SOUTHWESTERN HEALTH OMELETTE

I whipped this bad boy up in less than 1o minutes, so there is no excuse why you shouldn’t be running to the kitchen, and doing the same:) I love sharing these quick and healthy morning recipes with all of you, because I know how it is. There is never enough time in the A.M. I’m usually running around with my head cut off, but I make an effort to sit down every morning and have a civilized meal. This really will set the precedence for a good day. Since sometimes throughout the day, you may not have time to sit and eat, or maybe you skip lunch all together, or maybe you eat, walk, and talk all at the same time, at least then you had those few moments in the morning where you got to sit, reflect, and enjoy:)

I make this as soon as I get home from the gym, while my body is still burning calories and I need the protein to build lean, strong muscle. Sometimes just scrambled egg whites just doesn’t cut it. Get me?

So, here it is. A little spice, but definitely NICE!

INGREDIENTS:

  • 3 egg whites or 1/4 cup egg whites in carton
  • 1/2 a small red bell pepper
  • 1/2 a small green bell pepper
  • 1/4 chopped zucchini
  • 1/4  of a green onion stalk
  • a pinch of oregano
  • a pinch of red pepper flakes
  • a pinch of chipotle seasoning
  • 1/2 tsp crushed garlic
  • salt and pepper to taste
  • 1/2 tsp hot sauce of your choice
  • 1  dollop of fromage blanc or 0% greek yogurt
  • a sprinkle of flax or hemp seeds ( high in omegas)
  • chopped cilantro to top off

DIRECTIONS:

This recipe is for ONE serving.

Grease a small skillet with coconut oil spray or a little grapeseed oil.

On low/med heat add chopped peppers, zucchini, green onion, garlic, spices, and salt & pepper

keep stirring till veggies are softened.

Transfer veggies to plate.

Re-grease the skillet and add egg whites

Once almost cooked though, add back the veggies to one side, and fold other side over to for omelette.

sprinkle with salt & pepper

Flip omelette to slightly brown other side.

Transfer back to plate, top with fromage blanc or greek yogurt, add your hot sauce, chopped cilantro, and sprinkle your seeds on top

Serve and ENJOY!
