Good day, good day beauties…. You know what I LOVE about, What I Ate Wednesday’s……… WHAT I ATE ON WEDNESDAY;)
Since I am not in the salon anymore today, I really get to sit, create and enjoy some great lookin’ meals. Well, you be the judge;)
I am finally starting to get back into the groove of things after a very exciting and fun weekend away at the blend retreat. I taught Zumba this morning at 10:30, and to be honest, I didn’t know if I was gonna make it through it! I am still sooooooooo
Sore from the GPP workouts, that yesterday, I needed help walking down the stairs! Geeeeez. Whatever…suck it up Paula, you loved that shit. Oh yes I did. Can’t wait to start my GPP Fitness ritual starting next week.
6 days on- Sundays off. Yikes. Nervous to be doing these alone. I will be posting the workouts, so please do them with me;)
Anyway…. Sorry, I get distracted.
BREAKFAST 8:00a.m.

1 small slice of Brocolli Protein Bread (recipe to come)
Organic low salt turkey breast
Hard boiled egg whites
1/2 a kamut cake with Natures Hollow sugar free (made with xylitol) raspberry syrup & New York super foods chia peanut butter.

Seriously, you need to get down on this ish. CHIA PEANUT BUTTER! ok, I love all nut butters, and since I am a fanatic, I like to try out every single one on the market! I don’t like to get bored you see. This was a really nice alternative!

This company is family owned, and family run. You what that means. Small business usually keep it tight to make sure they can offer a really great product, with organic, clean, non-gmo ingredients. The guys at New York Superfoods create products for active individuals with all natural, gluten free Superfoods. No, they did not ask me to review them, this is just what I do sometimes. You need to know what’s out there, especially if I you are into health and fitness. Stay educated on products in the market that we can utilize to enhance life and performance. Plus, who doesn’t love CHIA?!

I considered today, a special Wednesday. You know why? Cuz I got back from Utah with soooo much swag to try! Woohoo!
I tried my first scoop of Fit mixer today for much needed energy. It was pretty great! I liked that there weren’t any artificial ingredients, and that it truly felt good in my body. It also contains natural colors and flavors from beets, strawberries, and coconuts, and is naturally energizing due to its main ingredients of Palatinose and green tea and green coffee extracts. I was on fire today, and actually burned 40 more cals than I have been lately:) Maybe it’s because This stuff contains Raspberry Ketones to help you burn fat quickly while maintaining energy levels throughout your workout*. It also delivers Palatinose, a slow-burning carbohydrate designed to support sustained energy throughout the day
I’m gonna keep it up and see how it works out for me. We’ll see. Curious to try their other products.

Another product I tried today ( 2 hrs before teaching) was Shroom Tech by Onnit. I’m usually quite weary about changing around my supplements. I honestly usually just stick to CLA, green tea, protein, and an energizing mixer per-workout, but, since hearing a lot of buzz about this company, and once chatting with them at the retreat this past weekend, I was very interested. Today was my first day, so I’ll have to revisit this product & review once I start becoming more aware of how my body is being effected.

I, no surprise, am like a starting child after class, so I made sure to pack one of my homemade blueberry protein shakes to take with me. I swear, if I try are run around town after class, and don’t put anything in my belly, I will start to convulse. Hardly, but vey O-so very shaky. Not cute. This holds me over and tastes like a dessert;)

Vanilla Blueberry Protein Shake:

1 scoop About Time Vanilla whey protein.

1 cup 30 calorie unsweetened Vanilla Almond Milk by SILK.

2 heaping tbsp of 0% CHOBANI Greek yogurt

1/4-1/2 cup organic frozen or fresh blueberries

4 drops NuNaturals stevia extract drops

2 drops of vanilla extract

3 ice cubes

1 tbsp chia seeds

I had lunch with a girlfriend at this AMAZING Place in North Hollywood called HealthyCA.
This place is a total hidden gem! It’s mostly a catering place I think, cuz the actual restaurant portion is tiny. They can really only seat a handful of peeps there, so your best bet is to walk in, order at the counter, and ask for it to go. Te pics say it all. We couldn’t quite make up our minds as to what each one of us wanted, so we opted to split each entree. I like to share and try everything;)

I mean, seriously. I kinda want to make it a ritual of going there every Wednesday, and calling it a “treat meal” cuz it ain’t no ” cheat meal” that’s for sure. It couldn’t get more, CLEAN, ORGANIC AND GLUTEN FREE.

Finally….NAILS. I got a proper mani/pedi and enjoyed every bit of it. I was getting GEL nails, but decided to give my lil nails a break. Plus, I can’t help but get a bit freaked by those uv lamps they make you stick your hands under. Can’t be good after a while. I would always forget to put sunscreen in my bag:(

I used to do the spa chairs, until one of my friends got fuckin’ mersa ( flesh eating bacteria in her toe) from the bowl not properly being disinfected. Hell no, I’ll stick to the disposable plastic tub inserts. Byeeee

My new favorite “before dinner snack”. All of you, I’m sure, know I DIE for cottage cheese. This concoction I believe I’ve shared on Instagram before. I could have it every single day, I no lie.

Happy Thursday fit friends!! Not much to report today, but I honestly feel crazy if I don’t catch y’all up! My FF2F 50 days clean eats/no cheats is going really well! Well into it now, and I feel fantastic… Ok, I must tell you though…I have had some wine, oh and maybe a margarita….buuuuuuuut I’ve so so balanced lately, don’t I don’t consider that a cheat. Whatever, judgers. 😉

Anyway…my typical breakfast…. Egg whites are ALWAYS up in there. This was yesterday….

Egg white scramble with sautéed kale, red peppers, no salt organic turkey slices, green onion, and a bit of Homeboy Salsa. I always buy homeboy products because I LOVE what the company stands for, and of course, super duper tasty. This non-profit organization, Homeboy Industries, provides rehabilitation services and job training to ex-gang members and announced the launch of its first consumer products, salsa and tortilla strips, for sale through mass-distribution at over 256 Ralphs locations across Southern California. Pretty incredible. Please take a moment to watch this video to understand truly who incredible they are!

Bottom line: HUGE FAN.

 

My morning read. Women’s Health Magazine. Pretty much, the best FIT read out in my opinion. I especially HAD to have it when I read the front cover…”BEST ABS EVER!” as I stood in line at Target the other day. WTF, are you kiddind, YES PUUUULEAAAZZZEEEEEE!!!!!!Hardest part of my body to define, by far. ugh.

I taught Zumba yesterday morning at 10:30, so I made sure to eat that bomb ass breakfast early enough that it wouldn’t come back up as I danced my ass off.

REMINDER: If you do Zumba, PLEASE allow at least 1 hr of full digestion before coming to class……lol

What I generally do, is bring a protein packed snack for after class. Not gonna lie, I could eat a COW after class. You would feel the same if you took my HIGH-OCTANE class. 700 calories in 1 hour. Yeah….I thought so….

My AFTER CLASS MEAL:

The rest of Wednesday was mellow, did a couple private clients (haircuts, that is) and came home to make this gorgeous multi colored salad. Simple, but full of protein. I try to take in around 25 grams of protein each meal.

LUNCH:

Kale

2 hard boiled eggs (mostly whites)

2 slices no salt turkey slices

Cherry tomatoes

Grapes

Sesame seeds

Olive oil/lemon/apple cider vinegar

Salt & pepper.

FINALLY made it to the dog park on Mulholland. Been wanting to take Willy there, but never could find the damn place. Anyway, as expected, Willy was not interested in playing with any dogs and was stuck to me like white on rice. No joke.

Tonight’s ZUMBA class was on fire!!! They killed it! The verdict on the polar heart rate monitor: A whopping 664 calories! Sweat like a beast, and worth every second of it!
After class, to participate in my friend’s 30 day squat challenge, we did 250 squats. NO LIE! I’m dying…. Although never tired enough to not pose for some dance studio SELFIES! Lol.

Happy ( late) Monday Babes!!!

I don’t understand why people hate Mondays, and why they say ” I’ve got a case of the Mondays” ew. What’s that about. Ok, maybe it’s cuz I’ve got it off, but still. Mondays are statistically shown to be the best day to better yourself, your life, your decision making, etc, all of it. Have you never said ” I’m soooo starting on Monday, I swear!!” Lol, well, in my case, I started last Monday:) of course, I start something new everymonday. For example, today, I started adding super greens to my sports drinks. I’m just full of “new” whatever.

As you all know, Mondays are typically the meal prep day for me. So this post will prrrrrrety much be focused on food. Ok with y’all? I thought so;)

Since starting the 50 CLEAN EATS/ NO CHEATS I have felt nothing short of AMZING! If you haven’t already started following me on instagram, do soooooo! Listen, I’m not forcing you to do 50 days, shit, do 30 days, whatever. The point is to Challenge yourself to make the effort and change your body. Cheating on your clean plan can add up. This challenge is to make ourselves aware of what we are consuming and to to check in with our bodies and see how they are changing because of it. You can start this whenever you want. Ok, really…..GET. ON.IT. You’re worth it, stop waiting around. I’ve been posting all of of my fitfriends as well as my recipes and clean eats to inspire all of us. So far, 7 days down, 43 to go. Jump on whenever you’re ready;)

Anyway, for myself, I’ve decided to go 60% raw. I absolutely love a lot of the principles of keeping a raw diet, but honestly, with the amount of working out I do, I need my protein, and hell, I like hot food. Soooooo, 60% will do:) so here it goes, I busted out my huge ass commercial dehydrator, and started making snacks for the week. I love this thing. Think of it as a slow cooker x10. The idea is to dehydrate foods at such a temperature that will NOT remove the essential enzymes, and nutrients. This temperature is anything 115 degrees or lower, so clearly, at this temp, shit takes a lonnnnng time to “cook” planning ahead is key.

I was recently hangin with a friend who is about 85% raw, and he hooked it up with this fab recipe.
It’s the bomb.

Raw Zucchini Fries
 
Prep time

Total time

 

Keep all those amazing nutrients and enzymes by using a dehydrator at a low temperature instead of using an oven! These zucchini fries are a fantastic snack whether you are “raw” or not!
Author:
Recipe type: RAW
Serves: 2-3

Ingredients
  • 2 large zucchinis or 3 medium
  • 2-3 tbsp olive oil, or any raw pressed oil
  • 1 tsp crushed garlic
  • 1 tsp sea salt
  • ¼ tsp cayenne pepper
  • 3 tbsp nutritional yeast
  • 3 tbs flax meal
  • 1 tbsp apple cider vinegar

Instructions
  1. st, cut zucchini in ½, then cut your strips. Remember: once dehydrated they do shrink up quite a bit, so don’t make them shoe string fries:) unless you want to of course, then go ahead with your bad self!:)
  2. Place in a bowl, add all wet ingredients and toss well.
  3. Add dry ingredients and toss well.
  4. Space them out evenly on the dehydrator trays.
  5. Dehydrate first at 140 degrees for 30 min, then reduce to 110 degrees for 8-10 hours. leave in longer if seeking crispier, but make sure to check.

Serving size: 3 Calories: 165 Fat: 12 Carbohydrates: 12 Sugar: 5 Fiber: 5 Protein: 7

And for the HOT food:
Meal prep Mondays consists mostly of proteins & veggies.
This next part: SOOOO EASY. No recipe needed.

-A bag of frozen skinny green beans from Trader Joes. I believe they’re called ” haricots verts” I mean, really…. They’re green beans. Lol

-Thinly sliced mushrooms

– Bean sprouts ( laaaaavvvvvv these)

-Coconut oil

-Salt & pepper

-crushed garlic ( like it’s your J.O.B) I like a lot;)

-liquid aminos.

-cayenne pepper( fo that spice!)

-optional: sprinkle sesame seeds

This will last me all week as a side to my protein. I even add this mix to my morning egg whites. Get into it. Super healthy and yummy.com.

I’m over red meat right now…. All I crave I swear, is SALMON! Super high in omegas and protein, it’s the ultimate when trying to keep a lean machine figure. Yes, I’m trying to make myself a lean machine. Salmon is considered a superfood. I baked 3 large fillets of wild Alaskan salmon with a very simple marinade,

-Lemon.

-Salt & pepper

-Crushed garlic

-A dash of blood orange infused olive oil

-Orange zest

Salmon only really needs to be marinated for 30 or less. It eats up flavor quick. Please don’t try to marinate for longer, unless you’re ready to eat ceviche. C’mon babes.
I threw in some broccoli…why not. It add color:)

Oven at 350 degrees for 20 minutes and you’re done! Viola!

Raw Chocolate Avocado Pudding

An amazing SUPER pudding without all the processed crap! A raw alternative. its delicious and gives you wings!:)

Recipe type: Raw
Serves: 3 servings

Ingredients
  • 2 ripe avocados
  • ⅓ cup RAW organic cacao powder
  • ¼ cup RAW honey (or if worried about sugar/carbs use sweetener of your choice. I love natures hollow for sugar free option)
  • ½ cup unsweetened almond milk. I made my own raw nut milk, but you can use organic flax or almond milk.
  • 1½ tsp raw vanilla bean paste. or if not worried about being raw, extract is fine.

Instructions
  1. Mix all ingredients, and blend in a medium bowl with food processor, vitamix or hand mixer.
  2. Serve chilled.

NEW FAVORITE PRODUCT FINDS!

Every week that I do my shopping, I make it a point to try something new and amazing that I MUST share with you. I am a little bit Whole Foods obsessed. These are my reviews and I have not been paid to do so. I’m bringing you the scoop on what I think is worth the cost.
Wile in Ojai last weekend, we stopped at this super cute local market that carried all sorts of super healthy, small business products.
When I saw this cereal, I nearly fell to the ground. Ooooommmmmgggggg PROTEIN CEREAL! Hell yes, how many can I buy before looking like a freak.
I’ve been having a single serving a day. It’s so yummy. Tastes just like apple cinnamon Cheerios. I know, bomb!
I actually love to eat my daily serving before a ZUMBA class. It’s not heavy on the tummy and is the perfect balance of protein, carbs, fiber, and fats. A cup a day, keeps the doc away;)

Take a close look at the box and nutritional info. A whopping 9 grams of protein, and only 12 net carbs. ( subtract fiber from carbs to determine “net”)

Ok, out of all of these products I’ve found, this is by far the most effective and AMAZING!

I have been taking one everyday for a week and my digestion has been on point! probiotics are beneficial bacteria which help regulate intestinal health, supports immune system functions, and improves digestion.

And guess what, you know what really reduces the amount of good bacteria I you system….. Lack of exercise and poor nutrition. That’s right y’all. MISO PASTE:
Have you ever used this? I’ve found it’s really fantastic as a salt substitute in Asian style cooking. I’m loving this stuff. Cold mountain miso is all made from organic whole soybeans and non-gmo. Because of its fermented nature, it’s very healthy for our systems.
There are loads of uses for miso. Think salad dressings, marinades ( especially on salmon), soups, and many more.

It really doesn’t have much flavor to me, so it’s easy to drink, very effective, and without all that other jumbo jumbo. MACA POWDER:

The Incan superfood! I did some research on this medicinal product and was astonished at how much it can help us all. There are so many amazing facts to learn about this product and the benefits are through the roof. I’ve been adding it to my protein shakes and it doesn’t have much of a flavor (thank goodness).

HAPPY TUESDAY TO ALL MY BEAUTIFUL FRIENDS! I am feeling super inspired today! I feel like a new person;) I spent the weekend in Ojai, CA with mom, and had such a great time! Although fighting a terrible cold, I made sure to take plenty of supplements and suck it up. Getting a quick, relaxing weekend away, was just what the doc ordered. I got some serious sun. I look like a dirty face, no lie, we hiked, got massages, and enjoyed yummy healthy food:) I feel a bit cleansed really. There were some things that weren’t quite sitting well with my heart, that now feel settled.
I’m looking at things in a new light, and realized that it’s time to MAN UP. Lol. Life is too short.

As most of you fabulous fit folks already know…. Monday marked the FIRST day of my 50 day clean eats/no cheats challenge, and so far, I am AMAZED at how many friends are participating! Sometimes, we all need a lil kick start! Right? Duh. Soooooooo, this is why I’ve started this. I am an EXTREMIST. Always have been, it’s my nature. So, when I fall off, I need someone to sit me down and say, “alright, stop fucking around, and stop being a cheater”. This is precisely why I started this. I LOVE a good challenge. I’m competitive with myself, so this will drive me to stay on track, and all my lovely friends are inspiring me to continue on the journey!

Ok, so originally, I was set to do 100 days.. Buttttttttt, I realized my best friends wedding was just under that, so that obviously wasn’t going to work, now was it!? Lol
50 days sounded perfect. Not too crazy. Although, most of my meals tend to be clean, I am the queen of binging on a cheat day. Not cute. So NO MORE CHEATS FOR ME! We all know “cheat meal” is a trigger word.

This morning I woke up like a champ! Ready to get my sweat on! I was gonna hit the gym but instead I opened my emails and saw that I got my latest post from MYFITSTATION, a blogger I religiously follow, in which she shared some amazing workouts that I NEEDED to try. So, I got my ass in front of that mirror, got out my kettlebell, my gym-boss trainer and tried each lane of these power house workouts. AMAZING!

I am totally loving these workouts. Try each one and see which works best for you. Switch em’ up, repeat them, whatever. The best past, is that you can do these pretty much anywhere you have a little room. 😉 In my case, in my bedroom;)
I hope they don’t mind that I’m sharing these on my blog, but they were just too good to not post.
I set my gym-boss ( best lil FIT tool out there) to 30 sec work + 10 sec rest. For 10 sets. Then, I would restart the boss back at set one when I started the following workout.

I am so craving this RIGHT NOW! I am a HUGE lover of banana bread, but typical banana bread is full of carbs and sugar, which is not the business for my FROM FRIES TO FIT 50 CLEAN EAT/ NO CHEAT CHALLENGE(follow my insta), sooooo, I’ve come up with my own clean ass, delicious version!

Please do not expect some dry ass “healthy tasting” bread. This is seriously moist and perfect. You will wanna roll your eyes in utter satisfaction with every bite. I’ve finally perfected this. Ahhhhh, I’m so stoked! Even more excited to share with all of you FIT foodies;)

Gluten Free SUPER Banana Bread
 
Prep time

Total time

 

A delicious GUILT FREE banana bread that is low carb, gluten free, and full of healthy OMEGAS and Protein!
Ingredients
  • 1 cup ripe mashed bananas
  • ½ cup organic unsweetened applesauce (could also use 0% greek yogurt)
  • 2 tbsp coconut oil (melted)
  • 2 lrg eggs
  • 1 egg white
  • ¼ cup erythritol or xylitol
  • 1 cup flax meal (could also do ½ of this as oat flour to cut fats) although flax is a great fat for omegas!
  • 3 tbsp coconut flour
  • 2 tbsp almond flour
  • 1½ tsp baking soda
  • ¾ tsp salt

Instructions
  1. Pre heat oven to 350 degrees.
  2. Grease a loaf pan and set aside.
  3. In one bowl, mix all your wet ingredients. Mashed bananas, eggs, egg whites, applesauce (or 0% greek yogurt), coconut oil. mash and mix thoroughly.
  4. In a separate bowl, mix dry ingredients. Flax, coconut flour, almond flour, baking soda, and salt. Mix well.
  5. Combine bowls and mix together.
  6. Add batter to the pan, and bake for 35 mins or until the toothpick comes out clean.

Notes
Keep in mind… To calculate to proper amount of net carbs: Subtract fiber from carbs to calculate. In this case, the NET carbs are 8. (14 carbs minus 6 fiber.) Carbs that come from fiber do not affect blood sugar/insulin/glucose levels. Enjoy Fit Friends!!!!

From sweet to savory…..thought I’d balance us out a bit. The following are some super healthy meal ideas that have become staples in my hizzle.
First: RAW NORI WRAPS
These are super fun. You can stuff with any of your favorite veggies!
The ones I made last night for my meal prep weren’t fully raw( a touch vegan) but still full of amazing nutrition.

In this wrap:

avocado

alfalfa sprouts

kale

almond vegan cheese

hummus

parma nutritional yeast

braggs liquid aminos

hot sauce

These are fantastic for packed lunches. Another option, if you’re not a fan or nori, is soy paper or swiss chard leaves make for great wraps. Really low in calories and nothing but clean and nutritious.

Here’s my dinner GO TO!

Miracle noodles!

The healthiest pasta you will EVER consume.

Shirataki noodles are the ultimate substitute. They fill up your tummy as if you were actually stuffing your face with an actual full plate of REAL pasta:) OK, maybe not exactly like it, but hell, for 20 calories instead of 300, I’LL TAKE iT! They take on whatever flavor you add to them, and they are full of fiber.

Once out of the bag, you may notice a strange smell. Not to worry, stick in a colander, rinse thoroughly under warm running water and we’re ready to roll. Some folks like to flash boil them, that’s cool too, but, AIN’T NOBODY GOT TIME 4 DAT.

In a hot skillet, add a tbsp of EVOO, add noodles, season with garlic & salt. Maybe even a bit of basil or oregano. We are not trying to cook them here…they are already cooked, we are simply adding flavor and heating them up with the seasonings.

In a separate small saucepan, add your tomato sauce. I love this brand.

Transfer the noodles to a bowl, pour your marinara on top, sprinkle with fresh parmesan and VIOLA!!

OH HEY BODYBUILDER!

Tired of all those protein bars out there, full of sugar, additives, and ingredients you can’t pronounce?? I AM!!!

The only protein bars that I’ve found so far that I absolutely LAAAAV are QUEST BARS, but honestly, they can get quite expensive sooooooooo….this is the best alternative I’ve found, plus I’m obsessed with pumpkin. All year round.
I’ve made sure to attach a printout option as well as the nutritional facts.

Only 77 calories each, you will NOT feel a bit of guilt. I originally found this recipe on monimeals.combut altered it a bit to satisfy my diet needs.

Healthy Protein Pumpkin Bars
 
I cut these in rectangles and wrap each one in foil. They are a perfect on the go protein snack.
Ingredients
  • 4 egg whites
  • ¾ cup organic (canned) pumpkin
  • 1 tsp vanilla extract
  • 2 tbsp sugar free honey (Natures Hollow)
  • ¼ cup oat flour (I just ground up my oats in a coffee grinder, but could also use a food processor or bullet)
  • 2 scoops vanilla protein powder. I use About Time Whey
  • ½ tsp pumpkin pie spice
  • ½ tsp cinnamon (or less if you feel so)
  • ½ tsp baking powder
  • Optional: crushed walnuts or pecans sprinkled over the top before placing in oven.

Instructions
  1. Preheat ove to 350 F.
  2. In one bowl, mix the egg whites, pumpkin, vanilla extract, and maple syrup.
  3. In another small bowl whisk the oat flour, protein powder, and all the spices along with the baking powder.
  4. Add this to the wet ingredients and make sure to mix very well.
  5. Pour mixture into a baking loaf pan or a square pan coated with cooking spray.
  6. Add the nuts if you want over the top.
  7. Bake about 18-20 min or until a tooth comes out clean. Enjoy!

My diet has been yo-yo-ing for a bit now, and realize that is the reason why my body isn’t changing much. Those of you who know me, know I’m quite extreme when it comes to it. I’m trying not to be so obsessive and stress so much about it, so in light of my obsessive/binger nature, I’ve decided to go 50 DAYS STRONG without cheating or binging to try and alter how I view food.
It’s funny, I was gonna do 100 days, but then realized that my best friends wedding was during that time and thought…hmmm, ” ain’t nobody got time for dat” and frankly, 100 days would be really Elgin hard for me, so lets start here…
50 days. I am again, breaking up with food. Kinda feels like I’m going sober.

Hi babes! It’s been a super packed week! I feel like I’ve been nonstop! Today…I’ve got a really special recipe for you. Well, a couple of recipes on todays post,but this first one, I shit you not, will blow your mind.
Get ready for the BEST tasting, and the most HEALTHIEST chocolate muffin that you will devour ever in your FIT life!
With 12 grams of protein and only 9 net carbs, you have found your new “BREAKFAST BESTIE”
You’ll never have to break up with chocolate again if you keep these guilt free muffins around;)

I found this recipe originally from fellow healthy blogger fitandhealthywithdebbie.blogspot.com but tweaked a few things to my own liking. Check her version too…you may end up liking it better. I’ve also recalculated the nutrition facts to my version 🙂
If you’ve ever played around with baking with protein powders or even most flour alternatives, then you know the dilemma….dry or rubbery. Ugh, it’s happened to all of us. Usually, the reason being, not enough moisture/liquid in recipe, over cooking, and not mixing well enough. Soooo touchy these healthy recipes! Geez:/.

With these perfect little morsels…I think I had an “Aha- moment”. They were DELIGHTFUL, cakey, soft, moist, amazing flavor…ALL OF THE ABOVE!

WORLD’S HEALTHIEST CHOCOLATE MUFFIN!
 
sugar free, low carb, gluten free…I mean you just can’t beat that. It tastes absolutely SINFUl, but I promise… GUILT FREE.
Author:
Recipe type: Breakfast
Cuisine: American
Serves: 6

Ingredients
  • 1 cup oats made into a flour. ( i just threw mine in the food processor)
  • 4 tbsp Flaxseed meal (ground Flax)
  • 2 tbsp Coconut flour
  • ¾ cup unsweetened cacao powder
  • 1 scoop or packet About time “chocolate” protein powder
  • ½ tsp Cream of Tartar
  • 1 tsp baking powder
  • 1 tsp baking soda
  • ¼ tsp sea salt
  • 3 egg whites
  • ½ cup organic unsweetened applesauce
  • 1 tsp pure vanilla extract
  • ½ cup 0% greek yogurt OR Fromage Blanc ( I love Vermont Creamery, less sugar and carbs than greek yogurt and tastes the same…Whole Foods)
  • 3 tbsp sugar free honey (natures hollow)
  • dark chocolate chips or carob chips. The darker, the better:)

Instructions
  1. Grease a 6 muffin tin. I used coconut oil spray.
  2. Pre-heat the oven to 350 degrees.
  3. In a large bowl, thoroughly combine all dry ingredients, once mixed well, add all wet ingredients one at a time, while continuing to stir and mix.
  4. A hand mixer would also work great at this point. OR, honestly, you could just blend everything except the choco chips in a vitamix or food processor.
  5. Using a spoon, evenly dollop batter into muffin cups
  6. Sprinkle chocolate chips over each one
  7. Place in oven and bake for about 12-14 mins. I will always check mine a bit early cuz I go crazy if I burn my muffins!

Serving size: 6 Calories: 170 Fat: 4 Carbohydrates: 18 Sugar: 4 Fiber: 7 Protein: 12

I’ve always preferred a European style breakfast…you know, coffee & a pastry. Although sometimes opting for a healthy egg white omelette or turkey sausage out of “this is what I should be eating, Once I realized that I could sneak in all the nutrients and protein I needed into a muffin, without devouring a 500 cal pastry from coffee bean, my mornings turned into my favorite meals of the day!
So this is how I started off my WHAT I ATE WEDNESDAY.

I’m still not used to being off on Wednesdays from the salon, so I wake up frantic, then realize I get to sleep in, then I start baking, duh… Oh and then, I start dancing in my living room;) a bit of ZUMBA at 8:00 a.m is always a good time!
I taught ZUMBA at 10:30, and my Amigas rocked the house!
They work me out as much as I work them out, so I make sure to replenish my body and feed my muscles right after class with protein shakes.
I’ve found my new Fave!
Here’s your next recipe…. A bit of homework for y’all….
YOU HAVE TO TRY THIS ASAP!

There are a few optional items in this recipe, in which you can omit…but I recommend them, so up to you;) one of them being bee pollen… BEE POLLEN is recommended by herbalists to enhance athletic performance, relieve allergies, and help with stomach issues.
Another optional ingredient…IRISH MOSS. Which is used as a natural thickener and comes with loads of nutritional benefits that you can read up on here.

One ingredient you clearly do not want to skip out on, is the PROTEIN. In this case, I used about time vanilla whey. 25 grams of protein per scoop, and all natural!

Fresh fruit is always a plus. This was a treat for me! A full mango (well, a small one) it was ripe, and soooo ready! Also in this recipe, 1/4 banana…for that yummy flavor and smooth texture that gives this recipe a “shake” vibe.

I also like to add a spoonful of flax meal. Flax offers an enormous amount of healthy omega fatty acids. I make sure to keep my flax meal in the fridge or freezer to prevent spoilage.
Omega fatty acids are essential in a healthy diet.
Studies show that consuming fresh flax meal, or flax oil can help to reduce the chance of heart disease, lowers bad cholesterol and blood pressure. When you get the chance….add it to everything you can think of;) lol.

Ban-mango Vanilla Protein shake
 
Post workout protein favorite!

Ingredients
  • 1 mango cut up
  • ¼ frozen banana
  • 1 packet or scoop Vanilla About Time Whey Protein
  • 1 tsp bee pollen (optional)
  • 1½ tbsp Irish moss (soaked and blended) optional.
  • ½ cup Unsweetened Vanilla SILK 30 cal almond milk
  • ½ cup water
  • 3-4 ice cubes
  • ½ tsp vanilla (I used vanilla bean powder but you could use regular ol’ extract)
  • 1 tbsp flax meal
  • 1 tbsp EITHER low fat cottage cheese, 0% greek yogurt, OR fromage blanc
  • OPTIONAL- sprinkle with chia seeds and unsweetened shredded coconut

Instructions
  1. easy peazy… throw it all in a blender or vitamix and call it a day.

Calories: 215 Fat: 4 Carbohydrates: 17 Sugar: 13 Fiber: 5 Protein: 29

Lunch was super clean and completely predictable… Roasted chicken breast, brocollini, and roasted peppers with hard boiled egg whites. Boring, but nutritious and quite yummy. I managed NOT to dry out the breast. Story of my life.

I have been hearing and reading about this amazing nut butter for a long time, so I made the plunge. $12.99 well freakin spent. So worth it. The taste is UNBELIEVABLE! I was so anxious to try it, that I popped open the jar right as I got in the car at the Whole Foods parking lot. Don’t judge me….. NUTTZO if you’re reading this…SEND ME MOREEEEE!!

Here are just a couple shots of my awkward self. Prob not the one that’s gonna go up, but just sharing:) I can’t wait till these damn bangs grow out. They were in my face the whole freakin day. Ugh.

In other ZUMBA news….. A super exciting time for not only us as intructors but also for students and fellow ZUMBA lovers. ZUMBA Fitness now has a fantastic app for iPhone where you can find your favorite class or instructor and CHECK IN! let everyone know that you are up, and dancing, and maybe inspire others to do the same! Not only can you check in, but NOW, ZUMBA home office will will make a donation to a campaign aimed towards ending world hunger every time you check in!

The idea is called ” THE GREAT CALORIE DRIVE”
For every calorie burned in class, ZUMBA will donate money so that others can eat! Pretty amazing, and so excited that I get to be a part of this. So, remember to always check in, and log in your calories burned. I always wear my ft60 polar heart rate monitor, and never burn less than 600 calories!

The day of the shoot, I had taken J. FIT’s bodysculpting class, which left my legs and body feeling wobbly, she kills me,so I was stoked to get home and spend some much needed mommy time with Wilbur! Aww, my boooooooo;)
At the end of the day, after Running around all day…this is what I really wanted. Home sweet home!

ZUMBA CERTIFIED Y’ALL!

I have an announcement y’all!!!
Since we’ve last spoke….

I am now officially ZUMBA CERTIFIED!!!
After nine hours of dancing my lil heart out in San Diego….. I got my certification! Woooooohooooooo;)

9 hrs in the same freakin room. Thank god I brought lunch and snacks. The whole experience was super fun! Yes it was long, but actually enjoyable. Mostly dance, and some PowerPoint.

I’m sure most of you are familiar with ZUMBA, and the bright colors all the ZUMBA folk wear, right?
Well, I never thought I would be “that” instructor… ( I’m usually in black or grey) but, I gotta tell ya, I lost my ZUMBA shit in there! Lol. I came home with purple and teal pants, fluorescent sports bras, bright orange headband, weird “party time”bracelets… I got home and literally started laughing out loud at myself. I’m kindaaaaa feelin’ it though. 😉

Ok, so some of you may have already seen this pic if you follow me on instagram, but I just had to share…. I am sooooo damn sick of turkey it’s ridiculous. The other day I roasted a 12 lb turkey at 5:00 am. ( no bigs, just what I do) as part of my week meal prep. Well, after 30 minutes of carving the freakin’ thing, I thought to myself.. ” hmmmm, maybe 12 lbs was a bit big” NOOOOOOOO, really???? Ahhhhhh! Hi lovelies! I’ve got to catch you up! So, this week officially marks my first week with Wednesdays off from the salon;) wooooohoooooo. Also, this Wednesday is my first ZUMBA class! Oooommmgggggg. They don’t know what’s comin’…I’m about to go ZUMBA crazy on their asses. Also what I think I may start doing, is posting a new dance once every couple of weeks on the blog, that way students can refer to the post to learn the dance before coming to class. What do you think? ZUMBA instructors out there…thoughts?

Anyway….notice something new on the site? My lovely friends at optimal fusion helped create a new freakin AWESOME LOGO! Super cute:) apparently the ” Fries” were actually McDonalds fries spelled out ” fries” on a desk, and photographed. GENIUS. Anddddd….we all know that fries were my binge food of choice. Ugh.

Easter was great..mellow. Just what I wanted. Consisted lots of dancing in the garage in front of a mirror. Just practicing my ZUMBA moves, NO BIGS.
This morning’s breakfast was super duper clean.
I had made a big batch of roasted veggies, and have been pretty much adding a handful to every meal:)

Monday morning Zumba was RIDICULOUS! It was a fabulous surprise when the LULULEMON girls showed up from the Studio City location. They did awesome, and were SUPER stoked on SC fitness. Looking forward to having them in take class more often! Really sweet girls!

This week, I’m planning on either locking myself in my house practicing my Q’s and dances, or in the studio. I know really predictable:)

After zumba, I have the pleasure of visiting the dentist…sooooo fun! Luckily, no cavities:)

Lunch was again, roasted leftover veggies, along with some red lentils (Trader Joe’s) in low sodium broth, cayenne, turmeric, yellow curry powder, cumin, paprika, garlic, oregano, salt and pepper. Cooked on low till lentils are soft and soaked.

Topped it with, of course, Fromage Blanc & siracha

The afternoon seemed quite hectic. Mondays usually go by way to fast, my list of errands keeps getting bigger and busier. I had planned to double up classes this later this evening, but my body said. Ummm, NO.” My tummy was killing me ;( womp wooooomp. I sound like such a whiner, gross. I ended up taking it easy at home, catching up on some reading. My sweet client sent me this article knowing that I’m a huge fan of juicing and the vitamix. APPARENTLY, it’s all the craze:)

I no longer buy trail mix that has been pre packaged. Usually, it contains too much added sugar or oils, and usually not raw. Now, I get all of my favorite raw nuts, seeds, unsweetened coconut, superfood berries ( goji, mulberries) and cacao nibs, and mix them all up in a mason jar. Perfect snack without additives. A handful ( palm of hand ) equals to a serving.

No, I did NOT eat all three quest bars, but my girlfriend Haley surprised me with 3 bars of her new favorite flavor for me to try, and I just had to share my heavenly experience with MISS. Chocolate brownie. Holy sweet party in your mouth!!!

Didn’t spend too much time in the kitchen today, but I did manage to bust out a batch of my favorite Blueberry Protein Muffins. They are super easy and take no time! You know me, meal prep Monday;)

Tonight was all about me. I wasn’t feeling my best. I laid down and actually took a nap, which absolutely never pans out for me. This time I was out for at least 2 hrs. Sooooo nice. Never made it to my back to back classes, but I did get in for a 9 p.m hour long massage. 😉 Don’t mind my MC Hammer Thailand pants.

There’s an amazing place around the corner from my house, called Foot Inspiration, that I can’t get enough of. I’m trying to get 1 massage a week, but paying $75 for an hour/ once a wk was outta the question, so this place is the bomb. It’s considered a reflexology massage. They really do hit every pressure point all over your body. I strip down to a sports bra, and booty shorts, since it is more of an ” out in the open” kinda place. I must say, I slept like a cozy lil baby!

Alright, so my obsession with cauliflower has grown to new heights. Although, cauliflower crusts and rice are nothing new to any of us….it doesn’t mean we can’t re-invent them over and over;) Lol. I just can’t get enough! This is my idea of CARB-o-LOADING. Faux “Rice”&
” Pizza”, yes pleaaaazeeeee:)

Lets start with fried rice in the skillet. By the way, notice the printable version of the recipe below:) hope that helps. I know it can be annoying to search though posts, and bring your laptop into the kitchen to be able to see a recipe;)

1st up:

CAULIFLOWER “FRIED RICE”

I got alllllll Asian on it, with my “non-disposable” chopsticks:) whaaaaaaaaa. You would not believe how similar to real rice this shizzle is. This recipe is so damn easy, I whipped it up before work, and viola! The best part, is that you can add any veggies you want in it.

In this recipe, I kept it really simple. Leeks, edamame, garlic, egg, & soy sauce. This can be paired with your choice of protein. Personally, I’d be stoked to pair it with jumbo garlic shrimp, or even grilled scallops. Ooooommmmgggggg. Doesn’t that sound stupid good right now!? But, you could also enjoy all by it’s lonesome as your main dish, you vegetarian, you;)

If you didn’t love cauliflower then, your gonna have to now! I’m gonna tell ya what yo’ mama never told ya!
CAULIFLOWER is a great source of Vitamin C and manganese which are both powerful antioxidants. It also contains high amounts of vitamin k, and omega 3 fatty acids which decrease inflammation. Also a fantastic source of b vitamins and fiber.

Faux “Fried Rice”
 
Prep time

Cook time

Total time

 

Enjoy fried rice without all those carbs! Much more nutritious than your typical fried rice & tastes and looks just like the real deal! Yummmm.
Ingredients
  • ½ head large cauliflower or 1 small head
  • ½ cup edamame (i used the frozen bag from Trader Joe’s)
  • ½ cup chopped leeks
  • ½ tsp crushed garlic
  • 1 tsp coconut oil
  • 1 egg
  • 2 tbsp low sodium soy sauce or liquid aminos
  • salt and pepper to taste
  • 1 tbsp chopped green onion (for garnish)
  • (optional: chopped carrots, peas, onions)

Instructions
  1. Using a food processor/ vitamix/ or simply a grater…pulse or grate raw cauliflower to “rice” consistency. Should equal to approx. 2 cups.
  2. Add coconut oil to hot skillet, and on medium head, add edamame, leeks, salt & pepper and any other veggies you wish to add. Sautee for 5-10 mix while stirring to ensure NO BURNING.
  3. Now add cauliflower, garlic, soy sauce, and sautee for another 5 minutes.
  4. Lastly, add an egg, and scramble it in. Continuously stirring. Cook a few more minutes. Until “fried rice” consistency.
  5. Remove from heat and serve. Garnish with green onions, and toasted sesame seeds.

Say what you want….Yes, played out I’m sure comes to mind when you hear of “cauliflower crust pizza”, but you know what….WHATEVER!

I am a pizza lover, and unfortunately I can’t be having MOZZA Pizzeria every night, so this is my alternative. Obviously, you could also make it other ways. (I.E. with almond meal, flax meal, coconut flour) All of those options are GREAT for low card eaters, but if ya ask me, the cauliflower version couldn’t get any healthier. With the most nutritional value out of all the other options, you need feel absolutely NO guilt.

The assembly of the crust couldn’t be easier.
Use your food processor, vitamix or grater to pulse or grate cauliflower. U will need about a cup of it.

Steam or cook in skillet till softened, then throw in a bowl.
Add LIGHTshredded mozzarella or Swiss. 1 cup. Yes…throw it in the bowl.
While your there…go ahead, throw in 2 egg whites, your garlic, oregano, and salt & pepper.

Preheat oven to 400 degrees.
Mix well in the bowl.
Grease your pizza pan, or baking sheet, and mold your crust.
Make sure that it’s not too thin or too thick.
Cook for 20-22 minutes. We are looking for browning here, K.

Ok, so… You can use regular pizza sauce, but be mindful that it can make the crust quite soggy, so I prefer a bit of slightly watered down tomato paste.

Ok, maybe I should have mentioned this a few pics ago butttttttt…….. While the crust is cooking, you could sautée your onions and peppers. You know, to save time n’ all;) grease your skillet with a bit of olive or coconut oil. ( 1 tsp) keep the heat at medium. High heat will most likely burn your veggies before they even cook. Oh and I used sweet yellow & orange peppers, they’re my absolute! I made this Italian style, by adding oregano, garlic, and Italian seasonings to the skillet as well.

Once caramelized ( about 15 min) pour over crust. Top with ripped pieces of mozzarella ( light of course) and throw back in the over to melt the cheese. About 5 more minutes, or stick in the broiler for a min just to brown.

Italian Style Onion & Sweet Pepper Pizza on a Cauliflower Crust
 
Prep time

Cook time

Total time

 

A delicious way to enjoy pizza! LOW CARB STYLE!
Ingredients
  • CRUST:
  • 1 cup pulsed cooked cauliflower
  • 1 cup grated LITE mozzarella cheese
  • 2 egg whites or 1 whole egg
  • ½ tsp crushed garlic
  • ½ tsp oregano
  • salt and pepper
  • TOPPINGS:
  • 1½ tbsp tomato paste mixed with 1 tbsp water
  • 1 onion sliced thin
  • 4-5 small orange & yellow peppers. Sliced very thin.
  • ½ tsp garlic
  • 1 tsp italian seasonings
  • salt & pepper
  • 1 tsp olive oil or coconut oil.
  • Lite mozzarella or Lite swiss on top
  • (optional: Top with red pepper flakes)

Instructions
  1. Crust:
  2. Pulse ½ head of cauliflower. Should equal to 1 cup pulsed cauli. I used my vitamix, but you could use a food processor or grater. I prefer it VERY small grain.
  3. cook till softened. Either steam in in microwave or over the stovetop.
  4. Once cooked, add it to a bowl, and add egg whites, mozzarella, garlic, oregano, salt and pepper, and mix thoroughly.
  5. Pre-heat oven to 400 degrees.
  6. Grease a small pizza stone, baking sheet or pizza pan.
  7. Mold your mixture onto the pan, making sure it is evenly distributed and not too thick, but not too thin.
  8. Cook at 400 for 20 min.
  9. Remove and let sit while making toppings.
  10. TOPPINGS:
  11. In a small ramekin, mix tomato paste with water and spread over crust.
  12. Add 1 tsp oil to a hot skillet ( low-med heat) and add thinly sliced onions, peppers, garlic, seasonings, salt & pepper and sautee till caramelized. About 10-15 minutes.
  13. Keep stirring and being careful not to burn.
  14. This step, of sauteeing, can be done while crust is baking.
  15. Once done and caramelized, add to pizza crust.
  16. Top with ripped bits of Lite Mozzarella or Lite Swiss and stick back in the oven for 5 min. Or broiler for 1 minute (just to brown and melt)

Loves!!!! So sorry I’ve been MIA:( I’ve been sooooooo busy, and there are lots of changes happening. I’m super excited, but I gotta tell ya, a few panic attacks during the last couple days. Been playing catch up since coming back from Vegas along with many other things.

Ok, where do I begin….as you know, I’m gearing up for my ZUMBA instructor license, and I’ll be teaching my first classes starting April 1st. Ahhhhhhhhhh, I’m freaking a bit. Ive gotta learn 15 songs by that day. On top of that, I’ve been totally busy at work, hence, the late blogging. So yes, I’m feeling a bit overwhelmed at the moment, but I’ve got great news! I’m a pretty lucky girl, I must say, cuz my boss has agreed to let me work only 4 days instead of 5 days a week. I know, pretty amazing. Starting April 1st, I will be having Wednesdays off, which will allow me the time to catch up, teach a Zumba class, and get my blogging done.
I can’t tell you how wonderful it feels to gain that balance.

Though I’ve been neglecting the computer the last few days, my workouts have been on fire! Im planning on learning 2 new songs (choreography) for next weeks ZUMBA classes. Getting my feet wet I guess you could say;) this weekend it’s on…I’ll be practicing in front of the mirror for like 10 hrs. Lol.

Although a slow start to the week, Wednesday I kicked ass with a fasted cardio session in the a.m.

Of course after a workout, I’m starved. I felt like something fresh, green, and hearty, so I made up some random stuffed egg wrap that was delicious! I had loads of kale I needed to use up, and seeing as St. Patty’s day is around the corner, I figured green is what’s up.

For the ” Green Protein Egg Wrap”

INGREDIENTS:

A handful of clean kale

1 tsp chia seeds

1 tbsp unsweetened almond milk

1 scoop whey protein

2-3 drops stevia

1/4 cup egg whites

Blended all ingredients in the vitamix, greased a square flat pan, and poured mixture. On med heat, allow to cook like a thin crepe. Or like you would cook an omelette without the folding, just flip.

For the filling

1-2 tbsp fromage blanc or nonfat sour cream or Greek yogurt

1 tbsp hot & sweet mustard ( I like Trader Joes brand)

1/4 thinly sliced apple

Low sodium turkey slices

A handful of mixed greens

Thinly sliced tomatoes ( didn’t originally add this, but regretted not doing so…so u should add)

Assembly:

Thinly, layer ingredients, and roll up carefully. Serve with a bit of siracha or even a tbsp of hummus.

This is a great alternative to eating a sandwich on two pieces of bread. This is completely LOW CARB.

My lunches have been totally predictable. Same shit, different day. 😉 I don’t mind though. I’m obsessed with salmon right now. I bake a few fillets, and take them to luch everyday with a side salad. Healthy, filling, and full of essential fatty acids.

Hiiiiiiiiii babes!!!!! To say the weekend was decadent would be a complete understatement. Vegas was a success;) didnt get into the whole club thing…no thanks. I’m more of a “Let’s enjoy mountains of delicious food, sweets and fancy cocktails” oh and then “Let’s go soak at the spa, and eat sweets in an amazing king size bed!” That is my idea of being “BAD” in Vegas. Lol

I flew out Saturday to meet up with a girlfriend at Aria hotel. We had an amazing Mexican dinner of octopus ceviche, fajitas, and cucumber margaritas. Then of course, naturally, we had to balance out the salt with sugar….so we had pints of ice cream in bed. Lol

Vegas treated us goooood….we stayed at the pool till around two..managed to get jusssssst a touch burnt…cuz you know, it turns into a tan;) then, stopped at Trader Joes for copious amounts of snacky foods for the car ride home. You don’t wanna know. Lets just say….it was my brake up with food. Sooooo bad. It’s over between us.

Anyway…the trip was super fun, but I’m ready to start fresh this week.

It started off to a great start! Spartos was kind enough to send over their new flavor of sugar free, protein water! So stoked:) this flavor is not at whole foods yet, but soooooooon will be. Please be on the look out for STRAWBERRY COCONUT. It’s got a really fantastic taste. The best part, is that you can enjoy it as a sports drink without all the sugar and carbs. I have yet to find anything similar to spartos to even compare it to!

I left work thinking I was gonna make it to my ZUMBA class, until traffic stuck its foot up my ass. I sat on Coldwater canyon for over a damn hour! So pissed. Missed my class by 30 minutes. Ugh. I think I need to switch to early shift at work, cuz that was not cute.

Got home later than ever expected, so I opted to walk Willy and cook a clean dinner.
I made a mish mosh of veggies with red lentils simmered in a bath of broth, cumin, turmeric, curry, saffron, olives, oregano, garlic, cayenne, paprika, salt & pepper, and paired it with egg whites and a dollop of fromage blanc. Sooooo good and hearty.

It’s always reminded me of a dirty place where people go and do naughty things, and get away with it with a simple, “What happens in Vegas, stays in Vegas…” But, as I’ve gotten older, I’ve learned to appreciate the space, the lights, the food, the architecture, and the beauty behind the trashiness;) needless to say..I need a mini vacation!

I didn’t sleep very well last night due to the sound of pouring rain, the new mattress, and the lack of blankets, in which I realize now, are too small for my new big bed, but im hoping to have a relaxing, fun, spa weekend to revamp, and go into next week feeling amazing!

Anyway… Before I take off, I wanted to share this fabulous little recipe with you guys as I promised on my instagram last week. This recipe was inspired by one of my favorite bloggers, ProteinPow.

Mini Blueberry Protein Muffins

I had 3 this morning. Lol. Delish.

INGREDIENTS:

1/2 cup of liquid egg whites

1/4 cup of rolled oats

1/4 cup of vanilla whey protein isolate

1 tbsp of coconut flour

1 tsp of xylitol or erythritol (optional for a sweeter muffin)

1/2 tsp of baking powder

1 tbsp 0% Greek yogurt, fromage blanc or low fat cottage cheese

1 tbsp mashed banana.( you could even use mashed sweet potato too;)

Fresh or frozen blueberries ( a handful)

A couple of things:
Before getting into the assembly of this recipe, I gotta tell ya, if you don’t have vanilla whey, it’s ok. You can use unflavored and just add a dash of vanilla extract, and add the optional sweetener.

Also, add your blueberries last, otherwise, you’ll end up with blue muffins;)

DIRECTIONS:

Pre-heat oven to 320 degrees
Grease a mini muffin pan. My recipe ended up making 7 minis. I guess it depends on the pan how many you end up with.
Mix dry ingredients in a bowl, then add your wet ingredients.
I used my vitamix to quickly blend ingredients, but you could also use a hand mixer or any blender.
Do not fill to the top, leave room to rise.
Cook at 320 degrees for 15-20 mins. Check at 15, may need more time. Every oven is different.

nutrition facts:
Cals per muffin (1 out of seven) 45 cals
Carbs per muffin: 3.5 grams
Protein per muffin: 5.5 grams
Fat per muffin: 1 gram
Fiber: 2.5 grams

Happy hump day everyone! Hope you had a great day! I’m gearing up to leave on Saturday after work for Vegas with the girls, so I’ve got lots to catch up on before I take off. This week I’ve been a little slacking on the workouts, so…sorry for the lack of fitness inspiration;)
I got a great workout in Sunday, which was a Hatha yoga class, and my fave, of course, Zumba, and another Zumba class on Tuesday night. Tonight, I’m catching up on some blogging, and I’m looking forward to a bodysculpting class mañana.

Since I won’t be matching my usual 5 day workout week, I gotta keep the eats really clean.
Here’s a sneak into my tummy today;)

Hey guys! Hope the week was amazing for all of you! It’s a gorgeous day in sunny LA, and I’m sooooo looking forward to a weekend laying by a pool somewhere;) can you tell, I’m so ready for summer? This post is primarily focused on breakfast recipes. I’ve been getting a lot of questions lately specially about my protein pancakes, so he they are!

So now, I invite you all to enjoy Saturday morning breakfast with me. Well, Sunday brunch too;) I’ve got some yummy low carb, protein filled, über healthy recipes for you to try this weekend!
I never skip breakfast, and neither should you. After all, it is the most important meal of the day, and those who know me, know, I eat like a queen in the morning. It sets the tone for your day, so make it count, and make it clean!

The whole “oats” thing is new to me I must admit. Being on a pretty strict Low carb diet, (with the occasional carb/sugar binge) I never really got into them…but now that I’ve upped my cardio and weight training, I’ve been advised that perhaps incorporating these fiber packed bad boys into my diet, it would be super benefitial.

So here it goes,

CHOCOLATE COCONUT PROTEIN OATS ( with banana..optional)

INGREDIENTS:

1 packet or scoop of About Time chocolate/peanut butter whey protein

3/4 cup organic oats

1 tbsp unsweetened shredded coconut

2 tbsp fromage blanc ( I use Vermont creamery)

1 tbsp raw cacao nibs

1/2 cup silk unsweetened vanilla almond milk

1/2 cup water

4 drops stevia

Optional : vanilla extract and 1/4 cut up banana

DIRECTIONS:

Pour oats in a bowl.
Add milk and water and microwave on high for 1 1/2 minutes or boil milk and water and pour into bowl of oats. Whatever is easier. Add in the rest of your ingredients, mix well and top with banana. Let sit to allow for the oats to soften.

Next up…. The recipe everyone keeps asking me about;) Protein pancakes!
There are so many different ways to enjoy these pancakes. The foundation is easy. Simple…just your favorite protein powder along with 3 egg whites, and add whatever you want to the mix or for a topping.

Vanilla Pumpkin Protein Pancakes

A low carb way to enjoy an American staple!
Ingredients
  • 1 large scoop of vanilla whey protein
  • 3 egg whites
  • 1 tbsp canned pumpkin
  • a pinch of cinnamon
  • a pinch of nutmeg
  • (vanilla extract optional)
  • 4 drops stevia

Instructions
  1. Pre heat a skillet. (batter can be quite runny.
  2. grease with a bit of coconut oil, or smart balance spray.
  3. in a bowl, mix dry ingredients first, then add egg whites.
  4. mix well, to ensure no clumps.
  5. spoon in batter.
  6. they cook really quick, so keep your eye out

Notes
optional: I love using Natures Hollow sugar free honey over this, its amazing. also, try with a dollop of your favorite nut butter, and fruit!

Ok, so this next recipe is from a friend, fitchick428 on instagram! This chick is FIT, and is constantly knocking it outta the park. I follow her religiously and her recipes are nothing short of delicious and, of course, CLEAN,CLEAN CLEAN!! She posted these pretty little donuts and I couldn’t help, but get my ass in the kitchen to try them out. They were so good I had 2 1/2 donuts in one sitting with my coffee and had absolutely no guilt about it. None:)

Blueberry Cake Donuts

Low Carb Donuts!
Ingredients
  • ¼ cup + 2 tbsp almond flour
  • 2 tbsp coconut flour
  • 2 tsp psyllium husks or flax meal
  • ¼ cup baking stevia or erythritol (or coconut sugar for paleo)
  • ½ tsp baking powder
  • 1 egg
  • 2 lrg egg whites
  • ¼ cup blueberries fresh or dried (no sugar added)
  • non stick spray or coconut oil

Instructions
  1. Pre heat your oven to 350 degrees.
  2. Spray your donut pan with non stick spray (or coat with coconut oil).
  3. In a bowl combine all your dry ingredients: almond flour, coconut flour, psyllium, stevia and baking powder. In a second bowl whisk together your egg, egg white, vanilla and coconut milk.
  4. Combine your wet and dry ingredients. Mix well.
  5. Fold in your dried blueberries.
  6. Divide the batter evenly among 4 donut molds.
  7. Bake for ~ 20 minutes or until the spring back when touched.

 

CINNAMON PUMPKIN MINI MUFFINS WITH ALMOND/MAPLE GLAZE

I absolutely LOVE anything pumpkin. It’s a great source of fiber and always make me feel like autumn is in the air:) Although not at all the case, the flavor is something I can’t get enough of. I suppose you could also sub pumpkin for sweet potato or butternut squash, but I haven’t tried it yet. This is my third time making these, and I swear, never fails, I can never just have one:)

Cinnamon Pumpkin Mini Muffins with Almond-Maple Glaze

A great way to enjoy a muffin while practicing portion control AND start your morning off with the perfect balance of protein and carbs.
Author:
Recipe type: Breakfast
Cuisine: American
Serves: makes 6 mini muffins

Ingredients
  • ¼ cup pure unsweetened canned pumpkin
  • 1½ scoops vanilla whey protein
  • 1 tsp pumpkin pie spice or (cinnamon, nutmeg, ginger)
  • (or sub these last two ingredients with GASPARI NUTRITION Myofusion Pro- Cinnamon roll)
  • 2 tbsp coconut flour
  • ½ tsp baking powder
  • ⅓ cup egg whites
  • GLAZE:
  • 2 tsp almond butter
  • just under ¼ cup sugar free maple syrup (recommended: Vermont by maple grove)
  • dash of cinnamon

Instructions
  1. Preheat oven to 375 degrees.
  2. In a bowl, mix all ingredients for the muffin batter
  3. Spoon into a small cupcake pan that has been sprayed with non-sticking cooking spray.
  4. Place in oven and bake for about 10-14 minutes. Be careful not to overcook.
  5. Remove from oven, and allow the rolls to cool slightly.
  6. Microwave the glaze ingredients for about 15-20 seconds. Remove from microwave and stir well.
  7. Dip tops of mini muffins in the glaze mixture, set on a rack or plate to cool and sprinkle with cinnamon.
  8. To maximize freshness, store leftovers in fridge.

#1: DUKKAH seasoning by Trader Joe’s.
I haven’t used it yet, but excited to try it.
Dukkah is a savory nut and spice blend of Middle Eastern origin.You can use as a rub or crust for chicken and fish, as a seasoning for vegetables.

#2: FLACKERS! my absolute favorite low carb cracker option. Love having these at the house. Super guilt free. Created by a doctor, these bad boys are gluten free, low carb and low glycemic. They offer loads of fiber and are really high in omegas. They are made up of flax seeds and spices. Nothing hidden or ingredients you can’t pronounce. You can find these online or at your local health food store. I’m completely obsessed with them!

#3: 10 MIN. FARRO by Trader Joe’s. I’ve never cooked farro before, so I’m curious to try it out in the recipe she sent along with the package pictured below. It’s considered a whole grain, a good source of fiber, aids in lowering cholesterol. AND, high in vitamins in minerals.
Also considered a “Smart Carb”
Farro’s complex carbs break down slowly, keeping your energy level stable. The grain also has cyanogenic glucosides, a type of carb that may boost the immune system.

#4: YOGI GINGER TEA. If there is anything I need, it’s help in the digestion department! Holy, digestive issues. It’s caffeine free, so this has been lovely to drink up at night. It helps to sooth the tummy after a meal. Also, the taste of ginger isn’t so overwhelming, which I appreciate.

#5: MARCONA ALMONDS roasted and salted with rosemary..OOOOOMMMMGGGGG. I mean, never have I EVER had something so amazing and flavorful. WOW! I highly recommend these. They are naturally a bit oily, but enjoy it as a treat.

Hey guys! Hope you all had an amazing day! It wasnt too crazy at work, so I was able to sneak and get this post together:) I swear I just get SOOOO excited to share stuff with you all! I’ve got some exiting workout tips in this one, so get ready!!! First, let me start off with last night’s din din. Ya’ll know I’ve been into rolls lately, give me anything, and I’ll make a damn sushi roll out of it! lol.

Super easy, I just literally grabbed anything I could find in my fridge to stuff it with.

INGREDIENTS:

1 soy paper

1 tbsp Fromage Blanc

1 tbsp Canned pumpkin

1 tsp Parma vegan parmesan

1 slice turkey bacon

Roasted veggies (I used leftover onion,cauliflower,zuchinni)

siracha (to taste)

sesame seeds

I had to miss my ritual of Tuesday night Zumba unfortunately, cuz I had to do a housecall. womp wommmmmmp, but I made sure to go to sleep early, and get a goodnight’s rest.

This morning was a KILLER FASTED CARDIO SESH.

I literally opened my eyes, put on my gym clothes still half asleep (made sure it was early enough for my brain to not quite comprehend what was happening) I headed straight to the gym. It was 5:30 a.m. HELL YESSSS.

OK, so here is the latest with my workouts… 2x a week, I am trying to work in a fasted cardio session in the early A.M. .I mean, with NOTHING in my belly. Just water. There is some controversy to this method, and that is precisely why I am trying it…to be able to tell you all if it’s even worth it. Here is the PRO version. ….Here is the CON version

 

This morning was 45 minutes of elliptical intervals. I was surprised at how much energy I had, especially with no food inside my tummy. Kinda felt like a beast. Ugh love when that happens.Don’t know bout ya’ll, but…. I’m tryin’ to get ready for bikini season!

BREAKFAST:

A protein shake made with:

1/4 banana

1 scoop vanilla whey protein

1/2 cup unsweetened almond milk

1/2 cup water

Raw acai powder

bee pollen (a pinch)

probiotics (1 opened pill)

Whole leaf aloe juice (1 tbsp)

2 swiss chard leaves

4 drops Nunaturals stevia

a pinch of vanilla extract

2 tbsp fromage blanc

SNACKS:

1/2 a small cucumber sliced with salt & pepper

small handful of Raw almonds

kale chips

& 1 scoop ULTIMA REPLENISHER electrolyte powder (its absolutely delicious and tastes like Kool aid!) mixed with 3 tbsp chia seeds and water. The best hydration with fuel and energy! you gotta try this guys! Nothing has ever quenched your thirst like this before!!!! Hallelujah!!!!!!!!

Ok, enough with the eats…Back to fitness.It’s now 4:00 p.m. and I’ve got abs on the mind;) I’ve been doing some research online trying to find some inspiration for upcoming gym days, and I’m SOOO STOKED, because, #1: I found my new FAVORITE core move, #2: I’ve become Jillian Michaels obsessed, and #3: I am now gonna become that creep who’s dancing on the treadmill at 5:30 a.m. at the gym. That’s right chicks. No shame. Whatever makes me sweat, and shows me results, I’m gonna do.

Get ready, this one’s a doooooozy!

3 sets of 10!

It’s a challenging move that truly pays off. You use the abs as you pull the knees to your chest, and as you lower the legs back down, the abs work to keep the torso stable. Plus, just hanging from the bar works the arms and upper back quite nicely.

Start by hanging on a pull-up bar with palms facing out, or use the hand grips on the cable-pulley machine. Do use a box if you need help reaching the bar. Pull your shoulder blades down your back to keep your shoulders away from your ears. You will be working your lats to keep your scapulae (shoulder blades) stable.
Exhale, pulling your abs to your spine as you raise your knees to your chest. Tuck your pelvis under, rounding your low back, to ensure the low abs are working more than the mighty hip flexors.
Lower the legs down slowly and return to the starting position. Do keep your abs engaged to prevent your legs from swinging behind you.
To prevent momentum from assisting the leg raise, pause in the starting position for a moment before beginning the next rep.
Do three sets of 10 to 12 reps.

Hope everyone enjoyed this beautiful weekend! One of my besties came in from New York and I couldn’t have been happier to see him;) it was a pretty mellow weekend, but I had to get a lot done. You know, the usual… Gym..laundry…haircuts…cook..visit the folks…Sunday morning, I started with a fasted morning mostly cardio workout.

Took my L-CARNITINE (empty stomach)
BCAA+g mixed in water for during and after workout.

I’ve been trying to work on the abs more lately. They’re getting better, but to be honest, my cheat meals are catching up to me. That is why I HATE “cheat meals” uhhhh. They turn into triggers for bad decision making for me.
Anyway… This morning cardio was exhausting.

30 min on elliptical (high intensity intervals)
1 mile run at 6.7
30 second sprints for 5 minutes

Left the gym feeling powerful! I sweat my ass off. 45 min cardio and 15 AB circuit.

Since I did a fasted workout this morning, I was ready for something in my belly as soon as I got in the car! My trustie Quest bar. These bars are my go-to source of a post workout meal. The coconut is probably my favorite flavor. No artificial sweeteners. Loves it. Soooo good, best part for me…( for my lazy digestive tract) a great source of fiber too;)

I planned to go to the folks house today, but not before hitting up the Sunday farmers market. I changed outta my sweaty ass clothes, grabbed my recyclable bags, and headed to the farmers.
I stocked up on:

cauliflower

Onions

Cilantro

Parsley

Swiss chard

Strawberries

Grapefruit

Tomatoes


I sample absolutely everything at that place, so I leave feeling like I just had another meal:)
Today’s lunch at Mom and Dad’s house. No BBQ today. I had to run around and get some clients in, so we really didn’t have time, but he’ll, this ishhhhh was the bomb! Super easy lunch. Ground turkey and a side salad. Yummmmmm and full of lean protein.
We watched a movie as I finished my million loads of laundry. Don’t judge, yes, I took my laundry to my parents house. Weekday laziness brought me to this 😉

By 4:30, I left because I had the bestie coming to stay with me before heading back to New York, and we had dinner plans. Where else, but my favorite Mexican restaurant walking distance from my house… Casa Vega.
Total fatty at dinner. Inhale a basket of chips. Yes, I know. But shared a taco salad( no dressing) and shrimp cocktail with my friend, so not that gnarly.

Made with real muddled cucumber, tequila, fresh lime, and agave…but, you know me….” Um, no agave please” little did they know, I had my stevia drops stashed in my purse;) lol. They were amazing! I will most def be trying these at home! Hello, LOW CARB OPTION!

We came back to my house after dinner and Alicia poured us some wine. Well, apparently I’ve broken all my wine glasses in the dishwasher, cuz she somehow found what she thought were a good alternate….. She hands us my centerpiece candle holders! Hahaha. She was all..”what? I thought they were just extra large cups!?” Lol. Bless her.
God, we freakin laughed our asses off all night! Alicia, and Brian’s brother left, so me and Brian decided to run across the street to 7-11 and get ice cream like a bunch of fat kids. We watched some crazy ass scary movie and passed out. Don’t judge, but I had 1/2 a pint. Lol
The next thing I’m about to tell you will absolutely shock you!!

I SLEPT IN TILL 10:30!!!!

It was my first time trying my Irish moss! Wooohoooo! It ended up being a great thickener, and I didn’t taste it at all! Three it all in the vitamix. Happy girl. My guiltless breakfast of champs. All of these ingredients are amazing alone, but when put together are like miracle workers. Immediately, I felt less bloated. Last night was a bit much. If your in search of a good probiotic… I recommend this one. Keep it refrigerated. 42 billion live active cultures. Stoked! I open one capsule and add it to my shakes, or you can just take the pill form. Either way, AMAZING!

I had to take Brian to the airport at 1:30, so I made sure to drag him out for a hike before we left. It was such a gorgeous day, we couldn’t pass it up. Plus, he was about to head straight back to blizzard central New York, I figured he needed a bit of sunshine!

We hiked gorgeous Fryman canyon. 1 hour start to finish. Uphill to midway point. Not too difficult, but just right;)

The best part…. Lol. I ran into an ex hiking up. He was coming towards me, and I wanted to die, cuz he was with a chick. Omg. It was just all around awkward, lets just say that. Hahahaha. This is a small town apparently.

After hike snack before heading to the airport:
1/2 a bulb raw fennel
And a handful of strawberries.
I also tried a sample of AMINOLAST by Gaspari Nutrition. I shook this up to save for my ZUMBA+bodysculpting tonight.

Before Zumba at 7, my girlfriend & fellow health enthusiast J fit came over for a haircut. We decided to have a light dinner before class, cuz we don’t get home till 9:30 usually on Mondays. Yes, that is too late for dinner.;)

Btw….I don’t know if I’ve mentioned to you yet, but, I have decided to finally do it! That’s right, I will be ZUMBA certified as of march 23rd!! Yahooooo. DOIN werrrrrkkkkkkk;) be on the lookout!

Hey babes! Today’s post consists of the following:

So I hope you read my last post, cuz this goes along with some of the items I bought during my Asian market spree. Super stoked!

That’s right, I am attempting to make my version of so called “sushi”
No fish here. I mean, obviously you could, but I wanted a bit of a twist. I had purchased that really thinly sliced beef, remember.. ( the pic that looked like thin pig ears on a plate in my last post)so I wanted to get some yummy, fun use out of it.
I sliced it into thin strips. That would be my protein of choice for this cut roll.

Folks…let me introduce you to today’s recipe.

CAULIFLOWER, BEEF, & VEGGIE CUT ROLL

Optional needs:
Chop sticks
Bamboo sushi roller

INGREDIENTS:

Soy paper wraps o seaweed wraps.

1/2 cup cauliflower rice

A small handful of arugula or spinach

Very thinly sliced cucumber

Thinly sliced carrots ( bought in a bag from trader joes)

Very thinly sliced beef or pork you could use any sushi grade fish as well. Duh.

BINDING SAUCE INGREDIENTS:

1 tsp tahini

1/4 tsp brown rice miso paste

1 tsp lemon juice

1/8 tsp crushed garlic

1 tsp Parma chipotle cayenne ( vegan, available at whole foods)

Salt and pepper

Mix well in a small bow and set aside.
Lay down sushi roller and place your seaweed or soy paper on top. Spread your miso-tahini paste evenly over it. This will help the cauliflower rice stick to it. Oh and it’s supppper tasty too;)

I’ve just realized, I haven’t given you the recipe for the cauliflower rice……ugh duh.s
Sorry, I had made it yesterday, so it was ready in the fridge for me when I decided to make this…. Aright, it’s really easy, is wear. It’ll take you all of 5 minutes.

INGREDIENTS:or a few drops of stevia.

Salt and pepper to taste

Mix in bowl. Cover with plastic wrap, and microwave on high for 1 minute. This you don’t need to do. I sometimes just enjoy it raw, but heating it up, sure does soften the texture of the cauliflower and does give it more of a “rice” consistency.

Now that you’ve laid the foundation, you can start adding your fillers. Remember, you can use anything in here. I would’ve totally used fish if I had it, but, you know, sometimes I just don’t have sushi grade fish laying around the house……Lol. I wish. That shit is expensive. So, really, you could use WHATEVER. Be creative with it. You could even make sweet ones with fruit and yogurt! Ahhh genius!

Moving on…. Once you’ve layer down the fillers, you will begin rolling, and tucking, making sure to pack it it tight. If this part gets confusing…. Do what I did, and YouTube how to sushi roll. Lol.

Next step, you don’t have to do, but I found that it made things easier for me….
Lay plastic wrap over the sushi roll. I saw my sushi chef do this, so I just copied. Hahaha. I think it just helps to keep things tight and together when cutting the roll.

Yeay! We did it! Isn’t it freakin cute!! I mean, couldn’t be more of an American roll. Hahaha. I don’t know if we can actually call this “sushi”. Ah hell, who cares, it’s BOMB! In love with this right now. The more colors, the better!

Poured some liquid aminos into a lil dish, grabbed my sassy chop sticks, and enjoyed the shit outta this roll;) it’s gorgeous, isn’t it?!

In other news y’all…
Today was bittersweet. Well, it was a hard day for me to say the least, so bare with me….
This may be ridiculous to most of you, but, don’t judge, lol.
It was Will’s first day at daycare!! Wahhhhhhhhhhhh, I was like a nervous mom dropping off her kid for his first day of school. I’ve been researching places for weeks, in hopes to find one that was open the right hours, had a “small” dog area ( a big enough area too), was a good price, and on my way to work.
SUCCESS!
I found Four Paws.
He’ll be attending 2-3 days a week. So I was a bit crazy today. No lie… You best believe I was watching the nanny cam like a psycho allllllll day! Hahaha.

I called about three times. ( for sure they hate me now. Lol)

Call 1: (30 min after dropping him off) ummmm, yeah, hi, this is Paula, Willy’s mom, I was curious as to why I can’t see him on the cam, is he hiding? Is he nervous?

Call 2: hi, it’s Paula….yeah, Willy’s mom again. Hiiiiiiiiiiii….. So I noticed on the camera that there are a couple of bigger dogs in there. Why?

Call 3: hi it’s Paula again… (We know ma’am) what kind of food do have available there for them? Oh and maybe it’s the angle of the camera, but I don’t see any water bowls……

Ahhhh soooo crazy!
