I was so embarrassing this morning at the store, alllllll taking pictures of the box, so I could immediately post on instagram. Goooood Lord. This thing is incredible. You could literally put a whole avocado pit in your smoothie, and you wouldn’t even be able to tell it was in there. it’s that powerful. Also, not to worry, it comes with a 7 YEAR WARRANTY. Pretty great.

I’ve been geeking out over here. So far this morning, I’ve watched the hour DVD it came with, read the whole recipe book, and researched online. Listen, I’m not gonna buy a $500 blender and not utilize or take advantage of EVERY single feature. I went to the grocery store today, so you best believe, first thing tomorrow morning I will be making my goddess green smoothie :) No chunks in this one! (my last blender was a joke).

Around 1:00 I got the hell outta the house. I wanted to sport my Christmas gift from Mama. My new polar watch. It was time to set up the fit test, and give this puppy a try. First things first…

Fitness test. Before setting up your new training info and schedule, you must strap this heart monitor/transmitter snug right under your tatas. Follow the steps on the watch,lie down and relax until the watch beeps, your heart rate will now sync. After i did this step, I was ready. Except, I didn’t realize I had to wear the freakin thing every time I worked out to get the accurate heart rate bpm. Yes, ONLY bummer. I went for a quick run with willy to try it out without the transmitter on, and was wondering if I had received a faulty watch. LOL Dummy. The thing is actually not even noticeable. it’s pretty discrete.

Me and the transmitter n’ all headed to LA fitness for my first training sesh.

Today’s workout consisted of:

  • 30 min elliptical intervals high/low resistance
  • 20 min on treadmill. 1 mile @ 6.4 mph. 1/2 mile @ 7.1 & 1/2 mile alternating intervals of 30 seconds 10.0 mph-30 seconds rest
  • Ab series
  • Lower back raises
  • Superman
  • dead lift with 60 lb bar
  • push ups
  • stretching

I was like a kid in a candy store. I swear, this thing inspires you to work harder. The whole time I was working out, I could see exactly what I needed to do to get into a fat burning zone, when I was in rest mode, and when I was in the mid-range zone. I can use this watch to set fitness goals — lose weight, improve fitness, or maximize fitness.

This watch and transmitter also has an EnergyPointer, which calculates the point where training turns from fat burning to fitness improvement, and in weekly summary you read on the watch

it will also alarm you if your heart rate exceeds or dips below your target sounding an alarm. It tells you how well you have done in each target heart rate zone. Between the tracking and motivational elements, a trainer without the trainer ;) 639 calories burned today. STOKED!

This image shows precisely how much time I spent in each target heart rate zone during my workout. 3 being the highest intensity. Not just that, the watch saves your training, so that you have the ability to see your improvement.Amazeballz. This little gadget will push you to want to do better and burn more calories. When I would work out before the watch, I was just relying on what the machine would say. I always thought the calorie count was fishy…..it always seemed really high. I put it to the test today, annnnnnd I was right!! The difference was astonishing. It was almost a 175 calorie difference. The Polar ft60 really has the the right accuracy, and even though I realized I wasn’t burning as many cals as I had thought without it, it forced me to work that much harder to get the results I expected. Don’t trust that lying little elliptical;)

I left the gym feeling fit and accomplished. That transmitter is actually really comfy, I forgot I had it on, and ran my errands for the next 2 hours with the damn thing on. Loser.
I stopped in at the local supplement store near the gym to pick up some staples that I was out of.

Once I got home, willy just about had a heart attack. I just don’t even know what to do anymore! He has the absolute WORST case of separation anxiety. It stresses me out to the max. He had scratched to bottom of the door sooo bad, ripped up the rug in front of the door, AND, manage to get ahold of his leash ( which was hanging by the door) and ate though the leather. Literally now in half, I had to go straight to petco to pick up a new one. Pissed. Wahhhhhhhh…I’m whining. I just was ready to relax.

Finally ready to cook up something yummy and light my new candle by archipelago. Smells like winter! I’m a sucker for setting a mood with a great smelling candle. Sometimes I feel like a little bit of a candle hoarder. I can’t help it. Every time I see them on GILT.COM, I buy like 4 at a time, and store them. LOVE.

Check out this gorgeous ceramic wine cork. A gift from a friend for christmas :) I poured myself a glass of bordeaux, and began making dinner. I don’t know about you, but I love me some wine during cooking sessions. Oh and of course, with Edith Piaf in the background.

After my delicious dinner of stewed shredded chicken tenders in broth, spices, and slowly cooked, I took a nice hot shower, and gave myself a sulfur mask.

Ok, now that the holidays are over, can I get a HALLELUJAH to this statement! lol. I thought it was a perfect thought to take the piss.;) I’m sure we all had our fair share of naughty…but DELICIOUS foods during last weeks festivities, right?

Well I enjoyed every second of it. Even though I indulged, as I know,as we all should know, It’s gonna be OK ladies. We are done feeling guilty, REMEMBER? So this post it dedicated to not stressing on the past, and looking forward to a bright, and active future. yeah?

My last gluttonous meal of the holiday, started off healthy with this yummy salad, then Mom busted out her famous, homemade pizzas.

You see….It’s all good. Why? Because I made sure to hit the gym straight from work before heading over the folk’s house (duh) AND…. It was my last dinner with my brother and Sarah before they headed back to Canada, so we celebrated with wine, pizza and dessert. Bliss.

We had a great evening and a wonderful holiday, and since I had the three days off, my inner regimen was off.

I’m ready to go back to my random healthy breakfasts and scheduled workouts. I’ve come to realize that I do really well when things are set to a certain schedule. I find it helps to hold myself accountable and it becomes less likely for me to “fall of the wagon” anyone else?

This weeks meals will be mostly protein and vegetables, with the exception, of course, of a couple dinners out with friends. For sure planning to hit the farmer’s market on Sunday morning, to pick up bags full of veggies to roast, blend, and juice. Ohhhh, maybe make the “Glowing Green Goddess” a couple mornings for a delicious detox smoothie. I’ve tried making large batches of food at a time to have things ready for the whole week. You know, for packed lunch and ready to heat dinners, so that I really stay on track, but….you see, I just really LOVE to cook, so I prefer making small batches of a variety of foods for the week, and I never get bored. I grocery shop once a week, get everything I need, and play off of that. See my grocery list.

One of my favorite quick morning breakfasts is this! Remember a couple weeks ago I hit up RAW food world for the monthly goodie stock up? Well, I am obsessing over this RAW pumpkin seed butter. I love that fact that it’s not really sweet, but smooth, and not oily at all!

My lunches have been looking like this as of this week. Delicious grilled salmon with just a bit of lemon, salt, and pepper. Over a simple salad. Occasionally adding roasted winter vegetables. I’m especially loving my kabocha squashes. I could eat that shiz up all day! Sometimes, I sub salmon for lean chicken breast, or lean ground beef with spices.

Something that is absolutely **always** in my fridge, HARD BOILED EGGS:) I can snack on them all day. I boil around 6 at a time, and take them to work everyday. I don’t ever eat the yolk, cuz frankly… I feel like I’m eating an embryo. A baby chicken… Effing gross, and if I’m eating this many eggs, I really don’t need all that cholesterol.
Also… Let’s talk about… How I began hating egg yolks when I convinced myself I was allergic to em’. It’s been 3 years. Lol. I am currently trying to build my immunity to this allergy.. ;)

I just had to post this pic. I was cracking up when I plated this. This *beauty * is my sorry ass attempt at banana/ egg white pancakes. I had taken these great shots of the “prep” and the cooking process… Allllll excited for the big finish. Of course expecting these pretty and plump lil cakes and I got this embarrassing excuse of a thing. The taste was good but, Dare I try to to even pretend to take a halfway decent pic of this. Hell no. You’re gettin the iPhone version.

Ok, so we only have a few days left to figure out what our New Years resolutions will be. I’ve been seriously contemplating this thought… Do they *actually *hold up? Are we just putting added pressure and stress to our lives? *or*, *is it healthy to set standards and expectations for ourselves to encourage a better lifestyle? *

Listen, to each is own. For me, I need to be realistic. If I set resolutions that are too hard to accomplish, I’ll get depressed and stressed knowing that I’m struggling to reach them. I think I would prefer to set smaller, more reachable goals, so that I don’t obsess.

For the love of SPROUTS.

Friends, seriously, time to get back to the healthy you. before you scarfed down all those holiday goodies…. ;) let’s get back to our veggie eating selves. I’ve got a recipe that is to die for….Forget about the Brussels sprouts that you used to know. That old, steamed, BLAH reputation they had, needs to kicked in the ass. Brussels sprouts are the THING. If you’ve never liked them before, you are gonna freak out at what a LOVER you will become of these perfect, nutritious, and delicious little morsels. I’ll admit, growing up, I was never a big fan of anything green, holy moly, I was missing out all of these years. Now, folks are playing around with new recipes of this veggie, make it more delicious than evaaaaa! Let me give you a bit of background on these bad boys…
Brussels sprouts are loaded with vitamin A, folacin, potassium, calcium. They have 3-5 grams of fiber per cup, and at 25 calories per 1/2 cup cooked, they give us a reason to eat them more often. Brussels sprouts are one of those foods that will fill you up, without filling you out.

Brussels sprouts are very high in fiber, and they belong to the disease-fighting cabbage family. Indeed, they look like miniature cabbages. Like broccoli and cabbage — fellow cruciferous vegetables — Brussels sprouts may protect against cancer with their indole, a phytochemical.

Brussels sprouts are also particularly rich in vitamin C, another anti-cancer agent. Whether you choose them for their healthiness or because you love Brussels sprouts, one thing is certain: You will be getting a good-for-the-body food that is high in protein and low in fat and calories.

Ok, now that you have the FACTS, lets move on to making, eating , and enjoying.
This is just one of the ways to eat brussels. I love them shaved and raw in salad form, in the skillet, and roasted. Once you find your new love of them, trust me, you’re gonna want to play around.
This recipe has become a staple in house for the holidays! Now that the holidays are over…. You best believe I will be making huge batches of this to pair with anything and everything.

Ok, this is what you will need to do:
First, pre-heat your oven to 350 degrees.
You will need a roasting dish or baking sheet lined with foil that covers the bottom of pan, and is has enough length to then cover over the pan.
Now, you will rinse your Brussels, stem and 1/2 them.
Toss with coconut oil or olive oil. Just preference
Sprinkle with salt and pepper and toss with your fave roasted vegetable seasoning. I love this one.

Once oven is ready, and heated. Place tossed brussel sprouts in dish, and cover with the remaining length of foil. The overall cooking time is 20 minutes.
The first 10, you will cook them COVERED. ( This will ensure that they don’t brown too quickly, yet soften with the moisture under their cover)
The last 10 minuted UNCOVERED.( Now we can get the beautiful bit of char)

While these are in the oven, grab a small oiled skillet, and throw in your chopped or thinly sliced shallots, garlic, raisins, and salt & pepper.
On low/med heat, Sautée this until softened. The shallots should look a little crispy and the raisins, plump and juicy.

And now, for the plating:
AKA: my FAVORITE part.
Remove from oven and let cool for 5 mins.
Place them in a beautiful dish and top with sautéed raisins and shallots, oh and I threw in a sprinkle of sesame seeds;)
But…. To make even more of a presence, top with shaved fresh Parmesan.
RIDICULOUS.

Home For the Holidays Weekend re-cap!

MERRY MERRY MERRY Christmas y’all! It’s soooo nice to have 3 days off in a row you have no idea! Last year, we only had Christmas Day off, and I can’t even begin to describe what a bummer that was. New Years we will ask have a 3 day weekend because it lands on a tues! YEAYYYYYY! This weekend couldn’t come sooner. I was ready to see my brother, be with my family, cook, shop, all of it. I absolutely love Christmas! We had a lil scare this morning when my bro called from Canada, saying his flight had been cancelled, and he wouldn’t be arriving till Sunday night instead of morning. Ugh. Whatever, positive thoughts, and he got here safe and sound, and we enjoyed a few hours of wine, and dinner.

The fireplace is lit, the Christmas music is flowing, the presents are wrapped,and I’m enjoying a mimosa as I write this;)

You see, I can have a mimosa, since I worked my ass of at the gym this morning! I got there as soon as they opened, so I could get it outta the way before everyone woke up to start making breakfast.
I did extra cardio because I had lots I’d dessert last night:)
1 hour on the elliptical :
Alternating 3 min @ resistance 10/ incline 5
2 min @ resistance 5/ incline 9
I burned 6 hundred something calories. Stoked.
Then did, 3 sets of 10 pull ups with 80 lb assistance
3 sets 10 dips
3 sets 10 push-ups
25 mountain climbers
1 min plank
20 vertical leg lifts
25 crunches

After breakfast, mom and I stopped at the store to grab wine, champagne, OJ , and cheeses, cured meats, nuts, and figs for our cheese platter. We had breakfast pretty late, so the cheese platter in the late afternoon will be my lunch.

I wish I had pics of our amazing dinner, but I got so into just enjoying it, and completely forgot to snap some shots. My bro and his GF follow a strict vegetarian diet so we made homemade canelone, stuffed with ricotta and cheese, red a sauce, and homemade non dairy Alfredo. We also made a recipe of stuffed yams that Sarah had found on thekitchn.com. We baked the yams in the oven for about 40 mins. Made a stuffing of white beans and kale. Topped with shaved Parmesan and red pepper flakes. WOW. For the meat eaters, mom made a side of bolognese sauce, that was divine.
Oh of course I managed to snap a shot of the desserts. After dinner, we love to enjoy a tea or coffee with an array of pastries and chocolates. YES PLEASE.

So, in the Bedo house, our tradition is to stay up till mid it and open presents after dessert, hence, the coffee to stay awake.
We sit in a semi circle, and watch each other open 1 gift at a time. Of course, the annoying camera lady taking pics of every reaction and gift that is opened. Lol, and no joke, this process takes at least 1hour &1/2. SOOOO MUCH FUN. I seriously got everything I wanted. Santa (ma & pa) must of felt I was a good girl this year;)

What a fun night! By 2 a.m. I was practically cross eyed. Sooo tired. I actually passed out on the couch. Yes with all my clothes on. I didn’t care one bit, all I knew was that I had no work in the morning and could yet again sleep in like a lazy lady. I decided Christmas Day I would have a “day off” from the gym. Well, it was closed anyway;) Christmas morning started off slow and relaxed. We all woke up pretty late. It was a beautiful sunny but crisp day out. Mom was making a big breakfast of eggs, potatoes, sausage, and Belgian waffles. Umm, yes, ridiculous. I made my yummy protein muffins, ( trying to be healthy this a.m) but I made them more of pancake form this time. I really just didn’t want anything to heavy because we had been eating till late last night. The curse of being Latin;) Lots of late night eating. Ugh.

Christmas night was a fabulous dinner and party filled with fun, laughter, wine, and friends. The year definitely ended with a bang! I’ve gotta say though, I couldn’t be more ready for 2013. Things are looking good and I am so happy and proud of the successes of this year. As January comes around the corner… I’ve made sure to get my vacation plans written out, the workouts on point, and continue to strive for a better and healthier life. Although , I know, nobody is perfect, and I will struggle like most at times, but the intention is there. So this coming year…lets help each other reach our goals and encourage each other to stay active, yeah!?

Can you tell it’s the holidays!? It’s all about food this week. I took off yesterday and today from the gym, and I’m not gonna lie, I’ve been indulging in EVERY way possible! I know I’ll be paying for it later, but, let me just have my “WHATEVER” moment, ok. I’m not the only one who falls off during this time of year.

The shenanigans started last night when I met up with me friend Cale, who I feel like I haven’t seen in ages. I went by his place after work yesterday, and we caught up over a great bottle of wine. Cale is a an amazing hairstylist. I’ve known him since we were, I don’t know, something like 14-15 years old.We both studied at the Vidal Sassoon Academy. After I finished school, I actually ended up staying there and becoming an instructor, and he was my student. He gets mad when I tell people that I was his teacher;) He is now is a successful stylist, working at John Frieda and also working freelance. PROUD.

We walked over to a local favorite spot, Comme Ca. French food is my ultimate demise. I just can’t resist. A total fave! We both are complete foodies, so this is where the indulging really began….

We started with a delicious French red, and shared a delicious array of cheeses and charcuterie. I swear if I could eat just that for the rest of my life, I would die happy! And YES, I ATE LOTS OF BREAD. Bread lady for dayyyyys!

The next day was our annual Sassoon Holiday Pot Luck. I get scared when these pot lucks come around. I completely lose my shit. It is like slow torture. I couldn’t seem to get away from it! Cakes, cookies, dips, just all gnarlyness!!!

Happy Thursday everyone!
I hope you’ve been enjoying the recipes! I’ve been eating them up like a crazy! Today feels like its been jam PACKED. I had to be at work at 9 a.m. this morning, so, no gym for me. Instead, I busted out the Lebert equalizer, and did a quick 15 min powerhouse circuit. Of course I woke up ready for some yum in the tum :) I had a a quick breakfast. CG bran crisp bread, with some raw hemp butter, and Nature’s Hollow sugar free preserves. Oh yeah, sprinkled with raw cacao nibs. BOMB.

If you’ve never heard of the Lebert Equalizer, you have NOW! These things are genius. Great for agility training, pull ups, push ups, dips, you name it. They are perfect if you haven’t got the space to do too much. I first heard of them through my girls at Purely Twins. I am so grateful, I immediately ordered them online.

I was dying after! Quick but effective. Strength trading using your own body weight. The only rest is between set one and two. My muscles were burning. Morning sweat sesh… A SUCCESS.

After my workout, I was in the mood for a cookie with my coffee. I’ve always been more of a “sweets for breakfast” kinda gal, so when I found this recipe, I knew it was perfect for me! It’s packed full of the perfect blend of carbs, protein, and fat. Mostly protein:) the carb comes from the banana. I will post the recipe soon!! It took all of 15 minutes! Freakin no time!

The “extremist” came out in me, and “moderation” was out of the question, so I walked away after 2.

-1 can wild salmon with lemon, salt, and pepper
-1 tbsp raw salsa
- leftover homemade Zuchinni pasta with sundries tomatoes, pesto, walnuts,and marinated artichoke hearts on top
- a dollop of spicy hummus

Tossed all together= PERFECT BITE

After work, i heajded straight To the studio.You may have taken a local Zumba class, maybe at your gym? Well, nothing compares to this class. Taught by Sandy Campanella, a trained dancer at some of the top schools, brings something very special to the table. Great choreography (this ain’t jazzercise), amazing physical challenge,, and always full of energy. I will be doing a whole Q & A with her coming up, so be on the lookout!

On the seventh day of Christmas, I bought myself some THIIIIIIIINGGSSSSSS!!!

7 days babes!! Are you guys ready? Have you finished your shopping yet?? I’ve got news…NO ONE HAS.

My little snowman is out, counting down the days. So you know what that means!!! I’m finally getting into the spirit!

Ok, enough with the exclamation points.

I must admit, that this past weekend has been lacking in the workout department. Today was the beginning of a new week, and I was ready to hit it hard. GYMRAT to the fullest.

Alarm in my ear at egggggzactly 5:20 A.M. Although feeling exhausted, I was pumped to try out my brand spankin’ new New Balance 730 running sneaks. Call me crazy, but I think running shoes are sexy.

I jumped straight onto the treadmill and began at a 6.4 mph speed. Maybe it’s because I’m not used to the shoe, but I didn’t do so well today. This shoe, compared to the Nike free, feels like it’s got a bit less support. Not gonna lie, I was struggling just to get through my usual 3 mile interval. So, I rushed through it, and jumped on the eliptical for 20 minutes to burn a few extra 200 cals.

OOOOOOHHHH….Yes, before we move on to Prezzzzies, I wanted to share with you a few finds from this weekend’s trip to The Raw Food World in Ojai. I come here about every 6 weeks or so. Ojai is about 1 hour & 15 mins away, but I go out there to cut some clients, who btw, are amazing clients and enjoy every minute of being out there. This city is removed, beautiful, and quiet. I love going out there, and usually end up spending a few extra hours, checking out the town and  stopping by all of the local shops. This city, you may have heard, has one of the most popular getaways in So-Cal. The Ojai Valley Inn & Spa. I’ve never been, but I’m DYING to!

Anyway… Raw food World is INSANE. It’s a warehouse that distributes all of the major RAW food brands to all of the most well known markets and restaurants out there. Everything is in bins that are labeled, but no price is listed. Trust me, the price is at least 30-40 % less that you would pay at say, Whole Foods. Wholesale pretty much. Well, since I can only stock up every 6 weeks, you can imagine. Girl lost her SHIT.

Listen, I’m not a total raw foodie. I consider myself a Low carb-gly-raw-leo.

Raw cacao nibs! my absolute joy in life. Cacao nibs are basically raw chocolate, Cacao has more antioxidant flavonoids than any food tested so far, including blueberries, red wine, and black and green teas. In fact, it has up to four times the quantity of antioxidants found in green tea!  RIDICULOUS!! SUPERFOOD NATION

Raw tahini, which is a great base for hummus, dressings, etc. & Hemp seed butter. First time trying the butter, so we’ll see.

Pumpkin seed butter ( it was 50% off so, why not) I tasted it, and I think was expecting something sweet for some reason, but I think this would be a great spread over swiss chard wraps or on some flax cracker. Definitely savory, but gooooood!

Ok, this was interesting. Sea Clear. Fermented Kale and Chlorella in miso paste. Sounds awful, but actually, once mixed with a bit of water and thrown over a salad is delicious!!! If you need probiotics and fiber in your diet, you may want to try this product!

Goes to show that my trip to Ojai was a success. Sometimes, you just get tired of the same NUt butter, you know. I am obsessed with this place.

On the way home, I stopped off at where else, but, T.J Max. I saw one off the freeway and practically ran 3 cars off the road just  to get to it.

 

Well, soooooo worth it. Of course I found a few prezzies for myself. How ADORBS! Dainty and feminine.

And the best part: Plated sterling silver, and 14-20 bucks each!

I got home, and felt like doing absolutely nothing. I got in my sweats, lit a candle, poured a glass of red, and finished some last minute wrapping. I just wanted that ish done.

This Candle that was gifted to me, is probably, (actually no doubt) the best Christmas smelling candle I have EVER had the pleasure of burning in my house.  Never would I EVER have paid over $30 dollars for a candle, but after receiving this….smelling it and falling in love with it, I may rethink that. It smells like your in the middle of the mountains, surrounded by pine trees and snow. It’s perfect, and I never want it to end;)

I actually ended up sneaking out earlier that I expected. I was already in a food coma, and If I was to stay, I would’ve kept eating until every god damn raspberry tart was gone. Ugh
I am glad I did, I had to be up early to hit the gym.

SUNDAY WOD:
3 miles on treadmill
( broken up into: 1 mile @ 6.4 rpm
2 mile @ 7.1 rpm
3 mile @ 10.2 rpm for 30 sec/ 30 sec rest)
For a total of 30 minutes
- 25 minutes on stair master. ( fat burner mode. Level 8)

I had leftover “FAUX” mashed potatoes, and sweet Thai tenderloins that I had made Saturday morning to take to work, in which I ended up forgetting in the fridge. grrrrrrr. Oh we’ll, I thoroughly enjoyed them after my workout. Sweat sesh accomplished!

As soon as I finished breakfast, I jumped in the shower, packed up the car with prints that needed to be framed, loads of laundry,( don’t judge, yes sometimes I take my laundry to my parents house) and the pup, and took off.

After such horrible news and tragedy last week, all I wanted was to spend time with family. We had a long day planned of Christmas shopping, lunch, and catching up.

First stop: TAARRRRRGETTTTTT. aka. Heaven on Earth.
I never need anything, until I get there. The, suddenly, I need everything..
This place is like a drug. C’mon. U know it.

Pick up a few things for others along with double the things for myself. Hehe.
Had to of course stock up on my fave protein dessert add-ins. .. A couple tbsps of these…protein powder…almond milk…and a little sugar free vanilla syrup. My god. Try this, I promise, this will will your fave dessert too!

It was 1:00 pm by the time we finished up at target. We stopped off at  local Mimi’s Cafe for a quick bite before heading to the mall. I felt like a teenager again shopping with the rents. Mimi’s has actually REALLY good. The place is a bit silly and definitely has a chain vibe, but whatever. I was actually surprised how yummy my salmon was!

We spent the whole time practically picking out our own presents! lol I was sooo done after the crazy suburban mall fiasco, that I was ready to sit down, and enjoy something warm, so we stopped at Coffee Bean.

OK…New product alert!!!!!!

I was lucky enough to receive a bottle from this new company  NERIUM AD to try out. Tonight was my first night trying it. I had to take a close up picture of the condition of my skin. Yes, a close-up. A REAL close-up. I saw all of my hyper pigmentation, my fine lines, and deep pores. Ughh, not cute. Being that I have olive toned skin, I am naturally prone to dark sun or aging spots. Most likely from the sun, I never wore sunscreen until about 2 years ago, when I realized, Paula, you will look like the grandma on “There’s something about Mary”. No thanks.

I have been SOOOOOOOOO inspired in the kitchen lately! I love cookies

Since I can’t always have those sugary, delicious, full fat options during the holidays, I found and adapted a super healthy option. These babies are full of fiber and protein. Soft and chewy with that little crunch from the nuts. Look, OBVIOUSLY a Mrs. Fields, or Uncle Eddies cookie would be on the top of the list, but guess what fit friends, we’re trying to see results here! I get it though, sometimes we just want something that looks, feels, smells and tastes a damn cookie.

The cinnamon and all spice give them a wonderful little kick, the cranberries, and raisins add that beautiful pop of color, the nuts give a subtle crunch, and the coconut with vanilla give a wonderful sweetness without having to add any sugar to this recipe. That’s the best part, you see, you can have your cake and eat it too;) all NA-TU-RAL baby!

3 ripe bananas help to bind all of the ingredients. You could also switch up bananas with egg whites, or 1/2 banana and 1/2 egg white.. ( remind me to try this).Mash up and combine well, I got in there with my hands even:) I like to have fun in the kitchen and it usually becomes a mess, but with this recipe, it was so simple that I couldn’t get messy with it at all.

Once all combined, I added the oil ( I used coconut oil, that was very soft, almost melted) but you could also use canola oil, or maybe even natural balance butter. I would be curious…to make this an even healthier recipe, to sub the fat with unsweetened applesauce… ?? Hmmm.. I gotta try that, but, for now, we don’t mind a little fat, especially if you are eating them as a treat, and not gorging.

I pre-heated my convection oven to 350 degrees.
And continued to add in the rest of my ingredients to the cookie mix.

-Vanilla bean extract
And with my hands, I began molding them into little balls and pressing them down in my palm to flatten them out a bit.
Placed them on a greased, lined baking tray.

Bake for 20 minutes, and watch for browning.

Once out of the oven, place to cool off on a wire rack.

They were so good, that I ended up eating three right out of the oven with my coffee this morning. Eeeeeek.These would also be AMAZING with either vegan chocolate chips or 100% cocoa chocolate chips. Yummmmm

For my mommy followers, these would be a perfect treat for the kiddies! Make a whole load, and stick them in the fridge. They are absolutely nutritious, and perfect for on the go.

I waited for the rest to cool off, took these cute shots of them, and started bagging them up to give to my FIT friends. Nothing better than sharing freshly baked cookies with the people you love. I had loads of fun in the kitchen this morning, and will not be feeling guilty when I stop to munch on one of these YUMMIES.

Reviews… YUMMIES…& A “Glowing Green Smoothie”

My beautiful people,

I am so excited about my new Pro Compression socks that arrived in the mail yesterday! I have to share with you guys what I think.
First thing I did this a.m, was put these bad boys on and headed straight for the gym.

This review is purely my own opinion in regards to this product, and I ain’t holdin back!
Since recently becoming more of a consistent runner, I’ve noticed that the bottom half of my legs have become uber sensitive to strenuous activity. Sucks, but true. I’ve developed this weird lump over the years, just right above my left ankle, that causes some discomfort and sometimes pain. Something I have yet to figure out.

I went to see the best vascular doctor there is, to see if maybe it was varicose veins, seeing that my mom had them at an early age. But no, not the case. Honestly, if it were up to them, I would be seeing every doc in town to see what it could be but, I’ve come to learn, that only you, can be your own advocate. They are guessing just as much as we are.

I found these compression socks from reading stuff mama.

WEDNESDAY WORKOUT Re-Cap:

I’m loving my interval elliptical cardio workout that I’ve been doing lately.

30 min

intervals of : 2 min @ incline 8/ resistance 5

3 min @ incline 5/ resistance 9

Sweaty netty was in the hizzy.

Did a little jump rope today in the circuit, along with oblique twists, side planks, mountain climbers, dead lifts, and cable cross.

Foe a grand total of 1 hour and 15 minutes. WOOHOO! Feelin good and tight.

Lately I’ve been loving the gym, instead of working out at home for some reason, I think maybe, watching everyone else work out, pushes me harder. Do you guys ever feel that?

When I got home, I threw together this delicious SOUTHWESTERN HEALTH OMELETTE. It tastes naughty, but couldnt be healthier. Get into it. Sometimes I eat this for dinner:)

I forgot to pack my lunch last night. (annoying). So I rushed to do it this a.m. I just threw a bunch of stuff in baggies to make a salad. Boring, but yummy. I usually use tupperware, but have been accidently been leaving them all at work and had none left this morning. It’s funny, by the end of the week, I leave work with a Trader Joe’s bad full of tupperware to take home.

OK… this is where it gets GOOOOOOOOOOD!!!!

Oh yeah, I’ve got the secret ladies! This is a breakthrough.

My friend and co-worker Aaron Bock, AKA: Mr. Perfect Skin, is my hero for finding this, adapting it, and sharing it with us girls.

He’s always on top of it with the latest and greatest beauty tips, secrets, products, and websites we should be into. We all know that keeping your face clean, and wearing sunscreen is a must, DUH. Ok, what else… Well, I am convinced that NOT enough of us realize that what we put inside our bodies is just as important.  This is the best way to FEED your FACE and BODY:)

Unlike juicing, which tends to extract most of the fiber from the veggie, and leave you with all the sugar, blending in the greens, ensures that you receive all of the benefits and nutrients from the greens. Who the heck wouldn’t be into this?

I have been drinking this the last couple of days, and I, not only feel amazing, but my skin is reaping the benefits!

You have GOT to take my advice, and incorporate this into your daily beauty regimen. You can use any ol’ blender, you don’t need a Vitamix. Although the VITA is my FAVE! Greens need to be worked down to a creamy consistency, but most people simply don’t chew that much! The unbelievable flavor will blow you away. It comes out REALLY green, but there is nothing bitter about it. It’s delicious.

I had a dine in dinner date with a girlfriend of mine tonight in mi casa, so when I got home from work , I put out a few appetizers,  and whipped up this delicious salad. Don’t you love when your friends eat healthy too? God, it really does make life easier.

& my fave: Kaia salt n vinegar kale rounds topped with fromage blanc,  Nature’s Hollow sugar-free apricot preserves, and sprinkled with sesame seeds. (you gotta try these) Great little finger foods.

PLEASE, if you haven’t yet tried these healthy (gluten free, raw) snack chips, you are missing out. Have them alone or top them with anything you would like. They are a powerhouse of nutrients. Food as Fuel, right?

I roasted some red peppers for the salad in my convection oven. I find that these are a great additive to any side dish or salad. I love them. Plus, they get all sweet, gooey and yummy! LOVE.

INGRIDIENTS:

 

  • Arugula
  • @ big leaves swiss chard
  • 1/2 a stem chopped green onion
  • 2 tbsp dried unsweetened cranberries
  • 1 heaping tbsp chopped mint
  • 1 tbsp capers
  • 1 tsp hemp seeds
  • 1 chopped heart of palm
  • 1 chopped roasted red pepper

FOR THE DRESSING:

  • 1 tsp grainy mustard
  • 1 tsp sweet & spicy mustard (trader Joe’s)
  • 1 tsp red wine vinegar or apple cider vinegar
  • 1 tsp fresh lemon juice
  • 1 tsp olive oil
  • 1/4 tsp crushed garlic
  • salt and pepper

GOodiE Tuesday

GOOD morning friends! I did a naughty last night, too much food and wine, and I’m paying for it now!
I was hurting at the gym today. Ugh I hate when I do that. You see, I hadn’t seen this girlfriend in quite some time, and you know how it is, you start chatting, gossiping, wine, laughing, more wine, ohhh dessert, don’t forget dessert wine. I mean, excessive. When she left I immediately passed out. It was probably around 11 p.m.
ALARM!!! 5:00 a.m wake up call from the damn iPhone. Noooooooooo. It is absolutely not a good idea to be hungover at the gym this early. ashamed.com. The rest of this week I’m gonna be a good girl…

Ok… Moving on.
TODAY’S WORKOUT:

30 minutes on the elliptical.
Alternating with incline 8/ resistance 5 for 2 minutes
And incline 6/ resistance 9 for 3 minutes
For a total of approx 365 calories burned.

After cardio I did a plank series using my gymboss interval timer set on 50 secs work and 20 secs rest.

Phweeeeeeeeee, I was worked. After this series I went to the weight room and did some dead lifts, back rows, and pull ups.

Overall I had a really good workout, except I started to get a bit of a headache midway. That’s what I get!

Oh btw… If you like HIIT interval cardio, you will really feel great after doing this 30 min fat burner on the elliptical. I usually do these high/low intervals on the treadmill, but today I switched it up , and was glad I did.
For some reason, I sometimes think that if I’m not like, practically sprinting on the treadmill, that I’m not getting enough of a workout. Absolutely not true. I’ve noticed lately that my knees, whether on cement or treadmill, have been extra sensitive. So I’ve been trying new ways to get a full body cardio workout without running. Now the elliptical and stair master have become my new besties. Never at a steady pace though. Always switching up the level or resistance to keep your body working extra hard and to encourage more afterburn.

Anyway, yada yada yada, you get it.

Since I was away this weekend I really didn’t have anything that I was into in the fridge, so I managed a quick trip to whole foods before work to pick up some staples.

Breakfast and lunch to too boring to even post. So we’ll move on to my lovely leftover ground beef mixture over a bed of arugula that I had for dinner. It was delicious.

I actually got out of work quite a bit early tonight. ( silently screaming inside with happiness) I didn’t have anyone booked for the last couple of appointments, so I managed to sneak out. It was perfect because I was dying to hit up Crate and Barrel for some last minute ornaments and decor shopping. Ok… This is the worst part of working in the area that I work. All you wanna do, all the time is SHOP! The streets are gorgeously lit up and everyone is walking around with shopping bags. How really could you resist.
I saw that the ornaments were 30 % off, so I started digging. Remember a few posts back, I mentioned that my ex had all of my ornaments from last years Christmas at his house. Wahhhwahhhhh, oh well, I’ve moved on from getting them from him, cuz he lives kinda far. Soooooo…. I started a new collection with a new theme;)

GOEGEOUS BIG BEAR re-cap

OK, but really, how gorgeous is this place! If you are a local Angelino, you know that Christmas never really feels like Christmas around our parts. At least we have places like this to escape too just a couple hours away to get that “yesssss, it’s winter” sensation.
I am in love with Big Bear. No joke, I was even checking out some small properties/cabins that were for sale as an investment for my future mountain trips;)

I was gonna drive up Saturday after work, but it ended up getting dark earlier than expected so I postponed leaving till early the a.m. If you’ve ever driven to the mountains, then you damn well know that shit is scary at night. Lots of winding sharp turns and blind spots. Yeah. Not a great idea. I woke up at 5 a.m on Sunday morning packed up the car, grabbed Willy, made myself an espresso with almond milk and stevia and took off. I drove to my parents house to first drop off willy and pick up the directions mom left to the cabin. Mom and 3 of her best girlfriends and their daughters had gone ahead of me sat morning. I couldn’t wait to get there. I stopped and got gas (finally the prices are dropping) and was ready for the 2 1/2 hour drive. I have to admit, that I actually like going on little road trips alone, I don’t mind driving alone.. I listened to Christmas music all the way there! Haha. So annoying, I know. I had my coffee, I was relaxed and STOKED!

I arrived to the cabin finally around 8:45a.m. All the girls greeted me at the door, and the shenanigans began.

Mom cooked a mean breakfast scramble ( eggies, turkey, spinach) along with fresh blueberries, mixed nuts and cookies. Pretty safe to say, I got carried away with the naughty food at the cabin this weekend. I lost count of all the cookies I ate. Ugh

After a that breakfast of chaps, we are got in our warm clothes and took off for a walk around the lake and up through the forest. It was a gorgeous day, cold, but full of sunshine. Obviously way colder at night. Poor mom and friends slept with no heater on Saturday night. Apparently it broke. Of course it did. Story of our lives.

We looked crazy, as we walked, we realized that we just had way too many clothes on. I started breaking a sweat. Which now in looking back, probably not a bad thing since I hadn’t worked out and had devoured practically a box of cookies. Look at us….We looked like a bunch of tourists looking for pine cones.

We went back to the cabin after a few hours out and started to prepare lunch. They were planning on leaving this day like 3:00, so as to miss the traffic coming back home. I was staying the night so that I could get up early Monday and snowboard.
Lunch consisted again of naughty food. And really the only reason why it was naughty was because I can’t just have a bite of it, one cookie , it had to be practically a bag of chips, cheese and salami on saltines, hot dogs etc. can we say, GUILTY? Maybe if I practiced self control, I could have a small portion and it wouldn’t make a difference. But nooooooo.

Once they packed up and left, I cracked a bottle of wine and caught up on my new Bon appetite magazine. I knew that I had to fall asleep with a movie on because I was already a bit nervous knowing that I was in a cabin alone in the middle of the woods. Whatever, I was into it. I watched Meet Joe Black, and immediately passed out.;)

I woke up super early (shocker) had a quick breakfast of cottage cheese, blueberries and a persimmon, locked up the cabin and headed to the resort to get a few hours of snowboarding in. The lifts didn’t open till 8, so I went and hung out a local coffee shop and chilled.
Bear mountain on this particular day was really dry. Only like 2 lifts were open, and the snow was almost non-existent. I only ended up riding two hours, and decided to come home.

On the way home I stopped off at the famous Charlie Brown Farms. I don’t remember the last time I was here, but this place is a hidden gem! It is located off of Pearblossom hwy.

They are most famous for their beef jerky,jams & jellies, hot sauces, pickles, nuts & fudge. You name it, they’ve got it, and homemade!

I ended up buying persimmons (duh) super cheap, stocking up on loads of different raw nuts and seeds, some fresh habanero goat cheese and some bone sucking hot mustard! Happy as a clam.

Just another block up, I spotted this small, run down thrift shop on the side of the road, well, really it looked more like a junkyard or a garage sale, so in pure Paula form, I chomped at the bit. I love places like this. Someone’s trash is always someone else treasure. I found some great silver pieces and some vintage plates. Perfect for setting up a great food photo. I’m so into that right now.

Hello my Morning sweetnasssssses!

Saturday morning… This is what greets me as I walk in the door of the staff room.

I need to step into a carb-O-holics anonymous meeting RIGHT now!

 Every holiday of course, especially when you work in the service industry, is a the absolute WORST time to start or keep to a diet.

Clients: I LOVE you all, but, “Do you understand that, you are testing every inch of my will power right now!!!??”

Ughhhhh. I felt vulnerable today, and DUG in!

By the end of the day, I counted:

1 oatmeal/raisin cookie (small but fatty)

1 homemade madeline

A piece of the banana/chocolate chip bread

A piece of the Lemon loaf cake (I died)

1/2 of a small snickerdoodle

along with all of my packed snack goodies I had brought in my packed lunch including:

1/2 cup 0% greek yogurt

1/4 cup blueberries

A handful of mixed nuts

An apple

 

I mean….really.

 

I’m a cow. That is all.

 

I was so hungry today, I must be getting the BIG “P”.

This is the only expanation. well, the other explanation would be, that my mind just said “F it, Binge girl, it’s the HOLIDAYS!”

Of course, to counter balance the shit I snacked on all freakin day, I opted for a very delicious salad. Compliments of yours truly;)

It was a rather large ” Green Girl Salad:

Organic baby lettuce

Frisee lettuce

Chopped Chard

1/2 an avocado

Chopped mushrooms

1 heart of palm

1 tsp Sesame seeds

1/2 stalk chopped green onions

Chopped cilantro/ basil

2 tbsp RAW salsa

1 tbsp chia oil

1/2 tsp liquid aminos (similar to soy sauce)

Siracha

Salt & pepper

It was AMAZE baLZ!

I’ve decided that It’s not a good idea to drive by myself to the cabin tonight. I desperately need new tires, so night time driving up to the mtn is a no go. I didn’t expect to get out so late. BUMMER.

Mom and her girlfriends are up there already having a blast. I’m sure, drinking wine by the fire, cracking up, and being cuties.

I’ve instead, opted to drive up early morning. You all know that I’m up at the crack of dawn anyway, so, NO BIGS.

Dropping off willy first with Pops, then making the 2 1/2 hr treck. Dad’s a great babysitter;)

 

Random: but. does anyone else HATE riding with their goggles on??

Mom and the chicks leave mid afternoon on Sunday, and since I have Monday off, I decided, hey, why not. Ill stay at the cabin and enjoy it alone Sunday night Have a fire, read a book, have a glass of wine, and get up early Mon morning to hit the slopes.

I think I’ll just do a 1/2 day lift tix on Mon, so I can drive home in “not SOOO bad of traffic”. If you live in LA, you know there is no such thing as a ‘no’ traffic hour. By 2 p.m your screwed, wherever you are coming from.

Oh well, I’m planning to be relaxed by then;)

I NEED A MASSAGE

Hey all! Today my back felt a lot better. It wasn’t so crazy at work, so I didn’t have to be on my feet all day, which was a relief. I still made sure to keep the inflammation down with Advil.

Since I took a break Thursday to rest and heal (from Bikram on wed ) I decided that after work, I felt well enough to hit the gym for a quick workout before heading home. I always make sure to keep extra workout gear in the car for impromptu sessions;) Fridays are usually my rest from the gym days, so I wasn’t really planning on hittin hard.

I’m wondering if this happens to ya’ll….. Once you get started at the gym, your body goes into beast mode and you end up pushing harder than even expected! The hardest part is just getting there. Then, I figure, well, since I’m here already, might a well make it worth it!

Plus, for some reason, the vibe at the gym makes me feel like a gladiator. Lol
I had such a great workout, that I just had to share.

Here it goes:

 

I started off on the treadmill:

1/2 mile @ 5.0 mph

1 mile @ 6.4 mph

1 mile @ 7.1 mph

1 mile alternating intervals of 9.8 for 30 seconds. with 30 rest

For a total mileage of 3.5

Burned a total of 337 calorieS in 30 min.

Shimmied my way on over to the stairclimber/stepper for a BONUS round of cardio.

Speed intervals changing every minute. For 15 minutes .

45 minutes of intense interval cardio was just was I was craving! I felt amazing after.

Before I headed to the weight area, I stopped at the ROW MACHINE for a 1000 meter row To get my upper body ready for lifting, and crunching.

At this point, I was sweatn’ like a rapist!

When I got home of course, I was sooooo HUNGRY!

So I heated up my recipe of a Low Carb Deep Dish Veggie Pizza. I was in heaven!

It is beyond healthy and super satisfying. I leave for Big Bear right after work tomorrow, so didn’t really want to cook anything, and be stuck with leftovers that would’ve gone bad. No Bueno!

This is a great dinner dish, and for those of you who live alone, cut it up in slices and take them to work for a couple days.

A SORE… & unexpected day off

Hey babes!

Sooo, WTF… OK, so you know that I took that BRIKAM class last night right? Well, have you ever in your life taken a class at 10 p.m for an hour and 1/2?? yeah, well, try sleeping after that. You would think that it would be easy peazy right? WRONG!!!! The absolute worse! I couldn’t fall asleep till 3 f*@k*ng A.M. My adrenaline was too strong to be able to pass out. Not to mention, the pain that started to develope in my neck and lower back!

You guessed it. With the combo of all those “I’m not feeling good in this posishhh” back bends, not being able to sleep and finally passing out on the couch, I woke up with a total body HANGOVER! I woke up at my normal time, 5:15, and could barely move.

Wow, this is really gonna be a good day. I decided by 8:00 a.m that it was not worth the pain being on my feet all day at work. So, I stayed home. I took 3 IB profins and passed out. woke up and began icing on and off every 20 mins.

My Mom has worked in physical therapy for many years now, and we’ve come to learn that this icing technique, along with rest, stretching,anti-inflammatories, and massage is the best way to heal. It’s the truth, and you’ll thank me later:)

Anyway, after laying on the couch for what seemed to be a lifetime (I played around with my new ipad;) I decided to get up and try to get a few things done. I leave for BIG BEAR with Mom and a few of our family girlfriends this weekend, so I thought i would just start getting ready for that.

well….that didn’t end up happening, instead, my friend Jules texted and said “if your around later, I’m roasting a whole chicken, I’m craving lots of protein”

I was there within the 1/2 hour;)

I was feeling a bit better at this point, so when I got there, we made some espressos and got to girlchattin.

Oooo-mmm-ggggg… just take a look at this amazing flower! she got them at Trader’s! Can you believe?

So cheap, but gorgeous!

She ended up sending me home with one of them (lucky girrrl)

Don’t know if I’ve told you guys, but she is an amazing baker. Her old boss still orders tons of cakes from her. Check out these perfect Vanilla Bean Rum Cakes. wooooooooozaaaaaa

She recently had a girl come to her door selling  a monthly service of organic produce delivery. Genius, right? Twice a month they drop off a box of whatever is in season. I think I might do it too. The only problem is, and we started becoming hesitant, is that we live along, and it ends up being a bit much for just one person. I hate wasting and I have a feeling some stuff would go bad within a few days. SUCKS. But like I said, “lucky Girl that I am” Jule’s sent me home with some gorgeous fruits and veggies, because, seeeeeeeeee, she knew it wouldn’t all last.

Everytime I go over there, I become fascinated with her stunning china. ughhh i want!

There’s that hunk-o-burnin-love in all its glory.

Simple, organic.

And, you know I’m loving the white tree action lately, so, here she is:)

Hey guys!

OK, so I know I’m not the only one round here who goes a bit cray cray during the holidays! Sweets and treats all around us. If you are like me and have a a hard time controlling yourself around all those high calorie foods that seem to be the little devils on our shoulders, but you wanna enjoy Christmas with the rest of em’ , well, I’ve got a fun, sweet, (and if you love coconut) delish little recipe for you babes!
Ok, so most of you know,( and if you don’t know, now you know) I love me some Martha Stewart. I am a proud subscriber to her “Living” magazine. The other day as I was home, flipping though the pages, I came across this recipe.
First thing I thought was ” oooohhh this can be actually a healthy recipe!” Then I thought “perfect for Christmas, and super cute!”

The original recipe called for 3/4 cup sugar, but of course I wasn’t down with all that, soooo, I changed it to suite us..

INGREDIENTS:

2 1/2 cups finely shredded (dehydrated/or fresh) I used unsweetened reduced fat shredded coconut (whole foods)

1/2 cup erythritol ( which you can also find at whole foods)

2 large egg whites, lightly beaten

4-5 tsps of vanilla extract ( I used Madagascar pure vanilla bean paste) love that stuff

Pinch of salt

(Optional, for looks: confectioners sugar for dusting) to get that snowy look

DIRECTIONS:

Pre-heat oven to 350 degrees.
Thoroughly combine coconut, erythritol,egg whites, vanilla, and salt in a med/lrg bowl.
Mix really well with a large fork and hands.
Begin to form little trees with your hands, using your fingertips to make pointed tops.
Line a baking sheet with foil or parchment, make sure to grease whatever you use so that the coconut doesn’t stick.
Space them out evenly
Bake until edges are golden and trees are firm.
10-12 minutes but begin checking at 10.
Let cool and dust with snow:)

Bring these to a party, they would look great at the dessert table!
