A look back at the holiday….

In Christmas, family, life, Uncategorized On December 24, 2013 1 Comment

Hey y’all!!!! I am so embarrassed that I have absolutely neglected my duty as a blogger:( I have fallen off the map! Not that it’s an excuse….but life has been cray cray. I didn’t just neglect my blog, I also neglected to stay on my regimen of a healthy diet and exercise . I was on such a roll, I swear! It makes me soooo mad. And, although everyone just keeps saying, “whatever, it’s the holidays!” It’s still no excuse to totally throw everything you work so hard for throughout the year, out da windowwwwww! Anyway. That’s my sob story. I won’t tell you how much weight I’ve gained, cuz it doesn’t matter. Lol.
Anyway… Even though I have fallen off my plan for a couple months.. It’s time to pick myself up, and start fresh. Cliche? Maybe. But… I love beginnings;) I’ve got some very cool posts coming up and some changes to the site for the new year!

Today…my first day back to FROM FRIES TO FIT….I wanted to have a quick look back at some fun holiday moments. I love Christmas!!!

The best part about the holidays are….the PARTIES!!

It was a bit nonstop. It felt like every weekend was party time! My friend Lindsay hosted a super fun holiday party along with a sexy bad Santa to pose with. Lol. Of course I was all ” ohhhhhh, take a picture!”

Yep…..there was an ice sculpture.

I hosted the family in my lil North Pole for a fun holiday pizza making party! If you remember my last post….. (Photos of the decorations) I went a little Christmas crazy. Ugh, I love that shit. Well, I hope you saw it, cuz a week back, I accidentally deleted the post! Womppppppp wompppppp. I don’t know what the hell I did. I was super bummed.
Anyway, we had a blast!

Yesssssss, that is real pizza crust! Hunny….my usual “low carb self” was thrown out the window. No judging. It was soooooo tasty. We made like 4 different kinds of delicious pizza.

My sweet cousins came to visit! So of course, I hosted yet another delicious dinner;) more pizzzzzzzaaaa! Hahah. And yes, the wine was flowing. As usual.

As you all know, in August, I left my salon Vidal Sassoon, to continue my career at Román Salon. I spent many years with these people and they became a part of my extended family. I was lucky enough to join them as a guest at the annual holiday party. This year’s theme was “White Winter Wonderland” this dinner was fantastic! It was a black tie affair darling. ;)

Everywhere you looked, WHITE! It was really beautiful.

Love this. All white wrapping paper:)

Not only was all the decor white…..

All the food was white! Lol. The chef was amazing and turned that shit OUT! Dayyyyum.

Christmas Eve was mellow. Just what I wanted. It was just my folks, my cuz, and I. Unfortunately, my brother and his girlfriend weren’t able to get here from Vancouver:( but we made the best of it, and skyped while opening presents at midnight:)
Dinner was healthy and delicious. Roasted chicken and veggies, and garlic bread. That’s right. I ate that shit up!
Christmas Day was also a beautiful sunny day, so Marcin and I spent the day at the beach:)
Marcin is polish, and I was lucky enough to have my first traditional Polish Christmas dinner.
PIEROGIES! Yup, homemade!
Along with red BORSCHT soup, with mushroom pierogies.

I die! This dinner was fabulous! Merry Christmas to meeeeeee! I am obsessed with pierogies;)

As you know, no meal is complete with a touch of something sweet.
Traditional polish poppy seed swirl cake. Makowiec (poppy seed roll)

Since we had dinner around 5:15 pm ( I usually eat later) by 8:30, we were hungry for a snack. Lol.
This was us on Christmas night.
True LA style.
Skinny margaritas and chips & salsa at Cabo Cantina. Hahaa

Well, with Christmas behind us, I am looking forward to a very prosperous new year! Can’t wait to share pics from the first day of 2014! Hope everyone had a beautiful holiday! Love uuuuuuuuu

MERRY MERRY MERRY Christmas y’all! It’s soooo nice to have 3 days off in a row you have no idea! Last year, we only had Christmas Day off, and I can’t even begin to describe what a bummer that was. New Years we will ask have a 3 day weekend because it lands on a tues! YEAYYYYYY! This weekend couldn’t come sooner. I was ready to see my brother, be with my family, cook, shop, all of it. I absolutely love Christmas! We had a lil scare this morning when my bro called from Canada, saying his flight had been cancelled, and he wouldn’t be arriving till Sunday night instead of morning. Ugh. Whatever, positive thoughts, and he got here safe and sound, and we enjoyed a few hours of wine, and dinner.

The fireplace is lit, the Christmas music is flowing, the presents are wrapped, and I’m enjoying a mimosa as I write this;)

You see, I can have a mimosa, since I worked my ass of at the gym this morning! I got there as soon as they opened, so I could get it outta the way before everyone woke up to start making breakfast.
I did extra cardio because I had lots I’d dessert last night:)
1 hour on the elliptical :
Alternating 3 min @ resistance 10/ incline 5
2 min @ resistance 5/ incline 9
I burned 6 hundred something calories. Stoked.
Then did, 3 sets of 10 pull ups with 80 lb assistance
3 sets 10 dips
3 sets 10 push-ups
25 mountain climbers
1 min plank
20 vertical leg lifts
25 crunches

I was sooooo ready to jump in the shower.
Mom made a great breakfast of eggs, chicken sausage, and pastries from the Argentinian market.

The croissants, I just can’t resist, so yes I had one;)

Brother bear and his girlfriend Sarah:) love them. Sooooo happy that we are all together. Breakfast was delicious. And a special thanks to mom, for workin’ it OUT in the kitchen the last few days! This pic was taken when they arrived… Obviously not having red wine for breakfast…..we’re not that cray.

After breakfast, mom and I stopped at the store to grab wine, champagne, OJ , and cheeses, cured meats, nuts, and figs for our cheese platter. We had breakfast pretty late, so the cheese platter in the late afternoon will be my lunch.

Wilbur hanging out with his slightly buzzed mommy. Lol. I don’t generally drink champagne, but I was feelin them after a couple. ;) he looks a bit annoyed.

My twin, mama, and best friend.

I wish I had pics of our amazing dinner, but I got so into just enjoying it, and completely forgot to snap some shots. My bro and his GF follow a strict vegetarian diet so we made homemade canelone, stuffed with ricotta and cheese, red a sauce, and homemade non dairy Alfredo. We also made a recipe of stuffed yams that Sarah had found on We baked the yams in the oven for about 40 mins. Made a stuffing of white beans and kale. Topped with shaved Parmesan and red pepper flakes. WOW. For the meat eaters, mom made a side of bolognese sauce, that was divine.
Oh of course I managed to snap a shot of the desserts. After dinner, we love to enjoy a tea or coffee with an array of pastries and chocolates. YES PLEASE.

So, in the Bedo house, our tradition is to stay up till mid it and open presents after dessert, hence, the coffee to stay awake.
We sit in a semi circle, and watch each other open 1 gift at a time. Of course, the annoying camera lady taking pics of every reaction and gift that is opened. Lol, and no joke, this process takes at least 1hour &1/2. SOOOO MUCH FUN. I seriously got everything I wanted. Santa (ma & pa) must of felt I was a good girl this year;)

A few of my awesome gifts. I was dying to get this watch. The polar USA ft60, the BOMB performance and training watch out there! My no slip yoga gloves,

And, my new book, that I’m seriously obsessed with! Thank you Nick and Sarah:)
Sill learning and really enjoying it.

What a fun night! By 2 a.m. I was practically cross eyed. Sooo tired. I actually passed out on the couch. Yes with all my clothes on. I didn’t care one bit, all I knew was that I had no work in the morning and could yet again sleep in like a lazy lady. I decided Christmas Day I would have a “day off” from the gym. Well, it was closed anyway;) Christmas morning started off slow and relaxed. We all woke up pretty late. It was a beautiful sunny but crisp day out. Mom was making a big breakfast of eggs, potatoes, sausage, and Belgian waffles. Umm, yes, ridiculous. I made my yummy protein muffins, ( trying to be healthy this a.m) but I made them more of pancake form this time. I really just didn’t want anything to heavy because we had been eating till late last night. The curse of being Latin;) Lots of late night eating. Ugh.

The mimosas came out as soon as my friend Natalie came over. She joined us for breakfast and hung out for a few hours.

Nat lives in San Fran, so I barely ever get to see her, couldn’t have been more stoked when she came by.

We all hung out in the backyard with a yummy fire going and mimosas flowing. Catching up, laughing, and shit talkin. Nothing more than just being in the moment.

Annnnndd…..then, we began our fireside photoshoot. I thought it may have bee too much to show off allllllll of them, so just posting a few;)

Ahhhhhhh, I love vacation.. My uncle stopped by with the fam, and brought his FAMOUS homemade Argentinian alfahores de maizena. My god, they are stupid good.

Christmas night was a fabulous dinner and party filled with fun, laughter, wine, and friends. The year definitely ended with a bang! I’ve gotta say though, I couldn’t be more ready for 2013. Things are looking good and I am so happy and proud of the successes of this year. As January comes around the corner… I’ve made sure to get my vacation plans written out, the workouts on point, and continue to strive for a better and healthier life. Although , I know, nobody is perfect, and I will struggle like most at times, but the intention is there. So this coming year…lets help each other reach our goals and encourage each other to stay active, yeah!?

What are your New Years resolutions?

7 Days til’ CHRISTMAS & The RAW Food World

In Christmas, presents, Raw food, Uncategorized, WOD On December 19, 2012 0 Comments

On the seventh day of Christmas, I bought myself some THIIIIIIIINGGSSSSSS!!!

7 days babes!! Are you guys ready? Have you finished your shopping yet?? I’ve got news…NO ONE HAS.

My little snowman is out, counting down the days. So you know what that means!!! I’m finally getting into the spirit!

Ok, enough with the exclamation points.

I must admit, that this past weekend has been lacking in the workout department. Today was the beginning of a new week, and I was ready to hit it hard. GYMRAT to the fullest.

Alarm in my ear at egggggzactly 5:20 A.M. Although feeling exhausted, I was pumped to try out my brand spankin’ new New Balance 730 running sneaks. Call me crazy, but I think running shoes are sexy.

I jumped straight onto the treadmill and began at a 6.4 mph speed. Maybe it’s because I’m not used to the shoe, but I didn’t do so well today. This shoe, compared to the Nike free, feels like it’s got a bit less support. Not gonna lie, I was struggling just to get through my usual 3 mile interval. So, I rushed through it, and jumped on the eliptical for 20 minutes to burn a few extra 200 cals.

Today was BACK day:

Lat pull downs

Dead lifts

Tri-cep dips

The most embarrassing looking breakfast, that I was ashamed to photograph it. It was mush, but pure protein & DELISH.

Egg whites

Vanilla protein powder

Flax milk

Chia seeds

Bee pollen

I think that was it… weird concept, but it had the consistency of porridge.

OOOOOOHHHH….Yes, before we move on to Prezzzzies, I wanted to share with you a few finds from this weekend’s trip to The Raw Food World in Ojai. I come here about every 6 weeks or so. Ojai is about 1 hour & 15 mins away, but I go out there to cut some clients, who btw, are amazing clients and enjoy every minute of being out there. This city is removed, beautiful, and quiet. I love going out there, and usually end up spending a few extra hours, checking out the town and  stopping by all of the local shops. This city, you may have heard, has one of the most popular getaways in So-Cal. The Ojai Valley Inn & Spa. I’ve never been, but I’m DYING to!

Anyway… Raw food World is INSANE. It’s a warehouse that distributes all of the major RAW food brands to all of the most well known markets and restaurants out there. Everything is in bins that are labeled, but no price is listed. Trust me, the price is at least 30-40 % less that you would pay at say, Whole Foods. Wholesale pretty much. Well, since I can only stock up every 6 weeks, you can imagine. Girl lost her SHIT.

Listen, I’m not a total raw foodie. I consider myself a Low carb-gly-raw-leo.

A lil of this a lil of that…. you know.

Low Carb

Low Glycemic

I pretty much try to stay away from all processed and refined.

Also, I try to stay away from sugar, grains, and starches.

Here are some of the purchases from the trip:

Mulberries and sprouted almonds

Raw cashew/pistachio butter

Bee pollen (which I have no idea what the eff to do with) & pumpkin seeds

Raw cacao nibs! my absolute joy in life. Cacao nibs are basically raw chocolate, Cacao has more antioxidant flavonoids than any food tested so far, including blueberries, red wine, and black and green teas. In fact, it has up to four times the quantity of antioxidants found in green tea!  RIDICULOUS!! SUPERFOOD NATION

Raw tahini, which is a great base for hummus, dressings, etc. & Hemp seed butter. First time trying the butter, so we’ll see.

Pumpkin seed butter ( it was 50% off so, why not) I tasted it, and I think was expecting something sweet for some reason, but I think this would be a great spread over swiss chard wraps or on some flax cracker. Definitely savory, but gooooood!

Ok, this was interesting. Sea Clear. Fermented Kale and Chlorella in miso paste. Sounds awful, but actually, once mixed with a bit of water and thrown over a salad is delicious!!! If you need probiotics and fiber in your diet, you may want to try this product!

Goes to show that my trip to Ojai was a success. Sometimes, you just get tired of the same NUt butter, you know. I am obsessed with this place.

On the way home, I stopped off at where else, but, T.J Max. I saw one off the freeway and practically ran 3 cars off the road just  to get to it.

Well, soooooo worth it. Of course I found a few prezzies for myself. How ADORBS! Dainty and feminine.

And the best part: Plated sterling silver, and 14-20 bucks each!

I’m sorry if that’s not a steal, I don’t know what is!

I bought a rose gold necklace, silver necklace, and this great little bracelet.

I wore the rose gold one to work today and got loads of compliments:) Completely booked today, YEAY! MOOONNNIESSS!

I got home, and felt like doing absolutely nothing. I got in my sweats, lit a candle, poured a glass of red, and finished some last minute wrapping. I just wanted that ish done.

Speaking of presents, I love my clients! Came home with some awesome goodies today.

A great bottle of Prosecco. Ramona know I love me some BUBBLES!

A yummy apple crisp diffuser and a  beautiful handmade bracelet from another dear client. It’s funny, I would have never picked this out, but I put it on, and…. It looked stunning on! I received loads of compliments. Thanx Joanie!

This Candle that was gifted to me, is probably, (actually no doubt) the best Christmas smelling candle I have EVER had the pleasure of burning in my house.  Never would I EVER have paid over $30 dollars for a candle, but after receiving this….smelling it and falling in love with it, I may rethink that. It smells like your in the middle of the mountains, surrounded by pine trees and snow. It’s perfect, and I never want it to end;)

Isn’t it just gorgeous!?

What is your lifestyle diet?

Ok guys, I’m just finishing off my wine, and it’s time for some rest. hope you have a beautiful and safe night<3

The time has come, I’m pretty sure that this is the lastweekend we have to reallyshop for our Mothers, Fathers, Friends, and Lovers. I have to admit…eeeeek, I have not even thought about it till now! Usually, I’m done by mid-December. Tis year procrastination has gotten the best of me.
Does ” I’m super busy” count?

If you are struggling looking for the perfect gift, I’ve got some great ideas below!

  1. Gorgeous silver hammered stackable rings. They are feminine, classic, and enhance any look. These rings are a product of Nadine Jewelry. These are gorgeous & at around $75 bucks, you cant go wrong. She works with recycled siver, rose gold, and gold. Any girl would absolutely rock these. Check out her ETSYSHOP
  2. Cuisinart handheld mixer. A perfect gift for anyone who likes shakes, smoothies, and just loves being in the kitchen. I thought I had just about everything I needed in my kitchen, until I received this as a gift, then I realized I was missing out all this time. I use it constantly. I used to ALWAYS have to bust out my big blender every time for 1 smoothie. Too much work. This makes my morning protein shakes LIKE A BOSS! At around $50 bucks, she’ll be stoked, and you didn’t brake the bank.
  3. Ok, california doesn’t exactly have snowy weather, but, who doesn’t love a great BEANIE!? We are loving this BURTON beanie. They have got so many styles, it’s hard to choose from. Remember, color is in right now, so dare to be bright. Especially if this chick takes off to the mountain in the winter. Color is the THING! At just $25 dollars, this makes a great stocking stuffer!
  4. These Kerastase products continue to win ALLURE’S best and favorite products award. Learn more about their amazing and innovative technology on their website. These are a great gift! Being a stylist myself, I know, very well, the importance of using the best products for your hair. What girl doesn’t want to protect their hair from blowdrying and other heat styling. Nobody wants dry hair, right? These thermique products ensure full spectrum protection while smoothing and add nutrients to weakened hair. It’s hard being a girl people! They don’t know what is good or what suits their hair type best.Honestly I think some guys are just a ill embarrassed to buy hair products for themselves. With the new Kerastase Homme mens line you can’t go wrong. These products provide strength and density for the specific needs of men’s hair. Maintaining hair mass is the concern of 70% men. * The first dual action hair maintenance system designed to leave hair feeling and looking stronger, thicker and refreshed.

HEALTHY HOLIDAY COOKIES right outta the oven!

In Christmas, sweets, Uncategorized On December 14, 2012 0 Comments

I have been SOOOOOOOOO inspired in the kitchen lately! I love cookies

Since I can’t always have those sugary, delicious, full fat options during the holidays, I found and adapted a super healthy option. These babies are full of fiber and protein. Soft and chewy with that little crunch from the nuts. Look, OBVIOUSLY a Mrs. Fields, or Uncle Eddies cookie would be on the top of the list, but guess what fit friends, we’re trying to see results here! I get it though, sometimes we just want something that looks, feels, smells and tastes a damn cookie.

The cinnamon and all spice give them a wonderful little kick, the cranberries, and raisins add that beautiful pop of color, the nuts give a subtle crunch, and the coconut with vanilla give a wonderful sweetness without having to add any sugar to this recipe. That’s the best part, you see, you can have your cake and eat it too;) all NA-TU-RAL baby!

3 ripe bananas help to bind all of the ingredients. You could also switch up bananas with egg whites, or 1/2 banana and 1/2 egg white.. ( remind me to try this).Mash up and combine well, I got in there with my hands even:) I like to have fun in the kitchen and it usually becomes a mess, but with this recipe, it was so simple that I couldn’t get messy with it at all.

Once all combined, I added the oil ( I used coconut oil, that was very soft, almost melted) but you could also use canola oil, or maybe even natural balance butter. I would be curious…to make this an even healthier recipe, to sub the fat with unsweetened applesauce… ?? Hmmm.. I gotta try that, but, for now, we don’t mind a little fat, especially if you are eating them as a treat, and not gorging.

I pre-heated my convection oven to 350 degrees.
And continued to add in the rest of my ingredients to the cookie mix.
-Vanilla bean extract
And with my hands, I began molding them into little balls and pressing them down in my palm to flatten them out a bit.
Placed them on a greased, lined baking tray.

Bake for 20 minutes, and watch for browning.

Once out of the oven, place to cool off on a wire rack.

They were so good, that I ended up eating three right out of the oven with my coffee this morning. Eeeeeek. These would also be AMAZING with either vegan chocolate chips or 100% cocoa chocolate chips. Yummmmm

For my mommy followers, these would be a perfect treat for the kiddies! Make a whole load, and stick them in the fridge. They are absolutely nutritious, and perfect for on the go.

I waited for the rest to cool off, took these cute shots of them, and started bagging them up to give to my FIT friends. Nothing better than sharing freshly baked cookies with the people you love. I had loads of fun in the kitchen this morning, and will not be feeling guilty when I stop to munch on one of these YUMMIES.

I hope you enjoy them. Can you believe Christmas is around the corner??? Geeeeeez,
I need to shop, like, ASAP.

Let me know, if you try this, and suggest anything better!

GOodiE Tuesday

In Christmas, Uncategorized, WOD On December 12, 2012 0 Comments

GOOD morning friends! I did a naughty last night, too much food and wine, and I’m paying for it now!
I was hurting at the gym today. Ugh I hate when I do that. You see, I hadn’t seen this girlfriend in quite some time, and you know how it is, you start chatting, gossiping, wine, laughing, more wine, ohhh dessert, don’t forget dessert wine. I mean, excessive. When she left I immediately passed out. It was probably around 11 p.m.
ALARM!!! 5:00 a.m wake up call from the damn iPhone. Noooooooooo. It is absolutely not a good idea to be hungover at the gym this early. The rest of this week I’m gonna be a good girl…

Ok… Moving on.

30 minutes on the elliptical.
Alternating with incline 8/ resistance 5 for 2 minutes
And incline 6/ resistance 9 for 3 minutes
For a total of approx 365 calories burned.

After cardio I did a plank series using my gymboss interval timer set on 50 secs work and 20 secs rest.

Jumping jacks
Push-ups to alternating side plank
Mountain climbers
Stationary plank on elbows
Sit-ups on stability ball
Russian twists
Jumping jacks

Phweeeeeeeeee, I was worked. After this series I went to the weight room and did some dead lifts, back rows, and pull ups.

Overall I had a really good workout, except I started to get a bit of a headache midway. That’s what I get!

Oh btw… If you like HIIT interval cardio, you will really feel great after doing this 30 min fat burner on the elliptical. I usually do these high/low intervals on the treadmill, but today I switched it up , and was glad I did.
For some reason, I sometimes think that if I’m not like, practically sprinting on the treadmill, that I’m not getting enough of a workout. Absolutely not true. I’ve noticed lately that my knees, whether on cement or treadmill, have been extra sensitive. So I’ve been trying new ways to get a full body cardio workout without running. Now the elliptical and stair master have become my new besties. Never at a steady pace though. Always switching up the level or resistance to keep your body working extra hard and to encourage more afterburn.

Anyway, yada yada yada, you get it.

Since I was away this weekend I really didn’t have anything that I was into in the fridge, so I managed a quick trip to whole foods before work to pick up some staples.

Breakfast and lunch to too boring to even post. So we’ll move on to my lovely leftover ground beef mixture over a bed of arugula that I had for dinner. It was delicious.

Of course siracha makes everything more yummy. Who’s with me on this one?
Oh and check out my cute new , well, “vintage” bowl I got at the thrift store on my way home from big bear! So cute. I love. ( I scrubed it, duh) lol

I actually got out of work quite a bit early tonight. ( silently screaming inside with happiness) I didn’t have anyone booked for the last couple of appointments, so I managed to sneak out. It was perfect because I was dying to hit up Crate and Barrel for some last minute ornaments and decor shopping. Ok… This is the worst part of working in the area that I work. All you wanna do, all the time is SHOP! The streets are gorgeously lit up and everyone is walking around with shopping bags. How really could you resist.
I saw that the ornaments were 30 % off, so I started digging. Remember a few posts back, I mentioned that my ex had all of my ornaments from last years Christmas at his house. Wahhhwahhhhh, oh well, I’ve moved on from getting them from him, cuz he lives kinda far. Soooooo…. I started a new collection with a new theme;)

When I was checking out, I realized that I had an extra 15% off coupon in my wallet that they had sent me in the mail. STOKED!

Super cute right? I especially love the cloth/ woven looking ones. I thought these would go perfect on my obnoxiously fake white tree. Lol

Ok so, I know, the damn thing needs some lights or something right? Still feels bare.
Getting there. I actually think ill get a real tree next year.

I’m finally starting to get into the Christmas spirit people, yeayyyyy! It’s happening. Tomorrow is 12-12-12. Time to make wishes and listen to Christmas music!

Xoxo, P

Question of the day:

Do you prefer a real tree or a fake one?

Hit up Ross ( dress for less) when I got back to the valley to see if I could find some cheap wrist weights to use in Zumba, and I found so much more! Look at all these amazing extracts!
Flavor heaven.

I found these wrist weights for a whopping $ 4.99, holy cheapness, and these training gloves. Finally, I kept saying that I needed gloves ( I tend to loose them within 2 was of getting them) Really gonna try to put a little gym bag together so that I’m not just carrying around everything in hand while working out.

Hey guys!

OK, so I know I’m not the only one round here who goes a bit cray cray during the holidays! Sweets and treats all around us. If you are like me and have a a hard time controlling yourself around all those high calorie foods that seem to be the little devils on our shoulders, but you wanna enjoy Christmas with the rest of em’ , well, I’ve got a fun, sweet, (and if you love coconut) delish little recipe for you babes!
Ok, so most of you know,( and if you don’t know, now you know) I love me some Martha Stewart. I am a proud subscriber to her “Living” magazine. The other day as I was home, flipping though the pages, I came across this recipe.
First thing I thought was ” oooohhh this can be actually a healthy recipe!” Then I thought “perfect for Christmas, and super cute!”

The original recipe called for 3/4 cup sugar, but of course I wasn’t down with all that, soooo, I changed it to suite us..

2 1/2 cups finely shredded (dehydrated/or fresh) I used unsweetened reduced fat shredded coconut (whole foods)

1/2 cup erythritol ( which you can also find at whole foods)

2 large egg whites, lightly beaten

4-5 tsps of vanilla extract ( I used Madagascar pure vanilla bean paste) love that stuff

Pinch of salt

(Optional, for looks: confectioners sugar for dusting) to get that snowy look

Pre-heat oven to 350 degrees.
Thoroughly combine coconut, erythritol, egg whites, vanilla, and salt in a med/lrg bowl.
Mix really well with a large fork and hands.
Begin to form little trees with your hands, using your fingertips to make pointed tops.
Line a baking sheet with foil or parchment, make sure to grease whatever you use so that the coconut doesn’t stick.
Space them out evenly
Bake until edges are golden and trees are firm.
10-12 minutes but begin checking at 10.
Let cool and dust with snow:)

Bring these to a party, they would look great at the dessert table!

PLEASEshare below your fun holiday recipes! I am always looking to build my healthy recipe profile!

Tuesday Things and Workouts…

In Christmas, decor galore, protein shakes, Uncategorized, WOD On December 4, 2012 0 Comments

Good day babes! Today I felt back on track with my training. I put on my CEP ankle compression brace, I grabbed my gymboss and hit the gym really early.

I started off on the treadmill:
4 minute warmup
walk mile 1 at 6.4
Mile 2 at 7.1
Moved over to the eliptical for:
3 miles with Intervals of :
incline 5/ resistance 6
to 10 incline/ 10 resistance
It alternated every two minutes.
That HIIT workout got my heart rate up that’s for sure!
I moved into the aerobic room and was ready to start my rounds.
I put my gymboss on 50 sec work/ 20 sec rest
  •  jumping jacks
  • push-ups to plank
  •  Sit ups on stability ball
  •  alternating lunges with bicep curl using 12 lb weights
  •  plank on elbows
  •  Mountain climbers
  •  bicycle crunches
  •  vertical leg lifts
  •  Jumping jacks
I recently bought this awesome PUMA
top. The sleeves snap on and off, which is great for this on and off weather we’ve been having. It’s really comfortable and light, so I didn’t feel suffocated. Love it!
Super cool look too! I kinda felt like a ninja. lol

When I got home I went straight to the kitchen to make a yummy protein smoothie. This one was made up of:
  • my favorite 30 gram per scoop vanilla protein
  • 1/2 a banana
  •  1/2 cup unsweetened flax milk
  •  1/2 cup of water
  •  2 tbsp low fat cottage cheese
  •  1 tbsp PB2
  •  vanilla bean paste ( or extract)
  •  1 tbsp sugar-free vanilla syrup

Feeling good after that, I took some time to work on the blog, hang out with Willy and take my time getting ready. I love my mornings. I wake up early to get the most out of my day. Some people think I’m nuts. Sometimes going to bed early and in my gym clothes (yes, it’s true), but whatever, I get stuff done and it feels great.

With the holidays around the corner, I’ve been receiving all kinds of little coupons, which doesn’t seem like much, but you know what, it’s money, and every bit counts. Especially during a time when you are spending quite a bit of money pretty much the whole month. It’s nice to know we can actually save some money during that process. I sometimes take these for granted, but hey, they’re offering, so I’m taking!

I just realized a had a collection of em’ in my wallet:)

For snack and lunch I packed:

RAW crusts with organic ghee+ sugar free jam

A persimmon

A low fat string cheese

1/2 cup of blueberries

Leftover salmon over a salad

I’ve had kind of a late start with the decorations this year for some reason, but I finally busted most of them out to get my spirit goin. Problem with Christmas decor is that it can easily make a small space feel and look cluttered and that is a little annoying to me. Ew, I just sounded bitchy.

You know what I mean though. Right?

I must mention that these flowers have somehow survived 2 1/2 weeks! I swear, so weird, but I’m stoked! All I did was change out the water every 3-4 days.

My front door:) A little cheesy but I find it cute like in a grandma kinda way:) Mom sent me home with it a few years ago, so i felt like it had to go up. I think it’s grown on me. I  really want to start a better collection that I can really connect to, you know, like how your parents have ornaments and decorations that go back to when you were in kindergarden. Never made a difference if they were the most hideous looking object, they still make it onto the mantle. So funny

I can’t live without candles in my house. I especially love them when they create a holiday vibe in the air. I light them first thing in the morning (well, when I get back from the gym) while I get emails and posts ready, and every night while I’m cooking and enjoying a glass of red.

If you haven’t yet hit up Bath & Body Works this month, Check out their HOLIDAY CANDLE SELECTION! As soon as you check out, they give you all sorts of holiday discounts like $10 of your next $30 purchase. It’s awesome. The one I have lit right now, is Marshmallow Fireside. It smells like camping/christmas cookies!  I had also bought these great Mexican Pumpkin candles from World Market, that were buy one get one free.  Can’t beat that!

Cheesy bow, But I had it, so I figured, to hell with it, let’s put it ALL up! lol

I have a little obsession with white X-mas trees at the moment. Don’t ask.

My ” I LIKE NUTS” nutcracker I got last year. Love my lil guy.

My Tobi Tobin candle that I think is too pretty to even open.

And of course, you cant have the holiday without at least one poinsettia. They last forever and are easy to take care of. I actually think they’re really pretty. Well, except for the gross colored foil they wrap it in. EW. I picked this one up when I ran into Trader Joe’s yesterday. $5.99 are ya outta ur minddddd!

Tonight, I’m gonna leave you with a little thing I call:

Tomorrow Morning’s Challenge

What is your favorite passed down holiday tradition??

First TREE decorating party and dinner!

In Christmas, Dinner dates, friends, Uncategorized On December 4, 2012 0 Comments

Happy Holidays People! We can officially start saying that! The first “CHRISTMAS’ party has arrived, and it was a blast!
Every year miss Haley hosts a great tree decorating party along with a fabulous home cooked feast. Full flavor of course, don’t bring your diet to this party!
She’s always had a knack for cooking, but is getting better and more sophisticated every year!
This chick loves a knife in her hand!
( god forbid she put it down for 2 secs to vogue) hehe.

I’m a bit late in posting this because I had to go through so many pics from this evening. I couldn’t choose which ones were my faves:)

How good does this look!
Lemony kale with olive oil, Parmesan slice, over crostini

Arugula pomegranate salad with hemp seeds, manchego cheese, shallots, with a pomegranate molasses dressing. Wow

Homemade spinach artichoke dip in a sourdough bread bowl. This was a freakin HIT. Especially with me! I don’t know anybody who isn’t a fan of this dish, I mean, c’mon . This went fast:)

Who doesn’t love champagne for a celebration?!
We were doing lots of toasting this evening.

Haley working hard in the kitchen, making green beans blanketed with asian style filet mignon .
Ridiculous. Don’t be jelly! The beef was just simply marinated in sugar and soy sauce, wrapped over the beans, and thrown in the broiler for, something like 5-10 mins. Soon easy. Great dish for a party and not messy

Gorgeous right! Not gonna lie I had like 5 of them;)

Bacon wrapped baby potatoes. Another great easy recipe to throw together for a party. She’s really great about choosing recipes that won’t keep her in the kitchen during the while party. You have to prioritize, clean as you go, and the most important thing, spending the time to enjoy your guests. I must admit, I’m bad at this. I tend to over complicate things at times, pick hard recipes, and make a MESS in the kitchen. Working on it. Promise.

Look at this spread!
Now that’s a hungry girl party. Lol

Hehe, Mr. Wilbur waiting for food to drop. What’s new. God, he’s so cute.

The babes

Time to decorate…ok, can you tell I’m a ill tipsy here. Btw… I forgot to tell you guys!

I came to Haley’s 2 hours after the SPARTAN RACE, so I was exhausted. Physically and mentally, but I was NOT missing the yearly tradition. With that said…. After a couple glasses of champagne , I was done for.

We busted out the ornaments and lights and started goin nuts;)
It took us a while to get tree to stay centered. For some reason that thing kept tipping over. How many girls goes it take…..

I’m really loving creating traditions with friends. It gives us days to really look forward to, you know.

My friends are cute!

Yasuna brought dessert. An amazing cake from a local Korean market. We always tell het to bring it when we get together for parties, because it is so damn good! Really super light and fluffy. Nothing heavy about it.
I think it’s chocolate mousse, thin sheet cake with light whipped cream, strawberries, and shaved chocolate.

Aaaaaaanddddd, for some odd reason we decided to put birthday candles on top and had Haley blow them out. So weird.

OOOOKKKKKKKK this is clearly when I had had enough to drink.

Check out the almost empty table, yeah, we cleared it out! I ate tons!
Pretty soon after this shot, I was passed out on the couch with Willy sleeping on my head.
Tired and tossed in every sense of the word. Haha.

I will have you know that I slept from 5 p.m this evening till 5 a.m the next morning. Yep. On the couch. Somebody was TIRED!

What are some of your holiday party ideas?
