. ( scroll to the right, click on specialty foods, and scroll through the pages, you will find pb2 on my amazon faves!)

I’ve attached a print- friendly recipe for you to grab. I made this so quick, oh, and I ate it just as quickly;) it’s super easy!
1. Blanch the kale
2. Sautée shallots, onion, garlic
3. Make your spicy peanut dressing.
4. Combine, garnish, and serve;)

“M Cafe” Kale Salad with Spicy Peanut Dressing
 
Obsessing over M CAFE’s Kale salad…..naturally….I HAD to make it! Delicious, with a kick, and outrageously healthy;)
Ingredients
  • 1 large bunch kale (about 3-4 cups)
  • ¼ red onion, sliced very thin
  • 1 shallot
  • ½ tsp high heat oil. (I used safflower oil)
  • Spicy Peanut Dressing
  • ½ cup PB2 (1/2 cup when mixed with water) Or natural peanut butter, but will raise the fat content
  • 1 Tbsp Nature’s Hollow honey
 (sugar free)
  • 2 Tbsp low sodium soy sauce
  • 2 Tbsp brown rice vinegar
  • 1 tsp. garlic, minced
  • ½ tsp. ginger, minced
  • ¼ tsp. cayenne pepper
  • ⅛ tsp. salt
  • 1 ½ oz hot water

Instructions
  1. 1. Remove the kale from the stems. 
Add a pinch of Salt to a pot of boiling water, then blanch the Kale for 3 min. 
Remove the Kale from the boiling water and shock it in a container of ice water. 
Finally, squeeze the excess water out of the cooled Kale.
  2. Sautee onions and shallots with a bit of salt and pepper and ½ tsp oil until softened. Set aside.
  3. Spicy Peanut Dressing: Place all dressing ingredients into a blender. Blend until mixture turns into a smooth consistency.
  4. Drizzle the dressing on top of the Kale and onions, and mix the kale and dressing together until kale is evenly coated. Garnish chopped peanuts.
  5. *Makes enough to dress 2 large bunches of kale. Stores well refrigerated for up to 6 weeks.

Notes
Note: I used PB2 to cut down on the fat, but you can certainly use all natural peanut butter.

Kyodan NO SLIP headband! New obsession, especially now that I’ve got these damn bangs I got to get outta my face! Ugh. No more having to bobby pin them back. This headband doesn’t budge through my whole 1 hour ZUMBA session, and trust me, I whip my hair back n’ forth like it’s goin’ outta style!

TGIF! That means….one more day before the weekend, which means, one more day till I’m in VEGAS! Ok, I must be tell you….I’ve never been such a Vegas fan. It’s always reminded me of a dirty place where people go and do naughty things, and get away with it with a simple, “What happens in Vegas, stays in Vegas…” But, as I’ve gotten older, I’ve learned to appreciate the space, the lights, the food, the architecture, and the beauty behind the trashiness;) needless to say..I need a mini vacation!

I didn’t sleep very well last night due to the sound of pouring rain, the new mattress, and the lack of blankets, in which I realize now, are too small for my new big bed, but im hoping to have a relaxing, fun, spa weekend to revamp, and go into next week feeling amazing!

Anyway… Before I take off, I wanted to share this fabulous little recipe with you guys as I promised on my instagram last week. This recipe was inspired by one of my favorite bloggers, ProteinPow.

Ok, so, before you get all cookin’ cray cray, I wanted to share with y’all some must have baking staples that are always at an arms reach in my low carb kitchen. Click the “pin” button below to share this grocery baking list, and share the wealth;)

Mini Blueberry Protein Muffins

I had 3 this morning. Lol. Delish.

INGREDIENTS:

1/2 cup of liquid egg whites

1/4 cup of rolled oats

1/4 cup of vanilla whey protein isolate

1 tbsp of coconut flour

1 tsp of xylitol or erythritol (optional for a sweeter muffin)

1/2 tsp of baking powder

1 tbsp 0% Greek yogurt, fromage blanc or low fat cottage cheese

1 tbsp mashed banana.( you could even use mashed sweet potato too;)

Fresh or frozen blueberries ( a handful)

A couple of things:
Before getting into the assembly of this recipe, I gotta tell ya, if you don’t have vanilla whey, it’s ok. You can use unflavored and just add a dash of vanilla extract, and add the optional sweetener.

Also, add your blueberries last, otherwise, you’ll end up with blue muffins;)

DIRECTIONS:

Pre-heat oven to 320 degrees
Grease a mini muffin pan. My recipe ended up making 7 minis. I guess it depends on the pan how many you end up with.
Mix dry ingredients in a bowl, then add your wet ingredients.
I used my vitamix to quickly blend ingredients, but you could also use a hand mixer or any blender.
Do not fill to the top, leave room to rise.
Cook at 320 degrees for 15-20 mins. Check at 15, may need more time. Every oven is different.

nutrition facts:
Cals per muffin (1 out of seven) 45 cals
Carbs per muffin: 3.5 grams
Protein per muffin: 5.5 grams
Fat per muffin: 1 gram
Fiber: 2.5 grams

Hey guys! Hope the week was amazing for all of you! It’s a gorgeous day in sunny LA, and I’m sooooo looking forward to a weekend laying by a pool somewhere;) can you tell, I’m so ready for summer? This post is primarily focused on breakfast recipes. I’ve been getting a lot of questions lately specially about my protein pancakes, so he they are!

So now, I invite you all to enjoy Saturday morning breakfast with me. Well, Sunday brunch too;) I’ve got some yummy low carb, protein filled, über healthy recipes for you to try this weekend!
I never skip breakfast, and neither should you. After all, it is the most important meal of the day, and those who know me, know, I eat like a queen in the morning. It sets the tone for your day, so make it count, and make it clean!

The whole “oats” thing is new to me I must admit. Being on a pretty strict Low carb diet, (with the occasional carb/sugar binge) I never really got into them…but now that I’ve upped my cardio and weight training, I’ve been advised that perhaps incorporating these fiber packed bad boys into my diet, it would be super benefitial.

So here it goes,

CHOCOLATE COCONUT PROTEIN OATS ( with banana..optional)

INGREDIENTS:

1 packet or scoop of About Time chocolate/peanut butter whey protein

3/4 cup organic oats

1 tbsp unsweetened shredded coconut

2 tbsp fromage blanc ( I use Vermont creamery)

1 tbsp raw cacao nibs

1/2 cup silk unsweetened vanilla almond milk

1/2 cup water

4 drops stevia

Optional : vanilla extract and 1/4 cut up banana

DIRECTIONS:

Pour oats in a bowl.
Add milk and water and microwave on high for 1 1/2 minutes or boil milk and water and pour into bowl of oats. Whatever is easier. Add in the rest of your ingredients, mix well and top with banana. Let sit to allow for the oats to soften.
Enjoy!

There are so many different ways to enjoy these pancakes. The foundation is easy. Simple…just your favorite protein powder along with 3 egg whites, and add whatever you want to the mix or for a topping.

Vanilla Pumpkin Protein Pancakes

A low carb way to enjoy an American staple!
Ingredients
  • 1 large scoop of vanilla whey protein
  • 3 egg whites
  • 1 tbsp canned pumpkin
  • a pinch of cinnamon
  • a pinch of nutmeg
  • (vanilla extract optional)
  • 4 drops stevia

Instructions
  1. Pre heat a skillet. (batter can be quite runny.
  2. grease with a bit of coconut oil, or smart balance spray.
  3. in a bowl, mix dry ingredients first, then add egg whites.
  4. mix well, to ensure no clumps.
  5. spoon in batter.
  6. they cook really quick, so keep your eye out

Notes
optional: I love using Natures Hollow sugar free honey over this, its amazing. also, try with a dollop of your favorite nut butter, and fruit!

Ok, so this next recipe is from a friend, fitchick428 on instagram! This chick is FIT, and is constantly knocking it outta the park. I follow her religiously and her recipes are nothing short of delicious and, of course, CLEAN,CLEAN CLEAN!! She posted these pretty little donuts and I couldn’t help, but get my ass in the kitchen to try them out. They were so good I had 2 1/2 donuts in one sitting with my coffee and had absolutely no guilt about it. None:)

Blueberry Cake Donuts

Low Carb Donuts!
Ingredients
  • ¼ cup + 2 tbsp almond flour
  • 2 tbsp coconut flour
  • 2 tsp psyllium husks or flax meal
  • ¼ cup baking stevia or erythritol (or coconut sugar for paleo)
  • ½ tsp baking powder
  • 1 egg
  • 2 lrg egg whites
  • ¼ cup blueberries fresh or dried (no sugar added)
  • non stick spray or coconut oil

Instructions
  1. Pre heat your oven to 350 degrees.
  2. Spray your donut pan with non stick spray (or coat with coconut oil).
  3. In a bowl combine all your dry ingredients: almond flour, coconut flour, psyllium, stevia and baking powder. In a second bowl whisk together your egg, egg white, vanilla and coconut milk.
  4. Combine your wet and dry ingredients. Mix well.
  5. Fold in your dried blueberries.
  6. Divide the batter evenly among 4 donut molds.
  7. Bake for ~ 20 minutes or until the spring back when touched.

 

CINNAMON PUMPKIN MINI MUFFINS WITH ALMOND/MAPLE GLAZE

I absolutely LOVE anything pumpkin. It’s a great source of fiber and always make me feel like autumn is in the air:) Although not at all the case, the flavor is something I can’t get enough of. I suppose you could also sub pumpkin for sweet potato or butternut squash, but I haven’t tried it yet. This is my third time making these, and I swear, never fails, I can never just have one:)

Cinnamon Pumpkin Mini Muffins with Almond-Maple Glaze

A great way to enjoy a muffin while practicing portion control AND start your morning off with the perfect balance of protein and carbs.

Cuisine: American
Serves: makes 6 mini muffins

Ingredients
  • ¼ cup pure unsweetened canned pumpkin
  • 1½ scoops vanilla whey protein
  • 1 tsp pumpkin pie spice or (cinnamon, nutmeg, ginger)
  • (or sub these last two ingredients with GASPARI NUTRITION Myofusion Pro- Cinnamon roll)
  • 2 tbsp coconut flour
  • ½ tsp baking powder
  • ⅓ cup egg whites
  • GLAZE:
  • 2 tsp almond butter
  • just under ¼ cup sugar free maple syrup (recommended: Vermont by maple grove)
  • dash of cinnamon

Instructions
  1. Preheat oven to 375 degrees.
  2. In a bowl, mix all ingredients for the muffin batter
  3. Spoon into a small cupcake pan that has been sprayed with non-sticking cooking spray.
  4. Place in oven and bake for about 10-14 minutes. Be careful not to overcook.
  5. Remove from oven, and allow the rolls to cool slightly.
  6. Microwave the glaze ingredients for about 15-20 seconds. Remove from microwave and stir well.
  7. Dip tops of mini muffins in the glaze mixture, set on a rack or plate to cool and sprinkle with cinnamon.
  8. To maximize freshness, store leftovers in fridge.
