BANANA OAT MUFFINS

Mornings for me are really hectic. Between working out, blogging, walking willy, making breakfast, and getting ready for work, I’ve practically got no time to spare. Every minute counts:) So, I’ve been looking for recipes that are so simple, I could do them with my eyes closed. (ok, not really) but just toss a few ingredients together, pop them in my lil convection oven, and get ready while they’re cookin. I usually have my breakfast to go, so this is perfect!

INGREDIENTS:

1 cup oats

1 ripe banana

1/4 cup almond milk (I ust the silk 30 cal almond milk)

1/4 cup egg whites

1/4 tsp vanilla extract

(you could also add a few drops of stevia if you prefer things a bit sweeter, but I found that I didn’t need any)

 DIRECTIONS:

pre-heat oven 350 degrees

mash up banana with almond milk in a bowl

add oats, mix well

add vanilla and egg whites and mix

you can bake them in muffin tins or ramekins whatever!:)

just make sure to grease whatever you choose to use with a coconut oil spray and be sure to disperse the batter evenly makes 3 or 4

bake 15-20 minutes
